** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Beef Stir-Fry Szechwan-Style
Prep Time: 10 to 15 Minutes
Cook Time: 10 to 15 Minutes
Ready In: about 30 minutes
Makes 2-3 servings
Ingredients:
1 pound beef flank steak
1 tablespoon minced fresh ginger
2 cloves garlic, minced
2 teaspoons dark sesame oil
1/4 teaspoon crushed red pepper
1/4 pound pea pods, cut into thin strips
1 small red bell pepper, cut into 1-inch pieces
1 can (15 ounces) whole baby corn, drained
Marinade:
1 teaspoon cornstarch
2 tablespoons reduced-sodium soy sauce
1-1/2 teaspoons sugar
2 teaspoons dark sesame oil
Directions:
1. Cut beef steak lengthwise in half, then crosswise into 1/8-inch
thick strips.
2. Combine marinade ingredients in large bowl. Add beef; toss
to coat.
3. Heat 2 teaspoons sesame oil in large nonstick skillet over
medium-high heat until hot.
4. Add ginger, garlic and crushed red pepper; stir-fry 30
seconds.
5. Add bell pepper and corn; stir-fry 1-1/2 minutes.
6. Add pea pods; stir-fry 30 seconds. Remove from skillet.
7. Heat same skillet over medium-high heat until hot.
8. Add 1/2 of beef; stir-fry 1 to 2 minutes or until outside
surface of beef is no longer pink. Remove from skillet.
9. Repeat with remaining beef.
10. Return all beef and vegetables to skillet; heat through.

San Francisco Boneless Pork Roast
Prep Time: 10 Minutes
Cook Time: 1 Hour to 1 Hour and 30 Minutes
Ready In: 70 Minutes to 1 Hour and 40 Minutes
Makes 4 to 6 servings
Ingredients:
3 pound boneless loin roast
6 ounces orange juice
Dash of salt
Dash of ground cloves
2 tablespoons lemon juice
1 tablespoon sugar
2 tablespoons cornstarch
6 ounces canned pineapple juice
Garnish:
1 pint fresh strawberries (sliced)
Directions:
1. Preheat oven to 350°F.
2. Place roast in a shallow roasting pan. Bake at 350°F
for 60 to 90 minutes, until meat thermometer inserted registers
155-160°F.
3. Remove roast from oven, let stand 10 minutes before slicing.
4. Meanwhile, combine sugar and cornstarch in medium saucepan.
Stir in pineapple and orange juices and cook, stirring, over
medium heat, until mixture bubbles and thickens.
5. Remove from heat and stir in salt, cloves and lemon juice.
6. Serve roast with sauce, and garnish with strawberries.

Grilled BBQ Chicken
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
3 lbs boneless and skinless chicken breast
1/4 cup ketchup
3 tablespoons steak sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 teaspoons dry mustard
1/2 teaspoon onion powder
Directions:
1. Preheat grill to medium heat.
2. In small bowl, combine ketchup, steak sauce, brown sugar,
vinegar, dry mustard and onion powder until well blended.
3. Grill chicken breasts, turning occasionally and basting
with barbecue mixture, 20 minutes or until meat thermometer inserted
in center registers 170°F. Note: Do not baste during the
last 5 minutes of grilling.

** GRILLING TIP FROM HAVERHILL BEEF **
Handy Grilling Utensils . . . .
Having the correct grilling utensils will make your "grilling
experience" easier and more fun.
Here are a few to consider:
- Long-handled tongs, basting brushes, and spatulas are helpful
for tending foods while cooking.
- Heavy-duty oven mitts also can be helpful.
- Grill baskets can be used to cook tender foods such as fish,
vegetables, and even burgers.
- Grill wok are great so you can stir-fry on your grill.
- Grill pizza tray can be used if you like grilled pizzas.

Arranging Charcoals For Grilling . . . .
QUESTION: Can you tell me how to arrange my charcoals if I
am using a charcoal grill?
ANSWER: As we have discussed in past newsletters, there are
2 methods of cooking when using your grill. Depending the type
of grilling you want to do, you can arrange the charcoals as
described below:
Direct Method: Arrange coals by using long-handled tongs to
spread them evenly in a single layer. Extend them about 1 inch
beyond area of the food.
Indirect Method: Using a disposable foil drip pan that is
large enough to cover the surface below the food, place the drip
pan in the center of the firebox. Use long-handled tongs to arrange
the coals around the pan.

