** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
New York Strip Chicago Style
Prep Time: 12 Minutes
Cook Time: 8 Minutes
Makes 4 servings
Ingredients:
2 tablespoons virgin olive oil
2 cloves garlic, minced
1/2 teaspoon ground cinnamon
1 teaspoon white sugar
1/4 cup apricot preserves
salt and pepper to taste
1-1/2 pounds boneless top loin
Directions:
1. In a glass container, combine olive oil, cinnamon, sugar,
and apricot
preserves. Mix well as the preserves tend to stick until warm.
2. Take a small steak knife and
make slashes in both sides of the steaks. Sprinkle both sides
with salt and pepper.
3. Spoon the sauce over the meat
making sure to work it in on both sides. Cover with plastic and
refrigerate for at least one hour.
4. Preheat grill for high heat
and cook both sides for 2 minutes to keep the flavor locked within.
Finally cook each side for an additional 7 to 8
minutes, or to preferred doneness.

Marinated Veggies
Prep Time: 15 Minutes
Cook Time: 12 to 15 Minutes
Makes 4 servings
Ingredients:
1/4 cup zucchini, thickly sliced
1/4 cup red bell pepper, sliced
1/4 cup sliced yellow bell peppers
1/4 cup yellow squash, sliced
1/4 cup sliced red onion
8 large fresh button mushrooms
8 cherry tomatoes
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup lemon juice
1/4 clove crushed garlic
Directions:
1. Place the zucchini, red bell peppers, yellow bell peppers,
squash, red
onion, mushrooms, and tomatoes in a large bowl.
2. In a small bowl, combine olive
oil, soy sauce, lemon juice, and garlic;
mix together. Pour over the vegetables. Cover bowl, and marinate
in the
refrigerate for 1/2 hour.
3. Preheat grill for medium heat.
4. Lightly oil grate. Remove
vegetables from marinade, and place on
preheated grill. Cook for 12 to 15 minutes, or until tender.

Honeysuckle Pineapple
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Makes 4 servings
Ingredients
4 slices fresh pineapple
1 1/2 tablespoons honey
2 tablespoons cherry brandy
1 teaspoon lemon juice
Directions
1. To Marinate: Combine honey, brandy and lemon juice in a nonporous
glass dish or bowl. Mix together and add pineapple; coat well
with marinade mixture. Cover dish and marinate in refrigerator
for 1 hour.
2. Preheat grill to medium heat
and lightly oil grate.
3. Remove pineapple from dish
or bowl, discarding any leftover marinade.
Place pineapple wedges directly on rack or in a basket and grill
for about
10 minutes, turning, until pineapple is hot and caramelized.

** GRILLING TIP FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
QUESTION: Should I grill with
the hood opened or closed?
ANSWER: This is a matter of personal
preference. Cooking with the hood closed is recommended if you
enjoy cooking at maximum "searing"
temperatures. Flare-up will occur more often with this method.
Cooking
slower with the lid up will produce less flare-ups and tenderize
your food.
Note: When using the Rotis motor - hood must be closed except
when basting.
