** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Teriyaki Beef and Green Beans
*Submitted by Haverhill Beef Customer Josephine Larocque*
Prep Time: 15 Minutes
Cook Time: 15-30 Minutes (Approximately 15 minutes if you use
frozen green beans; and about 30 minutes for fresh green beans
- it depends if you like it crisp or soft.)
Ready In: 30 Minutes
Makes 3 to 5 servings
Ingredients:
1/4 lb Haverhill Beef's Beef Teriyaki, cut into strips - (You
can
also increase the amount of beef to your liking, it won't affect
the taste
of the vegetables, in fact it will make it more delicious by
doing so.)
1 lb green beans
1 glove garlic crush
1 medium onion, sliced
1 tomato, sliced
2 tsp olive oil
4 tsp teriyaki sauce or soya sauce
salt and pepper to taste
Directions:
1. In a medium heated pan, sauté the sliced garlic, onion
and tomato in olive
oil, until slightly brown.
2. Then add the strips of Haverhill Beef's Teriyaki Beef to
the pan, cook for 5 minutes.
3. Add the green beans and teriyaki or soya sauce, then cover
the pan. Let it cook until green beans are slightly tender or
desired texture, add salt and pepper to taste.
4. Serve with hot baked potato or steamed rice.
5. Enjoy!!!

Braised Boneless Center Cut Pork Chops
Prep Time: 10 Minutes
Cook Time: 14 to 18 Minutes
Ready In: 24 to 28 Minutes
Makes 6 servings
Ingredients:
6 boneless pork center loin chops, 3/4-inch thick
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon olive or vegetable oil
2 teaspoons finely chopped fresh ginger root
1/3 cup orange juice
3 tablespoon soy sauce
2 tablespoons honey
1 tablespoon Dijon mustard
2 cloves garlic, minced
Fresh sliced oranges
Watercress sprigs
Directions:
1. Season chops with salt and pepper.
2. Heat oil in large skillet over medium-high heat. Brown
chops, 3-4 minutes per side.
3. In small bowl, stir together ginger root, orange juice,
soy sauce, honey, mustard and garlic.
4. Pour ginger mixture over chops. Simmer, covered, 8-10 minutes
or until chops are tender.
5. Place cooked chops on serving plate; spoon 1/2 of orange-mustard
sauce over pork. Garnish with orange slices and watercress. Pass
remaining sauce.

Grilled Chicken Tacos
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 12 tacos
Ingredients:
2 pounds skinless and boneless chicken breasts
12 taco shells
Shredded lettuce
1 tablespoon water
2 medium onions, coarsely chopped
2 cups shredded Monterey Jack cheese
1 packet taco seasoning mix
2 tablespoons olive or vegetable oil
2 medium tomatoes, seeded and coarsely chopped
Directions:
1. Preheat grill to medium heat.
2. In small bowl, combine taco seasoning, oil and water until
blended. In medium bowl, combine onions and 1 tablespoon taco
seasoning mixture and toss until evenly coated.
3. Grill boneless chicken breasts, turning occasionally and
brushing with remaining taco seasoning mixture, 15 minutes or
until meat thermometer inserted in center registers 170°F.
Note: Do not brush during the last 5 minutes of grilling.
4. Grill onions in grill wok or on grill screen, stirring
occasionally, until tender. Add tomatoes; grill just until heated
through.
5. To serve, cut chicken into strips and serve in taco shells
with onions, tomatoes, lettuce and cheese.

** GRILLING TIP FROM HAVERHILL BEEF **
Direct Heat vs. Indirect Heat . . . .
Question: Will you explain the difference between Direct Heat
and Indirect Heat when grilling?
Answer:
- DIRECT HEAT:
The Direct Heat method is similar to broiling. Food is cooked
directly over the heat source. For even cooking, food should
be turned once halfway through the grilling time. Typically,
Direct Heat method is used for foods that take less than 25 minutes
to cook.
To grill by the Direct Heat method on a gas grill, preheat
the grill with all burners on High. Place the food on the cooking
grate, then adjust all burners to the temperature noted in the
recipe. Close the lid of the grill and lift it only to turn food
or to test for doneness at the end of the recommended cooking
time.
For charcoal grills, spread prepared coals evenly across the
charcoal grate. Set the cooking grate over the coals and place
food on the cooking grate. Place the lid on the grill and lift
it only to turn food or to test for doneness at the end of the
recommended cooking time.

