Joe T's Skillet Pork Chops
from Haverhill Beef Owner Joe Terrazzano

Prep Time: 1 Minute
Cook Time: 25 Minutes
Ready In: 26 Minutes
Makes 4 servings

Ingredients:
8 thin cut bone in pork chops
1 lb. grilled marinated mushrooms with roasted peppers

Directions:
1. In fry pan, place pork chops and marinated mushrooms with roasted peppers on medium heat. Cover.

2. Let simmer for 15 minutes.

3. Turn over pork shops.

4. Simmer for 15 minutes.

Beef Tenderloin With Roasted Shallots

Prep Time: 15 Minutes
Cook Time: 1 Hour and 30 Minutes
Ready In: 1 Hour and 45 Minutes
Makes 6 servings

Ingredients:
3/4 pound shallots, halved lengthwise and peeled
1 1/2 tablespoons olive oil
salt and pepper to taste
3 cups beef broth
3/4 cup port wine
1 1/2 teaspoons tomato paste
2 pounds beef tenderloin roast, trimmed
1 teaspoon dried thyme
3 slices bacon, diced
3 tablespoons butter
1 tablespoon all-purpose flour
4 sprigs watercress, for garnish

Directions:
1. Preheat oven to 375 degrees F (190 degrees C). In 9 inch pie pan, toss shallots with oil to coat. Season with salt and pepper. Roast until shallots are deep brown and very tender, stirring occasionally, about 30 minutes.

2. In a large saucepan, combine beef broth and port. Bring to a boil. Cook over high heat until the volume is reduced by half, about 30 minutes. Whisk in tomato paste. Set aside.

3. Pat beef dry; sprinkle with thyme, salt and pepper. In a large roasting pan, set over medium heat on the stove top, sauté bacon until golden. Using a slotted spoon, transfer bacon to paper towels. Add beef to pan; brown on all sides over medium high heat, about 7 minutes.

4. Transfer pan to oven. Roast beef until meat thermometer inserted into center registers 125 degrees F (50 degrees C) for medium rare, about 25 minutes. Transfer beef to platter. Tent loosely with foil.

5. Spoon fat off top of pan drippings in roasting pan. Place pan over high heat on stove top. Add broth mixture, and bring to boil; stir to scrape up any browned bits. Transfer to a medium saucepan, and bring to simmer. Mix 1 1/2 tablespoon butter and flour in small bowl to form smooth paste; whisk into broth mixture, and simmer until sauce thickens. Whisk in remaining butter. Stir in roasted shallots and reserved bacon. Season with salt and pepper.

6. Cut beef into 1/2 inch thick slices. Spoon some sauce over, and garnish with watercress.

Australian Style Chicken Breasts

Prep Time: 25 minutes
Cook Time: 25 Minutes
Ready in: 1 Hour and 20 Minutes
Makes 4 servings

Ingredients:
4 skinless, boneless chicken breast halves, pounded to 1/2 inch thickness
2 teaspoons seasoning salt
6 slices bacon, cut in half
1/2 cup prepared mustard
1/2 cup honey
1/4 cup light corn syrup
1/4 cup mayonnaise
1 tablespoon dried onion flakes
1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
2 cups shredded Colby-Monterey Jack cheese
2 tablespoons chopped fresh parsley

Directions:
1. Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 minutes.

2. Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Set aside.

3. In a medium bowl, combine the mustard, honey, corn syrup, mayonnaise and dried onion flakes. Remove half of sauce, cover and refrigerate to serve later.

4. Heat oil in a large skillet over medium heat. Place the breasts in the skillet and sauté for 3 to 5 minutes per side, or until browned. Remove from skillet and place the breasts into a 9x13 inch baking dish. Apply the honey mustard sauce to each breast, then layer each breast with mushrooms and bacon. Sprinkle top with shredded cheese.

5. Bake in preheated oven for 15 minutes, or until cheese is melted and chicken juices run clear. Garnish with parsley and serve with the reserved honey mustard sauce.

** COOKING TIP FROM HAVERHILL BEEF **

Braising Beef . . .

QUESTION: Do you have any tips for braising beef?

ANSWER:
1. Slowly brown beef on all sides in a small amount of oil in a heavy pan. Pour off drippings and season as desired.

2. Add a small amount (1/2 - 2 cups) of liquid, such as stock, water or wine.

3. Cover tightly and simmer gently over low heat on range top or in a 325 degrees F oven following the guide below or until fork tender. Reduce or thicken cooking liquid as desired.

BEEF BRAISING GUIDE:

- Chuck Pot Roast (Arm, Shoulder or Blade), boneless.... 2-1/2 to 4 pounds.... 2 to 3 hours

- Chuck Shoulder Steak, boneless.... 3/4 to 1 inch.... 1-1/4 to 1-3/4 hours

- Brisket, fresh.... 2-1/2 to 3-1/2 pounds.... 1-1/4 to 1-3/4 hours

- Round Steak, (Eye or Bottom), boneless.... 3/4 to 1 inch thick.... 1-1/4 to 1-3/4 hours

- Round Steak, (Eye or Bottom), boneless.... 1 to 1-1/2 inch thick.... 1-3/4 to 2-1/2 hours

- For Top Round Steak, braising is not recommended.

