** VALENTINE'S DAY RECIPES FOR YOU FROM HAVERHILL BEEF **

Sweetheart's Beef Burgundy Filet

Prep Time: 40 Minutes
Cook Time: 20 Minutes
Ready In: 6 Hours and 40 Minutes
Makes 8 servings

Ingredients:
4 cups Burgundy wine
1 1/2 cups canola oil
1 1/2 cups soy sauce
2 cups oyster sauce
1 tablespoon garlic, minced
1 1/2 teaspoons dried oregano
8 (6 ounce) filets filet mignon
1/2 cup butter, softened
1 teaspoon Burgundy wine
1 tablespoon minced shallots
1 tablespoon minced green onions
1 teaspoon ground white pepper

Valentine's Day Ingredients Scaled For 2:
1 cup Burgundy wine
1/4 cup and 2 tablespoons canola oil
1/4 cup and 2 tablespoons soy sauce
1/2 cup oyster sauce
3/4 teaspoon garlic, minced
1/2 teaspoon dried oregano
2 (6 ounce) filets filet mignon
2 tablespoons butter, softened
1/4 teaspoon Burgundy wine
3/4 teaspoon minced shallots
3/4 teaspoon minced green onions
1/4 teaspoon ground white pepper

Directions:
1. In a medium saucepan, mix together Burgundy wine, canola oil, soy sauce, oyster sauce, garlic and oregano. Bring to a boil, and then remove from heat. Place in the refrigerator 1 hour, or until chilled.

2. Place filet mignon filets in a 9x13 inch baking dish, and pour the chilled marinade over them. Cover tightly with foil, and refrigerate for a minimum of 5 hours.

3. In a medium bowl, cream butter and 1 teaspoon of Burgundy wine with a hand mixer. Mix in shallots, green onions and white pepper by hand; cover tightly, and refrigerate.

4. Preheat an outdoor grill for high heat, and lightly oil grate. Preheat oven to 200 degrees F (95 degrees C).

5. Grill marinated filets to desired doneness, turning once. Place filets in a clean 9x13 inch baking dish. Dollop with the Burgundy butter mixture, and place in the preheated oven for a minute, or until butter is melted.

Rack Of Lamb For Lovers

Prep Time: 15 Minutes
Cook Time: 12 Hours 30 Minutes
Ready In: 12 Hours 45 Minutes
Makes 2 racks

Ingredients:
2 (7 bone) racks of lamb
2 tablespoons olive oil
salt and pepper to taste
4 cloves garlic, minced
1 large onion, diced
4 carrots, diced
1 cup chopped celery, with leaves
1 cup red wine
1 cup port wine
1 (10.5 ounce) can chicken broth
5 sprigs fresh spearmint
3 sprigs fresh rosemary
1 cup mint apple jelly
1/4 cup panko bread crumbs
2 tablespoons olive oil
salt and pepper to taste
1 tablespoon garlic, minced
2 tablespoons olive oil

Directions:
1. To Make Demi-Glace: In a medium skillet over medium heat, heat 2 tablespoons olive oil and add trimmings and fat cap from lamb; add salt and pepper to taste.

2. Cook until fat is brown without being burnt; when cooked, lower heat and add 4 cloves minced garlic or to taste. Add onion, carrots, celery tops, port, red wine, and chicken broth; reduce liquids at a low simmer, adding more stock, port, or wine as needed to keep pan from going dry.

3. Place mixture into a crock pot to simmer overnight; strain. Add spearmint, rosemary and mint jelly; begin simmering over medium-low heat to reduce, adding more port, wine, or stock as needed until mixture leaves a syrup-like coating on the back of a spoon. Strain once more and set aside to keep warm while lamb roasts.

4. To Roast Lamb: Preheat oven to 450 degrees F (230 degrees C).

5. Heat a cast iron or oven-proof skillet in oven until it reaches 450 degrees F (230 degrees C). Meanwhile, trim all excess fat and preen rib bones.

6. Rub meat with 2 tablespoons olive oil, salt and pepper to taste, and 1 tablespoon garlic, or to taste; coat with panko bread crumbs.

7. In heated skillet, warm 2 tablespoons olive oil and sear loins on both sides; continue cooking to desired temperature (5 to 7 minutes for medium rare).

8. Pour a small amount of demi-glace on platter and arrange sliced loins criss-crossed; drizzle with more demi-glace and garnish with fresh mint; serve.

