** VALENTINE'S DAY RECIPES FOR YOU FROM HAVERHILL BEEF **
As we said in last week's newsletter - "Love Begins at
Home... There is no doubt about it, romance is in the air! Paying
special attention to your lover's taste buds is a great way to
let them know exactly how you feel. Take advantage of this candy
heart-filled season and turn the lights down low and the oven
up to high!"
Below is one suggestion for a "very romantic" Valentine's
Day meal that will stoke the embers and get love's fire burning
high!
~~ Romantic Steak Dinner For Two:
- Grilled Artichokes In Herbed Butter
- Gruyere Potatoes
- Sautéed Steak With Caramelized Shallots In A Red Wine
And Cream Sauce
- Strawberries With Romantic Chocolate Dip
- Wine Suggestion: Jacob's Creek Cabernet Sauvignon 2000
- Beverage: Korbel Brut Champagne
Grilled Artichokes In Herbed Butter
Prep Time: 15 Minutes
Cook Time: 40 Minutes
Ready In: 55 Minutes
Makes 4 servings
Ingredients:
4 medium-large artichokes (about 4" diameter)
2 tablespoons lemon juice
1/4 cup butter melted (butter works better than margarine)
2 tablespoons olive oil
4 large garlic cloves crushed
1/3 cup finely snipped basil
2 teaspoons prepared mustard
1 teaspoon finely shredded lemon peel
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Trim stems from artichokes, cut off 1" from tops and
trim off sharp leaf tips. Halve artichokes and remove chokes
using a grapefruit spoon or small knife. Brush cut edges with
some of the lemon juice and set aside.
2. Combine remaining ingredients in small bowl until well
blended. Tear off 8 24"x18" pieces of heavy duty foil.
Fold in half to make 12"x18" rectangles. Place one
artichoke half on each rectangle, cut side up. Drizzle with butter
sauce, dividing equally.
3. Bring up opposite foil edges and seal with double fold.
Fold in remaining edges to completely enclose artichoke halves,
leaving space for steam to build. Grill packets uncovered on
medium heat for 30-40 minutes; until hearts are tender when pierced
with a fork. These may be prepared a day ahead and refrigerated.

Gruyere Potatoes
Prep Time: 10 Minutes
Cook Time: 40 Minutes
Ready In: 50 Minutes
Makes 2
Ingredients:
2 medium potatoes
2 tbsp. butter, cut into small cubes
1/4 cup Gruyere cheese, grated
salt and white pepper, to taste
Directions:
1. Preheat the oven to 375°F.
2. Peel and slice the potatoes thinly.
3. Place half of the potatoes in a greased baking dish. Dot
with half of the butter and sprinkle with half of the grated
cheese. Sprinkle with salt and white pepper.
4. Repeat the layers. Cover with foil and bake until the potatoes
are tender, about 40 minutes.

Sautéed Steak With Caramelized Shallots In A Red Wine
And Cream Sauce
Prep Time: 5 minutes
Cook Time: 25 Minutes
Ready in: 30 Minutes
Makes 2 servings
Ingredients:
1 1/2 pound boneless steak
2 tablespoon heavy cream
3 teaspoon olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 large shallot, chopped
1 small onion, chopped
salt and freshly ground pepper
3 tablespoon red wine
Directions:
1. Place the meat on a plate and rub 1/2 teaspoon olive oil on
each side. Rub the thyme and rosemary into the meat and let marinate
until ready to cook-at least 5 minutes or up to an hour.
2. In a medium skillet, heat 1 teaspoon oil over moderately
low heat. Add the shallots, onion, salt, and pepper and sauté
about 8 minutes, stirring frequently to prevent browning. You
want the shallots and onion to cook slowly and caramelize. Remove
the shallots and onion and set aside.
3. In the same skillet over moderately high heat, sauté
the steak in the remaining teaspoon of oil for about 5 minutes
on each side for medium-rare. Remove the meat and set aside.
4. Remove any excess grease from the pan and place over high
heat. Add the wine and let simmer for 20 seconds.
5. Add the cream and caramelized shallots and onion and let
simmer about 3 minutes, or until thickened.
6. Thinly slice the steak and spoon the sauce on top.