** WINE BASICS FROM HAVERHILL BEEF'S WINE CELLAR **

About Turning Leaf Coastal Reserves . . .

Created for those occasions that stand out, the ones you will look back on and remember, is a wine that stands apart: Turning Leaf Coastal Reserve. As you might expect, these wines are handcrafted from some of the best vineyards in California—in particular coastal vineyards renowned for the taste and character of their fruit. Cooler coastal temperatures contribute to a prolonged growing season and additional 'hang time' for the grapes. The result is fruit that has had ample time to fully develop its flavor. In fact, Turning Leaf Coastal Reserve is an award winning wine that frequently take top honors at prestigious competitions nationwide.

Turning Leaf Coastal Reserves Wines Taste Profiles and Winemaker's Notes:

1997 CENTRAL COAST CABERNET SAUVIGNON

Taste Profile:
This Cabernet Sauvignon is medium to full bodied, with balanced tannins and mellow, rich, earthy flavors highlighted by a touch of anise. Excellent with grilled beef tenderloin, filet mignon and braised lamb. Or, as an appetizer, enjoy with robust American and imported cheeses.

Winemaker's Notes:
The extended summer of 1997 created an abundant crop of high quality grapes. To soften the acid structure and enhance texture integration, most of the resulting wine went through malolactic fermentation. The blend was then aged in both American and French oak barrels for an average of 20 months, to balance complexity with a pleasing softness.

1998 NORTH COAST CHARDONNAY

Taste Profile:
The texture of the wine is lush, medium to full bodied, with a nutty oak character that continues through to the long, dry finish. Pairs beautifully with salmon, creamy pastas, roasted fowl or grilled pork.

Winemaker's Notes:
Due to El Nino climate conditions in 1998, a cool spring resulted in a late harvest and small yields, but grapes with concentrated fruit flavors. To preserve that taste, we used a gentle, whole cluster membrane press to maximize flavor and minimize bitter tannins. One of the more popular methods of pressing involves the membrane press, which gently extracts the juice. Aging in American oak barrels provided the finishing touch, proving to be the perfect compliment to the wine’s rich fruit flavors.

1999 SONOMA COUNTY MERLOT

Taste Profile:
Black pepper spice, fresh herbal notes and flavors of red, ripe raspberry set this medium bodied Merlot apart. Pair with beef, lamb or barbecued pork loin. Or as an interesting contrast, serve with creamy pasta garnished with aged Parmesan cheese.

Winemaker's Notes:
To make this wine, we turned primarily to California's Sonoma County. The grapes were carefully de-stemmed at harvest so as not to mix their bitter tannins with the wine. Then, most of the wine underwent malolatic fermentation for greater flavor concentration and texture integration. The result is a tapestry of rich varietal taste that when mellowed on average for 11 months in American and French oak barrels, takes on a wonderfully subtle complexity and softness.

** BEER TASTING NOTES FROM HAVERHILL BEEF **

Sam Adams Cherry Wheat . . .

Wheat beer is a distinctly summery and refreshing style, particularly welcome when a thirst quenching drink is called for. Sam Adams Cherry Wheat perfectly balances the delicacy and citrus tang of a wheat ale with the taste and aroma of fresh cherries.

Wheat beers combine beautifully with fruit, and Cherry Wheat is no exception. Savor Cherry Wheat's spicy, herbal note. This delightful beer has a dry, crisp finish due to the wheat malt used in the brew; fresh cherries from Michigan give it a lovely aroma. You'll detect a slight sweetness from the clover honey which is used sparingly to balance the tartness of the fruit.

Try Cherry Wheat as an accompaniment to goat cheese, roasted peppers and pine nuts wrapped in filo pastry, or with a Chinese dish spiced with ginger and garlic.

Sam Adams Pale Ale Lager . . .

Sam Adams Pale Ale is a delicious, light-bodied beer with a delightfully fresh taste. The unique blend of two-row Harrington, Vienna, Caramel 60 and Chocolate malts adds complexity, as well as a nice amber color. The ale yeast gives it a crisp and fruity fermentation character, and East Kent Goldings and Fuggles hops impart an authentic British ale flavor.

Pale Ale tastes great with grilled foods, spicy Mexican dishes, or a big bowl of New England clam chowder.

Sam Adams Winter Lager . . .

This year's Sam Adams Winter Lager is spiced with Curacao orange peel and fresh ginger. Winter Lager is a dark wheat bock with an herbal bitterness, intense flavor and a beautiful ruby hue. As a bock, it is brewed with extra malt, for a heartier, more full-bodied taste. A substantial portion of wheat malt is used in addition to two-row Harrington and caramel malts. The wheat malt gives this robust beer a lovely sharpness and a clean, crisp finish. Also detectable is a slight earthiness from the Goldings hops, which are added to the brew along with Saaz and Tettnang Tettnanger hops.

Winter Lager is delicious with strongly flavored foods like hunter's stew.
