TENDERLOIN OF BEEF ROAST

Makes 8 to 10 servings
5 pound boneless tenderloin
of beef roast
1 tablespoon dried oregano leaves
2 teaspoons dry mustard
1 tablespoon dried thyme
2 teaspoons dried rosemary, crushed
1 teaspoon finely chopped parsley
1 teaspoon coarsely ground black pepper
1. Pre-heat oven to 425°
2. In a small mixing bowl, mix
together the oregano, mustard, thyme, rosemary, parsley and black
pepper then rub the mixture onto the surface of the tenderloin
of beef roast.
3. In a shallow roasting pan,
place the tenderloin of beef roast on rack.
4. Place the tenderloin of beef
roast in the oven and roast for 10 minutes; then reduce the oven
heat to 325° F and roast for an additional 40 to 45 minutes
or until meat thermometer reaches 140° F for rare, 150°
F for medium-rare or 160° F for medium.
5. Remove the tenderloin of beef
roast from the oven and cover with foil and let the roast rest
for 15-20 minutes before carving.