Strawberries With Romantic Chocolate Dip
Prep Time: 5 minutes
Cook Time: 25 Minutes
Ready in: 30 Minutes
Makes 2 servings
Ingredients:
1/2 cup heavy cream
6 ounce semisweet chocolate
2 tablespoons light corn syrup
2 teaspoons pure vanilla extract
fresh strawberries
Directions:
1. Heat the heavy cream in a small heavy saucepan over low heat
until hot.
2. Add the chocolate and corn syrup.
3. Stir continuously until the mixture is smooth and the chocolate
has all melted.
4. Immediately remove from the heat and stir in the vanilla.
5. Pour the mixture into a serving dish and cool.
6. Serve with fresh strawberries.

** COOKING TIP FROM HAVERHILL BEEF **
Slow Cooking Tips . . .
Helpful Hints:
- Make sure the ingredients fill the slow cooker at least half
full so the foods cook properly and the liquid does not cook
away.
- Check to see that the slow cook lid fits completely without
tilting or being askew.
- Do not remove the slow cooker lid during cooking unless
the recipe directs you to add ingredients or stir. The heat loss
caused by removing the lid unnecessarily can result in extra
cooking time.
- Slow cooking may take longer at high altitudes.
- Be sure to follow recipe directions.
Basics:
- Choose the economical, less tender meat cuts for slow cooking.
These include cuts from the chuck and round such as pot roasts
and pieces of beef for stews and soups. The long, slow cooking
process ensures fork-tender, moist and flavorful beef.
- Save quick-cooking ground beef and tender roasts for other
meals and cooking methods.
- Use beef straight from the refrigerator. Do not use frozen
meat for recipes. Defrost meat in the refrigerator, never at
room temperature
- Trim visible fat from meat before placing in the slow cooker
to help reduce fat in the finished dish.
- Place vegetables on the bottom and around the sides of the
slow cooker; place meat atop vegetables. (Meat tends to cook
faster than vegetables in the slow cooker.)
Safety Savvy:
Following recipe directions helps ensure that foods are cooked
properly and to the correct doneness. When slow cooking is complete,
dont forget these helpful safety tips.
- Remove food from the slow cooker within one hour after it
is finished cooking. Refrigerate leftovers promptly.
- Do not reheat foods in the slow cooker because it takes
too much time for the food to reach a safe internal temperature.
- Cool the slow cooker before adding water for cleaning; otherwise
the crockery or stoneware liner could crack.

** BEER TASTING NOTES FROM HAVERHILL BEEF **
About Budweiser . . .
Budweiser - Brewed and sold since 1876 by Anheuser-Busch, "The
King of Beers" is the largest-selling beer in the world.
Budweiser has been the world's best-selling beer since 1957,
and is distributed in more than 70 countries. Budweiser leads
the U.S. Premium beer category, outselling all other domestic
premium beers combined. In fact, one in almost every five beers
sold in the United States today is a Budweiser.
Bud Trivia . . . .
On April 7, 1933, Prohibition was repealed. Beer trucks appeared
on the streets of American cities for the first time in more
than thirteen years. To celebrate the event, August A. Busch
himself picked one of the first cases of Budweiser to roll off
the bottling line, and sent it to President Roosevelt by air
express. The Clydesdales in the photo above re-enacted the event
with a more personal delivery.
Clydesdales: The World Renowned Budweiser Team . . . .
To celebrate the end of Prohibition in 1933, August A. Busch,
Jr., presented his father with a team of Budweiser Clydesdales
and a bright red brewery wagon. It was the birth of a proud tradition.
Today, the Clydesdales are a living symbol of Anheuser-Busch,
the largest brewer in the world. Impressive in size and remarkable
in precision, their thrilling performances are enjoyed throughout
the U.S.
Because of demanding standards at Anheuser-Busch, only the
finest horses make the Clydesdale team. In appearance, the ideal
horse is bay in color, has a blaze of white on the face, a black
mane and tail, and, most importantly, white feathering on all
four legs and feet.
Full-grown, the horse should stand at least 18 hands tall
at the shoulders and should weigh between 2,000 - 2,300 pounds
-- more than a ton! These gentle giants need plenty to eat. Each
working horse consumes 50 to 60 pounds of hay and 20 to 25 quarts
of feed per day. The feed is a mixture of beet pulp, crimped
oats, bran, minerals, salt, molasses and water. Perfect for a
hungry horse. Newcomers to a hitch are generally three to four
years of age.
Dalmatians have traveled with the hitch since the 1950's.
In the early days of brewing, Dalmatians were bred and trained
to protect the horses and guard the wagon when the driver went
inside to make deliveries. The black-and-white spotted dogs were
swift enough to keep up with the wagons, and their light-colored
bodies and markings made them easier to see during the twilight
hours. Today, the Dalmatians are perched atop the wagon, seated
next to the driver.
