** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Hawaiian Chicken Kabobs
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 2 Hours 30 Minutes
Makes 4 kabobs
Ingredients
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons sherry
1 tablespoon sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
8 skinless, boneless chicken breast halves
1 (20 ounce) can pineapple chunks, drained
Directions
1. To Marinate: In a nonporous glass dish or bowl combine the
soy sauce, brown sugar, sherry, oil, ginger and garlic powder;
mix together. Add the chicken and pineapple, toss to coat and
refrigerate to marinate for at least 2 hours.
2. Preheat grill to medium high
heat and lightly oil grate.
3. Alternate marinated chicken
and pineapple on skewers; grill over medium
high heat for 15 to 20 minutes, turning halfway through.

Grilled Green Beans
Prep Time: 3 Minutes
Cook Time: 6 Minutes
Makes 4 to 6 Servings
Ingredients
1-1/2 lbs. green beans, rinsed (do not pat dry)
1-1/2 tablespoons extra-virgin olive oil
Salt and ground black pepper
Directions
1. Toss the moist beans with oil in a large bowl. Season with
salt and
pepper to taste.
2. Grill the beans over a medium-hot
fire, with the green beans placed
perpendicular to the grill grate rods. Grill until the beans
are lightly
browned and crisp-tender, about 6 minutes. Serve hot, warm, or
at room
temperature.

Grilled Herb Garlic Cheese Bread
Prep Time: 5 to 10 Minutes
Cook Time: 15 to 20 Minutes
Makes 6 to 8 servings
Ingredients:
Heavy duty aluminum foil
1 (16 oz.) loaf Italian or French bread
1/2 cup margarine or butter, melted
3/4 teaspoon garlic powder
3/4 teaspoon dried Italian seasoning
1/3 cup shredded Parmesan cheese
Directions:
1. Tear off a sheet of heavy duty aluminum foil long enough to
wrap bread; set aside.
2. Slice bread crosswise into
thick slices, cutting down but not all the way through the bottom
crust. Place bread on foil. Combine margarine, garlic
powder and Italian seasoning; brush cut surface of each slice
and top of
bread. Sprinkle cut surface of each slice with cheese. Wrap bread
in foil.
3. Heat in a covered grill over
low heat, turning several times until heated
through, 15 to 20 minutes

BEEF **
QUESTION: I was thinking of using
wood chips to change the flavor of my grilled meats, fish or
chicken. Can you tell me the difference between wood chip types;
and what each wood chip is best used?
ANSWER: Aromatic smoking woods
vary in flavor. The smoke from the wood penetrates the food,
adding a special dimension to any meal. Below you will find a
guide to 4 of the most popular woods:
Mesquite - this popular wood
chip offers a strong flavor for red meats,
poultry or lamb; be sure to soak chips in water for at least
an hour to
prevent a bitter taste.
Hickory - this great flavor works
well with pork, hams and beef; these chips should soak 1-2 hours
to prevent a bitter taste.
Alder - a delicate flavor that
goes well with seafood; again, soak in water
for at least one hour.
Pecan - works especially well
with poultry; soak at least one hour in water before grilling.
