** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **

Beef Steak Milanese

Prep Time: 10 Minutes
Cook Time: 6 Minutes
Ready In: 16 Minutes
Makes 4 servings

Ingredients:
4 beef cubed steaks (about 1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 to 2 tablespoons olive oil
1/4 cup chopped tomato
Chopped fresh parsley

Coating:
1 egg
1 tablespoon water
1/2 cup seasoned dry bread crumbs
2 tablespoons grated Parmesan cheese

Directions:
1. Beat egg with water in shallow dish until blended. Combine bread crumbs and cheese in second shallow dish. Season beef steaks on both sides with salt and pepper. Dip each steak into egg mixture, then into bread crumb mixture to coat evenly.

2. Heat 1 tablespoon oil in 12-inch nonstick skillet over medium heat until hot. Place steaks in skillet; cook 5 to 6 minutes for medium rare to medium doneness, turning once. Cook steaks in batches, if necessary, and add remaining oil as needed. Sprinkle with tomato and parsley, as desired.

Beef and Pasta Skillet

Prep Time: 10 Minutes
Cook Time: 25 Minutes
Ready In: 35 Minutes
Makes 4

Ingredients:
1 pound ground beef
2 medium potatoes
1 small green bell pepper, chopped
1/2 cup chopped onion
1 can (13-3/4 to 14-1/2 ounces) ready-to-serve beef broth
1-1/2 cups uncooked wagon wheel pasta
1 cup prepared hickory-flavored barbecue sauce
1/4 cup water
1/2 cup finely shredded Cheddar or Colby cheese

Directions:
1. Brown ground beef with bell pepper and onion in large nonstick skillet over medium heat 6 minutes or until beef is not pink, breaking up into 3/4-inch crumbles. Pour off drippings.

2. Stir in broth, pasta, barbecue sauce and water; bring to a boil. Reduce heat to medium-low; cover and simmer 10 to 15 minutes or until pasta is almost tender. Uncover and continue cooking 5 to 7 minutes or until pasta is tender and sauce is thickened, stirring occasionally. Sprinkle with cheese before serving.

Creamy Baked Chicken

Prep Time: 30 minutes
Cook Time: 35 Minutes
Ready in: 1 hour and 5 Minutes
Makes 6 servings

Ingredients:
2 tablespoons vegetable oil
6 skinless, boneless chicken breast halves
1/2 cup teriyaki basting sauce
1/2 cup Ranch-style salad dressing
1 cup shredded Cheddar cheese
3 green onions, chopped
1/2 (3 ounce) can bacon bits
1 tablespoon chopped fresh parsley, for garnish

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large skillet, heat oil over medium-high heat. Add chicken breasts, and sauté 4 to 5 minutes each side, until lightly browned.

3. Place browned chicken breasts in a 9x13 inch baking dish. Brush with teriyaki sauce, then spoon on salad dressing. Sprinkle with cheese, green onions and bacon bits.

4. Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear. Garnish with parsley and serve.

** COOKING TIP FROM HAVERHILL BEEF **

Beef Rubs and Marinades . . .

Rubs and Marinades are great ways to add flavor or tenderize your favorite cuts of beef.

What is a Beef Rub?

A rub is a blend of herbs, peppers, spices or seasonings that are blended to add flavor to steaks and roasts by coating the surface of the beef with the mixture.

- Rubs can consist of dry ingredients, or some include oil, crushed garlic or other liquids that cause the rub to be a paste.
- Rubs can be applied to the surface of the beef just before grilling or roasting, or applied several hours in advance and refrigerated until cooked.

What is a Beef Marinade?

A marinade is a highly seasoned liquid used to add flavor and tenderize less tender cuts.

- Marinades usually consist of liquid ingredients such as fruit or vegetable juices, wine, water or oil in combination with seasonings and herbs.
- A tenderizing marinade must contain an acidic ingredient such as lemon juice, yogurt, wine or vinegar or a natural tenderizing enzyme found in fresh papaya, ginger, pineapple and figs.
- Allow 1/4 to 1/2 cup marinade for each 1 to 2 pounds of beef.
- Always marinate in the refrigerator - never at room temperature.
- Marinating may be done in a plastic bag or glass dish.
- Beef must be marinated at least six hours for tenderization to take place. Turn or stir the meat occasionally to allow even exposure to the marinade.
- For flavor, marinate 15 minutes or as long as 2 hours.
- Leftover marinade should always be discarded.

** WINE REVIEW FROM HAVERHILL BEEF **

Beringer's 1999 Napa Valley Chardonnay . . . .

Flavor: Butterscotch, honey, nutmeg, citrus and toasted coconut aromas highlight mouth-coating tropical fruit, creamy vanilla and balancing citrus flavors.

Beringer's 1999 Napa Valley Chardonnay Vintage Release: March 2001

Making The Wine:
The fruit for Beringer's 1999 Napa Valley Chardonnay came from vineyards in the southern part of Napa Valley, California, from Yountville south into Los Carneros. The cool climate of this broad region allows the fruit to develop layers of aromas and flavors while retaining a balancing acidity. Beringer's vineyards closer to Yountville consistently produce fruit with bigger personality, with flavors that are rich and opulent with a honeyed butter/citrus quality. Fruit from the vineyards further south have a more subtle, leaner character with tropical fruit and apple/pear aromas and flavors.

Beringer's Yountville Vineyard:
This vineyard in the Yountville appellation in the southern area of the Napa Valley features clay loam soils with limited depth and low fertility. It produces great Chardonnays with full, rich flavors and excellent structure, as well as a very small amount of Riesling. Winemaster Ed Sbragia frequently selects Chardonnay from Yountville Vineyard for his Private Reserve Chardonnay blend.

- Coors uses an all-natural brewing process and the finest ingredients: ideal brewing water, hops, cereal grains (rice and refined corn starches), and barley. Coors has developed special strains of barley it malts itself to ensure product quality. Nothing artificial is in Coors beers.

- On average, Coors takes 55 days to brew, age, finish and package its lagers — about twice as long as its major competitors. The result is a naturally aged, stable and smooth product.

- To ensure freshness, most beer products are kept cold through brewing, packaging, and distribution. They are shipped cold in insulated or refrigerated railcars and trucks.
