** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Burrito Pie
Prep Time: 30 Minutes
Cook Time: 30 Minutes
Ready In: 1 Hour
Makes 7 Servings
Ingredients
2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium
heat, saute the ground beef for 5 minutes. Add the onion and
garlic, and saute for 5 more minutes. Drain any excess fat, if
desired. Mix in the olives, green chile peppers, tomatoes with
green chile peppers, taco sauce and refried beans. Stir mixture
thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
3. Spread a thin layer of the
meat mixture in the bottom of a 4 quart
casserole dish. Cover with a layer of tortillas followed by more
meat
mixture, then a layer of cheese. Repeat tortilla, meat, cheese
pattern until all the tortillas are used, topping off with a
layer of meat mixture and
cheese.
4. Bake for 20 to 30 minutes
in the preheated oven, or until cheese is
slightly brown and bubbly.

Veal Marcela
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ready In: 1 Hour
Makes 6 Servings
Ingredients
2 pounds veal cutlets
1/4 cup all-purpose flour
1/2 teaspoon seasoning salt
1/2 cup butter
2 tablespoons olive oil
3/4 pound fresh mushrooms, quartered
1/4 cup Marcela wine
Directions
1. Place meat on a solid, level surface, or between sheets of
waxed paper, and pound thinly with a mallet or moistened cleaver,
using a glancing
motion.
2. In shallow dish, combine flour
and seasoning salt. Dredge cutlets in
flour mixture, and let rest 15 minutes on wire rack.
3. In a large skillet over medium-high
heat, melt butter with oil. Cook
floured cutlets on both sides until brown. Introduce mushrooms,
reduce heat to low, cover and cook 10 minutes.
4. Pour in Marcela and simmer
5 minutes more, until veal is tender and sauce is hot. Serve
immediately.

Marinated Chicken Breasts Broiled
With Bacon And Cheese
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: 1 Hour and 20 Minutes
Makes 4 servings
Ingredients:
4 skinless, boneless chicken breast halves
5 fluid ounces Worcestershire sauce
8 slices bacon
2 tablespoons butter
8 ounces fresh mushrooms, sliced
1 (8 ounce) package Monterey Jack cheese, shredded
1 (16 ounce) container honey mustard salad dressing
Directions:
1. Place chicken in a glass dish or bowl; poke with a fork several
times,
then pour Worcestershire sauce in and turn to coat. Cover dish
or bowl and refrigerate for about 1 hour.
2. Place bacon in a large, deep
skillet. Cook over medium high heat until
evenly brown. Drain, and set aside.
3. Heat butter in a small skillet
over medium heat. Add mushrooms, and saute for about 10 minutes,
or until soft; set aside.
4. Preheat oven to Broil.
5. Remove chicken from marinade
(discard any remaining liquid), and broil for about 5 minutes
each side. When chicken is almost finished, top each breast with
2 slices bacon, then cheese. Continue to broil until cheese has
melted, then remove from oven. Serve with mushrooms and salad
dressing for topping.

** COOKING TIP FROM HAVERHILL
BEEF **
QUESTION: Could you tell me what
"stew meat" is?
ANSWER: Traditionally, tough,
inexpensive cuts of meat are used to make stew. Meat cut from
the chuck portion contains a lot of connective tissue, particularly
collagen. Collagen melts during cooking, making the meat intensely
flavorful. Stewing, or cooking in liquid for several hours, makes
this otherwise tough meat tender, and adds all those wonderful
flavors to the stew. You can use more tender cuts of meat in
a stew. However, more tender cuts tend to not only be much more
expensive, but also not as flavorful.
