** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Prime Rib Roast
Prep Time: 10 Minutes
Cook Time: 3 Hours 30 Minutes
Ready In: 5 Hours 40 Minutes
Makes 10 to 12 Servings
Ingredients
8 pounds prime rib roast
3 teaspoons grated fresh ginger root
1/3 cup orange marmalade
4 cloves garlic, minced
3 tablespoons soy sauce
2 tablespoons brown sugar
1/4 teaspoon hot pepper sauce
1 tablespoon mustard powder
1 cup beer
1/4 cup olive oil
freshly ground black pepper
Directions
1. In a mixing bowl, combine ginger, marmalade, garlic, soy sauce,
brown sugar, hot sauce and mustard. Mix well and gently stir
in the beer.
2. Prick holes in the roast with
a 2 pronged fork. Place roast in a large bowl or plastic container
or in the roasting pan. Pour marinade over roast; cover and let
marinate in the refrigerator for at least 2 hours, basting at
least twice during this time.
3. Preheat oven to 400 F (200 degrees C).
4. Place roast in a roasting pan on a wire rack. Add about 1
cup of marinate to roasting pan. Pour about 1/4 cup of olive
oil over roast. Sprinkle roast with freshly ground black pepper.
Insert roasting thermometer into the middle of the roast, (making
sure that the thermometer does not touch any bone). Cover roasting
pan with aluminum foil and seal edges tightly around pan.
5. Cook roast at 400 degrees
F (200 degrees C) for 1 hour. Remove foil and baste roast after
1 hour of cooking time. Do not replace aluminum foil cover. Reduce
heat to 325 degrees F (165 degrees C) and cook for about 1 hour
longer. For medium-rare, thermometer reading should register
130 F. Remove roasting pan from oven, place aluminum foil over
roast and let the roast rest for about 30 minutes before slicing.

Garlic Egg Chicken
Prep Time: 5 Minutes
Cook Time: 40 Minutes
Ready In: 4 Hours 45 Minutes
Makes 4 Servings
Ingredients
1 egg yolk
6 cloves garlic, chopped
4 skinless, boneless chicken breast halves
6 tablespoons butter
1 cup dry bread crumbs
1 cup grated Parmesan cheese
1 tablespoon dried parsley
1 tablespoon garlic powder
1/2 tablespoon salt
1 tablespoon ground black pepper
Directions
1. In a glass dish, beat egg yolk with garlic. Place chicken
in egg mixture, and turn to coat. Cover dish and refrigerate
for at least 4 hours, or overnight if possible.
2. Preheat oven to 400 degrees
F (200 degrees C).
3. Melt butter and pour into
the bottom of a 9x13 inch baking dish. Mix together the bread
crumbs, Parmesan cheese, parsley, garlic powder, salt and pepper.
Dip marinated chicken in crumb mixture. Place coated chicken
in baking dish, and pour remaining egg mixture over.
4. Bake in preheated oven for 15 to 20 minutes on each side,
or until chicken is no longer pink and juices run clear.

Italian Style Pork Chops
Prep Time: 20 Minutes
Cook Time: 30 Minutes
Ready In: 1 Hour
Makes 6 servings
Ingredients:
3 cups crushed saltine crackers
2 cups grated Parmesan cheese
1 tablespoon Italian-style seasoning
1/4 teaspoon garlic powder
1 cup butter, melted
6 pork chops
Directions:
1. Preheat oven to 425 degrees F (220 degrees C).
2. In a medium bowl, combine
the crushed saltines, Parmesan cheese, Italian-style seasoning
and garlic powder and mix together well.
3. Dip the chops in the melted
butter and then dredge each chop in the cracker mixture, coating
all sides thoroughly. Place the chops in a 9x13 inch baking dish.
4. Bake at 425 degrees F (220
degrees C) for 30 to 40 minutes, or until internal pork temperature
reaches 160 degrees F (70 degrees C).

BEEF **
QUESTION: How do I roast a whole
chicken?
ANSWER: Roasting a chicken takes
a little longer than some other methods of cooking chicken, but
it actually requires very little preparation time -- it's mostly
just a matter of patience in waiting for the bird to finish roasting.
Another merit of roast chicken is that the leftovers just keep
on giving. Roasting two chickens is just as easy as roasting
one chicken, and today's roast chicken dinner is tomorrow's chicken
enchiladas, chicken soup, chicken salad, chicken fettuccine Alfredo
or chicken sandwich.