Darling's Roasted Red Pepper Chicken

Prep Time: 10 minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings

Ingredients:
4 skinless, boneless chicken breasts
1 (12 ounce) jar roasted red bell peppers
2 cups bread crumbs
3 tablespoons vegetable oil
1 cup sour cream
1/2 cup feta cheese

Valentine's Day Ingredients Scaled For 2:
2 skinless, boneless chicken breasts
1/2 (12 ounce) jar roasted red bell peppers
1 cup bread crumbs
1 tablespoon and 1-1/2 teaspoons vegetable oil
1/2 cup sour cream
1/4 cup feta cheese

Directions:
1. With a very sharp knife, cut pockets into the thickest part of the breast of chicken. Stuff as many pieces of roasted red peppers as you can into pockets of chicken one at a time. Pour bread crumbs into a large plastic bag. Place chicken breasts in the bag with the bread crumbs and shake until well coated.

2. In a large skillet, heat oil to a medium-high heat and place chicken in the pan. Cook for 5 minutes on one side then turn, cook for 10 minutes on the other side.

3. While cooking the chicken, in an electric blender blend sour cream and a few pieces of red peppers. Flip the chicken one more time and cook 5 more minutes, or until chicken is done.

4. Cut the chicken in half and arrange the pieces on a plate. Drizzle with sour cream mixture and sprinkle with feta cheese.

Love Begins at Home . . .

No doubt about it, romance is in the air! What better way to take advantage of this candy heart-filled season than to turn the lights down low and the oven up to high?

There are only two days in the year dedicated to tending the old fire of love -- your anniversary and February 14 -- take full advantage of these days to stoke the embers and get love's fire burning high!

This Valentine's Day, instead of going out to dinner and having to hassle with overcrowded restaurants, steep menu prices, and overworked waiters, why not have an intimate dinner at home with "That Special Someone"?

Sure, it's more work than letting someone else do the cooking, but making your own Valentine's feast can be more fun and more romantic than eating out. Consider involving your Honey in the preparation of the dinner; make the cooking a part of the celebration. Cooking is just as much of a sensual experience as eating, and cooking together can be wonderfully romantic. Send the kids over to a friend's house, and don't forget to turn on the answering machine and to turn off the telephone's ringer. Sip glasses of chilled champagne as you cook, and put "your song" on the stereo. Give in to some spontaneous dancing, and steal a kiss or two over the steaming stovetop.

You can turn your kitchen table into a cozy bistro by tossing a crisp linen tablecloth on top of it. Set the table with something besides the sturdy everyday dinner plates you customarily use. Flickering candles and a slender vase with a few flowers may be thought of as romantic clichés, but that doesn't make them any less wonderful to have on your Valentine's Day table!

Jacob's Creek: "Australia's Top Drop" . . .

The history of Jacob's Creek begins with the settlement of South Australia. Colonel William Light who surveyed the city of Adelaide in 1836 made his way north west in 1837 to the Barossa Valley, which he named after a famous English naval victory at Barossa in the south of Spain.

Jacob's Creek was also named by Light, after his surveying assistant, William Jacob who subsequently settled on the banks of the creek with this brother.

The Jacob brother's small cottages still stand overlooking Jacob's Creek.

In 1846 a German immigrant, Johann Gramp, purchased land further up stream. A year later he planted the Barossa Valley's first commercial vineyard, on the bank's of Jacob's Creek. The vines flourished and the vineyard was gradually extended. In 1850 Johann produced his first vintage of a hock style white wine.

His small, historic winery and cellar, which still sit quietly on the banks of Jacob's Creek, grew to become Orlando Wines, Australia's largest wine and spirits group and most successful wine brand exporter.

Jacob's Creek the wine, was first released in 1976 when a 1973 vintage of Shiraz Cabernet Malbec was named after the site of Johann's first vineyard - and records have been tumbling since.

Orlando was rewarded for its international success in 1993, by being named Australian Exporter of the Year - a title strongly contested by companies from all industries.

Then, in 1994, Jacob's Creek was honored with one of the Australian Wine Industry's most prestigious prizes - the Maurice O'Shea Award. It was the first time the award had gone to a wine rather than a person and paid tribute to the enormous contribution Jacob's Creek has made to Australian wine exports.

An ongoing commitment to quality has resulted in Jacob's Creek being a regular winner at wine shows in Australia and overseas. Over the last three years Jacob's Creek has been awarded more than 340 medals in wine shows around the world.
