** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **

Southwest Beef and Rice

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: 20 Minutes
Makes 4 servings

Ingredients:
1 1/2 lb. ground beef
1 large clove garlic, crushed
1 Tbsp. chili powder
1/2 tsp. salt
1 medium red or green bell pepper, cut into 1/2 inch pieces
3 cups cooked rice (cooled)
1 cup frozen peas (defrosted)
3/4 cup salsa

Directions:
1. Cooked rice according to package and let cool.

2. In a large non-stick skillet, brown the ground beef, bell pepper and garlic over medium heat 8 to 10 minutes or until ground beef is no longer pink, breaking up into 3/4 inch crumbles.

3. Pour off drippings and add chili powder and salt.

4. Add rice to non-stick skillet and mix well. Continue cooking 2 minutes or until rice is hot, stirring occasionally.

5. Stir in peas and salsa; heat through.

Country Style BBQ Pork Spareribs

Prep Time: 10 Minutes
Cook Time: 1 to 1 1/2 Hours
Ready In: about 1 1/2 Hours
Makes 4 to 6 servings

Ingredients:
4 lbs. pork ribs
1/2 cup molasses
1/2 cup soy sauce
1/2 cup ground mustard
1/3 cup lemon juice
1 tablespoon flour
3 tablespoons Worcestershire sauce
4 drops hot pepper sauce

Directions:
1. Place pork ribs in a large shallow baking dish.

2. In medium bowl stir lemon juice into flour until smooth, stir in molasses, soy sauce, mustard, Worcestershire and hot pepper sauce.

3. Pour over pork ribs, turning to coat.

4. Preheat grill to medium heat.

5. Using the INDIRECT HEAT METHOD, grill pork ribs over heat for about 1 to 1 1/2 hours or until tender.

Grilled Texas-Style Chicken Wings

Prep Time: 15 Minutes
Marinating Time: 4 to 6 Hours
Cook Time: 30 Minutes
Ready in: 4 hours and 45 Minutes
Makes 4 servings

Ingredients:
2 lbs. chicken wings - split no tip.
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
3 tablespoons olive oil
2 cloves garlic, crushed in garlic press
1/4 teaspoon salt

Directions:
1. Preheat grill to medium heat.
NOTE: If chicken wings are not split not tip, cut tips off wings and discard; cut wings in half at joint.

2. In a small bowl combine oil, garlic, chili powder, oregano, cumin and salt until blended to make seasoning mixture.

3. Grill chicken wings turning occasionally for 15 minutes.

4. After 15 minutes, baste chicken wings with seasoning mixture for an additional 10 minutes or until cooked through. Note: Do not baste during the last 5 minutes of grilling.

On the grill, in the oven, or part of your favorite recipe... you'll find Chairman's Reserve Certified Premium Beef turns your recipes into mouth-watering, dining delights your family will truly enjoy!

STEAKS FOR BROILING:

1: Set oven regulator for broiling; preheat for 10 minutes. NOTE: Please consult your owner’s manual for specific broiling guidelines.

2: Place beef on rack of broiler pan. Season beef straight from the refrigerator with herbs or spices, as desired. Position broiler pan so that surface of beef is within the distance from heat specified in timetable below.

3: Broil according to timetable, turning once. After cooking, season beef with salt, if desired.

1 inch 3 to 4 inches 13 to 17 minutes

T Bone/Porterhouse 3/4 inch 2 to 3 inches 10 to 13 minutes
1 inch 3 to 4 inches 15 to 20 minutes

Top Loin (Strip), 3/4 inch 2 to 3 inches 9 to 11 minutes
boneless 1 inch 3 to 4 inches 13 to 17 minutes

Top Sirloin, boneless 3/4 inch 2 to 3 inches 9 to 12 minutes
boneless 1 inch 3 to 4 inches 16 to 21 minutes

Arbor Crest's 2000 Johannisberg Riesling is made from the noble White Riesling grape grown in the Columbia Valley. With hand-picked and hand-sorted grapes, this wine shows bright pineapple, lemon and honey characters that unfold on the
palate as peach and almond. This wine is finished slightly sweet to balance the bright acidity and to create a long and supple finish.

- COLUMBIA VALLEY MERLOT 1999:
The 1999 Columbia Valley Merlot is an excellent example of a full-bodied Washington Merlot. Ripe and concentrated, this wine strings layers of intense raspberry, complex currant and blueberry notes, framed by spicy, vanilla-scented oak. Barrel-aged in French oak for eighteen months, this elegant wine finishes boldly with intense cherry, blackberry and plum
