** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Eye Round Beef Stew
Prep Time: 20 Minutes
Cook Time: 2 Hours
Ready in: 2 Hours and 20 Minutes
Makes 6 servings
Ingredients:
2 lb. beef eye round
1 Tbsp. olive oil
1 tsp. dried thyme leaves
1/2 cup Burgundy wine
3 large cloves garlic, crushed
1 and 1/2 cups baby carrots
1 cup frozen whole pearl onions
1/2 tsp. salt
1/2 tsp. pepper
1 can (13-3/4 ounces) beef broth
2 Tbsp. cornstarch, dissolved in 2 Tbsp. water
1 package (8 ounces) frozen peas
Directions:
1. Cut eye round roast into 1 inch pieces.
2. In Dutch oven, heat oil over medium-high heat until hot.
Add beef (half at a time) and brown evenly, stirring occasionally.
Pour off drippings. Season with thyme, salt and pepper. Stir
in broth, wine and garlic. Bring to a boil reduce heat to low.
Cover tightly and simmer 1 and 1/2 hours.
3. Add carrots and onions. Cover and continue cooking 35 to
40 minutes or until beef and vegetables are tender.
4. Bring beef stew to a boil over medium-high heat. Add cornstarch
mixture cook and stir 1 minute. Stir in sugar snap peas.
5. Reduce heat to medium and cook 3 to 4 minutes or until
peas are heated through.

Grilled Pork Loin Roast With Orange Glaze
Prep Time: 15 Minutes
Cook Time: about 1 Hour and 45 Minutes
Ready in: 2 Hours and 15 Minutes
Makes 6 to 8 servings
Ingredients:
6 pound bone in pork loin roast
1 tablespoon dry mustard
salt
fresh ground pepper
Orange Glaze:
1/2 of a 6-oz. can frozen orange juice concentrate, thawed
1/2 cup honey
2 tablespoons steak sauce
1 orange, sliced (optional)
Directions:
1. Rub dry mustard into pork loin roast and sprinkle with salt
and ground pepper.
2. Make a drip pan of aluminum foil about 1 and 1/2 inches
deep and extending about 3 inches on each side of roast; place
under roast.
3. Preheat grill to medium heat.
4. Place on grill about 6 inches above heat. Close hood of
grill. Cook for 1 to 1 1/2 hours or until meat thermometer registers
150 degrees F.
To Make Orange Glaze:
5. Combine orange juice concentrate, honey and steak sauce
in a small saucepan. Heat until bubbly, and brush on roast.
6 Grill an additional 20 minutes or until meat thermometer
registers 155 degrees F., basting often with sauce.
7. Let roast stand for 10 to 15 minutes before carving to
allow juices to set.
8. Garnish with orange slices, if desired.

Grilled Asian-Style Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
1 and 1/2 lbs. boneless chicken breasts
1/4 cup sherry
3 tablespoons firmly packed brown sugar
3 tablespoons sesame oil
2 tablespoons soy sauce
2 cloves garlic, finely chopped
1/2 teaspoon ground ginger
Directions:
1. In small saucepan, over medium-high heat, bring sherry, brown
sugar, oil, soy sauce, garlic and ginger to a boil, stirring
occasionally. Remove from heat.
2. Preheat grill to medium heat.
3. Grill or broil chicken, turning occasionally and basting
with sherry sauce, 15 minutes or until meat thermometer inserted
in center registers 170°F. Note: Do not baste during last
5 minutes of grilling.

** GRILLING TIP FROM DUCANE GAS GRILLS **
Let's Talk: "Preventing Meat From Sticking To The Grill"
To prevent food from sticking to the grid, preheat the cooking
surface with the hood down for 15 minutes. Place the meat product
on the grid and allow it to remain there for at least half of
the suggested grilling time.
It is unnecessary to keep flipping meat products allow them to
sear and seal in their juices, then halfway through the cooking
period, with a spatula, flip the meat product onto its other
side. When grilling chicken, always place the meat side on the
grill first.
A light coating of oil applied to any of the meat products prior
to grilling will also help. The use of a commercial spray cooking
product is also helpful.
CAUTION: This spray should ONLY be used prior to lighting
your grill but never during the cooking period.
NOTE: Use of spray cooking product can leave a black stain
on areas of your grill grid. This is should not harmful and does
not affect cooking.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

On sweeping alluvial plains formed by the great Murray River

kangaroos perfectly co-exist in this wondrous habitat. This is
the essence of Yellow Tail Wines landscape in South Eastern Australia
embodied in their perfectly well-balanced fine wines.

CHARDONNAY:
Recently receiving GOLD at the Royal Melbourne Wine Show, this
Chardonnay shows ripe characters of peach and rockmelon, which
are striking on the nose. This leads into a fresh and floral
front palate where there is an up-front sweetness, adding to
the wines' lengthy oak richness.
SHIRAZ:
A rich color and deep hue introduces your nose to a ripe and
rich flavor. A cracked pepper and spice nose is blended with
vanilla and fruit ripeness. The vanilla softness on the nose
takes you into a ripe palate crammed with weight and soft, sweet
oak length.
MERLOT:
A rich color and deep hue introduces your nose to a ripe and
rich flavor. Mint and leaf at the front of the nose is followed
by soft plums and ripe almost Christmas cake fruit. The vanilla
softness on the nose takes you into a ripe and full palate weight
with a soft, sweet oak palate length on the finish.
