** 3 "GRILLING" RECIPES FOR YOU FROM HAVERHILL BEEF
**
Grilled Blade Steak With Black Cherry Sauce
Prep Time: 20 Minutes
Marinating Time: 30 Minutes to 2 Hours
Cook Time: 10 Minutes
Ready in: 1 Hour to 2 Hours and 30 Minutes
Makes 4
Ingredients:
4 blade steaks
1/4 cup balsamic vinegar
2 strips lemon zest
2 sticks cinnamon
1 cup Cabernet Sauvignon wine
1/2 cup sugar
1/2 tsp. mustard seed
1 cup fresh black sweet cherries
Directions:
1. Combine vinegar, wine, sugar, mustard seed, lemon zest and
cinnamon sticks together in a saucepan. Simmer over medium heat
for 10 minutes.
2. Pour 3/4 cup of the sauce mixture into a resealable bag.
Add steaks to bag, seal well. Turn to coat steaks and marinade
in the refrigerator for 30 minutes to 2 hours.
3. Strain remaining wine mixture, pour back into sauce pan
and add cherries. Place mixture in refrigerator while steaks
marinade.
4. Preheat grill to medium heat.
5. Place steaks on grill over medium high coals. Grill for
4 minutes per side for medium-rare, turning once.
6. While steaks are cooking bring wine sauce to a simmer for
5 minutes to reheat.
7. Serve steaks with sauce.

Grilled Country Style Molasses Pork Spareribs
Prep Time: 10 Minutes
Cook Time: 1 Hour to 1 Hour and 30 Minutes
Ready in: 1 Hour and 10 Minutes to 1 Hour and 40 Minutes
Makes 4 to 6
Ingredients:
4 pounds country style pork ribs
1/3 cup lemon juice
1 tablespoon flour
1/2 cup molasses
1/2 cup soy sauce
1/2 cup ground mustard
3 tablespoons Worcestershire sauce
4 drops hot pepper sauce
Directions:
1. Place pork spareribs in a large shallow baking dish. In medium
bowl stir lemon juice into flour until smooth, stir in molasses,
soy sauce, mustard, Worcestershire and hot pepper sauce; pour
over ribs, turning to coat.
2. Preheat grill to medium heat.
3. Grill pork spareribs over INDIRECT HEAT for about 1 to
1 1/2 hours or until tender.

Grilled Honey Chicken Breasts
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
2 1/2 lbs split chicken breasts
1/3 cup chili sauce
3 tablespoons honey
2 tablespoons lemon juice
1 tablespoon olive or vegetable oil
1/2 teaspoon dried thyme
Directions:
1. Preheat grill to medium heat.
2. In small bowl, whisk together chili sauce, honey, lemon
juice, oil and thyme until blended.
3. Grill chicken breasts, turning occasionally and basting
with chili mixture, 20 minutes or until meat thermometer inserted
in center registers 170°F. Note: Do not baste during the
last 5 minutes of grilling.

On the grill, in the oven, or part of your favorite recipe...

SKILLET STEAKS:
1: Heat nonstick skillet over medium heat for steaks 3/4 inch
or thicker or to medium-high heat for steaks 1/2" or thinner.
2: Place steaks in preheated skillet (do not overcrowd). Do
not add water or cover.
3: Cook steaks according to timetable below, turning once.
BEEF STEAK THICKNESS TOTAL COOKING TIME
Eye Round 1/2 inch 2 to 4 minutes
Round Tip 1/8 to 1/4 inch 1 to 2 minutes
Tenderloin 3/4 inch 7 to 9 minutes
1 inch 10 to 13 minutes
Rib Eye (Delmonico) 3/4 inch 8 to 10 minutes
1 inch 12 to 15 minutes
Top Loin (Strip), 3/4 inch 10 to 12 minutes
boneless 1 inch 12 to 15 minutes
Top Sirloin, boneless 3/4 inch 10 to 13 minutes
boneless 1 inch 15 to 20 minutes
T Bone/Porterhouse 3/4 inch 11 to 13 minutes
1 inch 14 to 17 minutes
