Makes 4 servings
1 1/2 cups of coarsely
chopped cooked turkey meat
8 large flour tortillas
3/4 cup sour cream
2 tablespoons minced cilantro
1/2 cup prepared salsa
1 cup shredded Monterey Jack cheese
1. Spread one side of
each tortilla with 1 1/2 tablespoons sour cream.
2. Top half of the tortillas
with a thin layer of turkey and then dot each evenly with the
salsa, cheese, and cilantro.
3. Top with the remaining flour
tortilla, sour cream side down, to make a sandwich.
4. Place each quesadilla on a
microwavable plate and microwave on high power for about 1 minute,
or until the cheese is thoroughly melted and the quesadilla hot
5. Repeat process with each quesadilla.
6. Cut the quesadillas into 4
to 6 wedges and serve at once.