- INDIRECT HEAT:
The Indirect Heat method is similar to roasting, but with the
added benefits of that grilled texture, flavor, and appearance
you can't get from an oven. Heat rises, reflects off the lid
and inside surfaces of the grill, and slowly cooks the food evenly
on all sides. The circulating heat works much like a convection
oven, so theres no need to turn the food.
To grill by the Indirect Heat method on a gas grill, preheat
the grill with all burners on High. Then adjust the burners on
each side of the food to the temperature noted in the recipe
and turn off the burner(s) directly below the food. For best
results, place roasts, poultry, or large cuts of meat on a roasting
rack set inside a disposable heavy-gauge foil pan. For longer
cooking times, add water to the foil pan to keep drippings from
burning.
For charcoal grills, arrange hot coals evenly on either side
of the charcoal grate. A drip pan placed in the center of the
charcoal grate between the coals is useful to collect drippings
that can be used for gravies and sauces. It also helps prevent
flare-ups when cooking fattier foods such as goose, duck, or
fatty roasts. For longer cooking times, add water to the drip
pan to keep drippings from burning. Place the cooking grate over
the coals and place the food on the cooking grate, centered over
the drip pan or empty space. Place the lid on the grill and lift
it only to baste or check for doneness at the end of the suggested
cooking time.

When They Say . . . .
*Bright Acidity* - What they mean is: "The tart, refreshing
quality of some wine that makes your mouth water."
*Great Balance* - What they mean is: "The four components
of wine are equal: acid balanced against sweetness; fruit balanced
against tannin."
*Lovely Body* - What they mean is: "How the wine feels
in your mouth. Light connotes thin and simple; medium means full-flavored
without being too heavy; heavy means the wine has a robust, round
and very rich feel."
*Beautiful Bouquet/Nose* - What they mean is: "A pretentious
way of saying the wine smells pleasant."
*So Well Concentrated* - What they mean is: "The wine
is full-bodied."
*Intense Extract* - What they mean is: "The color and
concentration of flavor; inky color implies super concentration
- lending the wine a thick feeling on the palate."
*Wonderful Finish* - What they mean is: "The overall
taste that remains in your mouth after you have swallowed the
wine. A full-bodied has a long finish; a light-bodied wine has

It's best not to describe a wine as sweet, as very few really

really antiquated and unhelpful."
*Wow, What Length* - What they mean is: "How long you
taste the finish."
*Pleasant Mouthfeel* - What they mean is: "The impressions
or sensations a wine makes on your palate.; especially weight
and texture."
*Solid Structure* - What they mean is: "A catch-all phrase
to sum up if a wine is in balance."
*Firm Tannin* - What they mean is: "A natural byproduct
in wine by way of grape skins, seeds and stems. In young wines
tannin is a distinct puckery bitterness; in older wines it is
discernable as full-bodied mouthfeel."

** BREWERY REVIEW FROM HAVERHILL BEEF **
Heineken . . . .
Heineken is brewed by Heineken H.V. - located in Amsterdam,
the Netherlands.
Found in 1864 by Gerard Adriaan Heineken, the Heineken company
name stands for many things. It began as and still is
a family business: three generations of Heineken, each
with their own approach to building the business. Heineken became
Europe's favorite beer brand and the most international beer
in the world.
Brewing beer is a 100% natural process. To guarantee a consistently
high quality a thorough knowledge of the brewing process is essential.
Heineken beer is brewed using solely malted barley, water, hops
and yeast.
How Heineken Is Brewed:
The malted barley is ground, mixed with water and then heated.
Step by step, the temperature increases so that the starch in
the malted barley is converted into sugars. Later on, during
fermentation, most of these sugars are converted into alcohol
and carbon dioxide. After the solids have been filtered out,
the result is 'wort', which is then brought to the boil. During
that boiling process the brewers add the hops. Hop, a plant of
which only the flower is used, gives the beer its characteristic
bitter taste and improves its keepability.
After the wort has been boiled, the next step is fermentation.
First, the wort has to be cooled down to 8 degrees Celsius. Yeast
is added to the wort and the process of converting the sugars
into alcohol and carbon dioxide can then begin. That takes place
in special fermentation tanks, where the beer remains for seven
to ten days.
The result is 'young beer' which cooled down to freezing
point is pumped into storage cellars for post-fermentation.
One of the aims of this storage is to improve the beer's taste
and clarity and give it better keeping properties. Once storage
is completed, the remaining step is filtration, after which a
superb-tasting, bright and clear beer is filled into bottles,
can or kegs.
