** 3 "BEEF ROAST" RECIPES FOR YOU FROM HAVERHILL BEEF **

Boneless Beef Rib Roast Served With Oven Browned Vegetables

Prep Time: 10 Minutes
Cook Time: about 2 Hours
Ready in: about 2 1/2 Hours including standing time
Makes 4 to 6 servings

Ingredients:
1 Four pound boneless beef rib roast
2 Tbsp. olive oil
4 small onions, halved
2 large sweet potatoes, cut into eighths
3 medium baking potatoes, quartered
4 cloves garlic, crushed
1 tsp. dry mustard
2 tsp. dried rosemary leaves, crushed
1 tsp. salt
1 tsp. cracked black pepper

Directions:
1. Preheat oven to 350°F.

2. Combine seasonings. Press half of the seasonings evenly into surface of roast. Add oil to remaining seasoning; reserve.

3. Place roast on rack in shallow roasting pan. Roast at 350°F approximately 1 and 3/4 to 2 hours.

4. Meanwhile, combine vegetables and reserved seasoning; toss to coat.

5. Approximately 1 and 1/4 hours before serving, arrange vegetables around roast and continue to cook.

6. When thermometer reads 135°F for medium-rare or 150°F for medium, remove roast from oven. Tent loosely. Continue to cook vegetables 15 minutes longer or until tender, stirring once.

7. Carve roast and serve surrounded with vegetables.

Roasted Boneless Club Sirloin

Prep Time: 5 Minutes
Cook Time: 50 to 60 Minutes
Ready in: 1 Hour and 10 Minutes including standing time
Makes 4 servings

Ingredients:
1 (3 lbs) boneless club sirloin steak cut 2 inches thick
1 and 1/2 tsp. dried or fresh rosemary leaves, crushed

Directions:
1. Preheat oven to 350°F.

2. Press rosemary into both sides of boneless club sirloin steak. Roast on rack in a shallow roasting pan in oven 50 to 60 minutes or 16 to 20 minutes per pound.

3. Remove roast when a meat thermometer inserted in center reaches 135°F for medium-rare. Let roast stand 10 minutes before carving into thin slices.

Serving suggestions: Serve with brown rice or roasted potatoes, and fresh green beans.

Parmesan Cheese and Herbed Roasted Beef Tenderloin

Prep Time: 5 Minutes
Cook Time: about 1 Hour
Ready in: about 1 Hour and 20 Minutes including standing time
Makes 6 to 8 servings

Ingredients:
4 lbs. beef tenderloin roast
1 tsp. dried Italian seasoning
1/2 tsp. cracked black pepper
2 Tbsp. grated parmesan cheese

Directions:
1. Preheat oven to 425ºF.

2. Combine Italian seasoning and black pepper. Press evenly onto all sides of roast.

3. Place roast on a rack in a shallow roasting pan. Insert meat thermometer so bulb is centered in thickest part. Do not add water or cover.

4. Roast approximately 45-50 minutes for medium rare or medium doneness. Remove roast when meat thermometer registers 140ºF for medium rare, 150ºF for medium.

5. Sprinkle with the parmesan cheese. Let stand 15 minutes.

6. Carve roast into slices, season with salt as desired.

2. Roast according to chart below. Remove when meat thermometer registers 135 degrees F for medium rare, 150 degrees F for medium. Let the roast stand 15 minutes. (Temperature will continue to rise 10 degrees F to reach desired doneness and roast will be easier to carve.)

BEEF ROAST CUT WEIGHT TOTAL COOKING TIME
Tenderloin Roast 2 to 3 lbs. Medium rare: 35 to 40 min.
(center cut) Medium: 45 to 50 min.

4 to 5 lbs, Medium rare: 50 to 60 min.
(whole) Medium: 60 to 70 min.

STANDING RIB ROAST:

1. Heat oven to 350 degrees F. Place roast, fat side up, in shallow roasting pan, Insert ovenproof meat thermometer so tip is centered in thickest part, not resting in fat or touching bone. Do not add water or cover.

2. Roast according to chart below. Remove when meat thermometer registers 135 degrees F for medium rare, 150 degrees F for medium. Let the roast stand 15 minutes. (Temperature will continue to rise 10 degrees F to reach desired doneness and roast will be easier to carve.)

BEEF ROAST CUT WEIGHT TOTAL COOKING TIME
Standing Rib Roast, 4 to 6 lbs. Medium rare: 1-3/4 to 2-1/4 hrs.
chine bone removed (2 ribs) Medium: 2-1/4 to 2-3/4 hrs.

6 to 8 lbs. Medium rare: 2-1/4 to 2-1/2 hrs.
(2 to 4 ribs) Medium: 2-3/4 to 3 hrs.

8 to 10 lbs. Medium. rare: 2-1/2 to 3 hrs.
(4 to 5 ribs) Medium: 3 to 3-1/2 hrs,

RIB EYE ROAST:

Rib Eye Roast, 3 to 4 lbs. Medium rare: 1-3/4 to 2-1/4 hrs.
large end Medium: 2 to 2-1/2 hrs.

4 to 6 lbs. Medium rare: 2 to 2-1/2 hrs.
Medium: 2-112 to 3 hrs.

6 to 8 lbs, Medium rare: 2-1/4 to 2-1/2 hrs.
Medium 2-1/2 to 3 hrs.