Tip For Grilling Fish . . . .
QUESTION: How thick should my fish filets be for grilling?
ANSWER: Ask your fish market to have the fillets cut from
1 to 1 1/2 inches thick. Anything thinner will dry out too quickly.

** WINERY REVIEW FROM HAVERHILL BEEF **
Gallo of Sonoma . . . .
As early as 1934, the Gallo family recognized Sonoma, California's
potential as a truly great winemaking region. Today, Gallo of
Sonoma demonstrates the quality of grapes from throughout Sonoma,
the county that has won more awards than any other for its outstanding
wines.
A few of the Gallo Family's - Gallo Of Sonoma wines at Haverhill
Beef:
- Sonoma County Cabernet Sauvignon: Vintage 1998
~ This is a full, rich wine with concentrated flavors of black
cherries, currant, and spice. Excellent structure from the tannins
and appealing depth from the months of oak aging. The wine was
aged predominately in American and French oak barrels for an
average of 13 months.
- Sonoma County Chardonnay: Vintage 2000
~ Using some of the finest grapes from Sonoma County, we have
produced a wine with structure and complexity. This Chardonnay
is serious and sophisticated, yet easy to drink with compelling
citrus flavors and aromas, accented by vanilla and oak. The wine
was aged in American, French and European oak barrels for an
average of 6 months.
- Sonoma County Merlot: Vintage 1999
~ The grapes used to craft this 1999 Merlot come from some of
Sonoma Countys best growing regions; predominately the
Dry Creek and Alexander Valleys. After harvest, our wine was
carefully aged in a combination of French and American oak barrels
to create a full-bodied wine that displays rich flavors of ripe
berries with a spicy, vanilla accent for an average of 12 months.
- Sonoma County Pinot Noir: Vintage 1999
~ Pinot Noir grapes from Sonoma County were carefully selected
to craft this medium-bodied red. The bright raspberry and cherry
aromas are followed by delicate fruit flavors and balanced with
soft vanilla and toasty oak characteristics to create a structured
Pinot Noir with elegance and style. The wine was aged in French
and European oak barrels for an average of 6 months.

** BREWERY REVIEW FROM HAVERHILL BEEF **
Miller Brewing Company . . . .
Making the highest quality beer has been a passion of the
Miller Brewing Company since its founder, Frederick J. Miller,
began his brewing business in 1855.
Since then, Miller Brewing has grown from a small local brewer
to the second largest brewery in the U.S., with seven major breweries
located across America.
HISTORY: The history of Miller Brewing begins in the mid-19th
century, when Frederick Edward John Miller, born November 24,
1824, was learning the craft of brewing beer in Germany. At the
age of 14, Miller was sent to France for seven years of study.
After touring Europe after his graduation, he visited his uncle,
a brewer, in Nancy, France. He decided to stay and learn the
business.
"Working through the various departments of his uncle's
brewery, and supplementing the experience thus gained with the
fruits of observation during visits to various beer-producing
cities of Germany, he leased the royal brewery of the Hohenzollerns
at Sigmaringen, Germany," according to the 1914 edition
of the Evening Wisconsin Newspaper Reference Book.
The political strife threatening Germany at the time brought
Miller and his passion for beer to the United States and, ultimately,
Milwaukee, Wisconsin, in 1855. With $8,000 in gold from Germany,
Miller opened the Plank Road Brewery, a five-year-old brewery
started by Frederick Charles Best and abandoned in 1854, and
the rest, as they say, is history. Miller died in 1888, and his
descendants ran the company for the following decades.
Through the Great Depression, Prohibition and two World Wars,
Miller Brewing has persevered and grown. With hard work and ingenuity,
Miller Brewing Company is now, as mention above, the second largest
brewer in the United States.

MILLER HIGH LIFE: The Champagne of Beers.
Miller High Life can be traced back as far as 1903, when the
original Miller High Life was put on the market. Recognized for
its crisp, smooth taste, Miller High Life won the bronze medal
in the American-style Lager category at the 1999 Great American
Beer Festival. Always was... and always will be the Champagne
of Beers.
MILLER LITE: An American Classic.
Miller Lite was the first low-calorie brew, setting the standard
for all other light beers. It's been around since 1975. It still
has only 96 calories per 12-ounce serving...... and it's still
brewed with the finest malted barley and choicest hops. Miller
Lite won gold medals in the 1996 and 1998 World Beer Cup competition
in the American-style Light Lager category.
