** 3 RECIPES FOR YOU **
Savory Back Rump Roast
Prep Time: 5 Minutes
Cook Time: 1 Hour and 45 Minutes Hours to 2 Hour and 15 Minutes
Ready in: 1 Hour and 50 Minutes Hours to 2 Hour and 20 Minutes
Makes 8 to 10 servings
Ingredients:
4 to 5 lb back rump roast
1 tbsp minced garlic, about 3 cloves
1 tbsp coarsely ground pepper
1 and 1/2 cups water
Directions:
1. Place back rump roast fat side up on rack in roasting pan
without lid.
2. Rub with garlic cloves and sprinkle with pepper.
3. Insert meat thermometer into center of roast.
4. Add 1 and 1/2 cups water to pan and place roast in preheated
500°F (260°C) oven.
5. After 30 minutes, reduce oven temperature to 275°F
(140°C).
6. Cook an additional 1-1/4 to 1-3/4 hours until medium done
(i.e. until internal temperature = 160°F/70°C).

BBQ Style Lamb Shanks
Prep Time: 5 Minutes
Cook Time: 2 Hours and 15 Minutes
Ready in: 2 Hours and 20 Minutes
Makes 4 to 6 servings
Ingredients:
4 to 6 lamb shanks
2 tbsp. olive oil
2 med. onions, sliced
1 cup ketchup
1 cup water
2 tsp. salt
2 tsp. ground pepper
2 tsp. Worcestershire sauce
1/2 cup wine vinegar
1/4 cup brown sugar
2 tsp. dry mustard
Directions:
1. Brown lamb shanks in olive oil.
2. Combine remaining ingredients. Pour over shanks.
3. Cover and simmer 2 hours. Baste several times while cooking.
4. Remove cover, cook 15 minutes longer. Thicken sauce, if
desired.

Grilled Tarragon Chicken Breasts
Prep Time: 10 Minutes
Marinating Time: 1 Hour
Cook Time: about 30 to 40 Minutes
Ready in: 40 to 50 Minutes (excluding marinating time)
Makes 6 servings
Ingredients:
4 pounds of whole chicken breasts
1 cup fresh lime juice
1/2 cup canola oil
1 cup chopped onions
1/2 cup chopped fresh tarragon or 4 tablespoons dried tarragon
leaves
Salt and ground pepper
Directions:
1. Place chicken breasts in large, shallow bowl.
2. In small bowl, combine lime juice and remaining ingredients;
set aside 1/2 cup lime mixture.
3. Pour remaining mixture over chicken; loosen skin and spoon
some marinade under skin. Cover and refrigerate 1 hour or longer.
4. Preheat grill to high heat.
5. Drain chicken and discard marinade.
6. Grill chicken, uncovered, about 5 to 6 inches over heat
for 30 to 40 minutes or until cooked through, turning and basting
frequently with reserved lime mixture.

** BEEF ROASTING TIPS **
Here are a few beef roasting tips:
- Be sure to check your roast with a meat thermometer.
~~ Insert the meat thermometer into the center of the thickest
part, away from bone, fat and gristle.
- If your roasting pan is too deep, your roast may not brown
properly.
- Attempting to carve your roast without allowing it to rest
will cause significant loss of juices. Prior to carving, wait
10 to 15 minutes, keep covered.
~~ Always use a sharp knife. You can use a butcher's steel to
ensure sharpness.
~~ Place roast on a cutting board to prevent slipping.
~~ For best results, carve meat into slices by cutting across
the grain.
- A pan gravy can be made with the drippings after removing
your roast from the pan
Pan Gravy For Beef Oven Roasts:
THICKENER: flour.
1. Remove roast from oven. Put roast on a platter and take
rack out of roasting pan. Place roasting pan on stovetop burner,
over medium heat.
2. Add 1 cup water to pan drippings, scraping any brown bits
from bottom of pan.
3. In a jar with a tight fitting lid, mix 2 tablespoons flour
with 1 cup of water. Shake until smooth.
4. Pour slowly into the bubbling drippings until desired thickness
is reached. You may not need all the flour and water mixture.
5. If gravy becomes too thick, add more water; if gravy is too
thin add more flour/water mixture.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

** HAVERHILL BEEF WINE CELLAR **
La Chasse du Pape - Cotes du Rhone: France
La Chasse du Pape "Prestige" red is elaborated with
a blend of the major grape varieties of the Southern Cotes du
Rhone appellation: 50% Grenache, 30% Syrah, 20% Cinsault and
Mourvedre. The grape varieties are vinified separately with fermentation
temperatures kept quite low, around 28 to 30C, to retain strong
fruit character. This is a full-bodied, ripe red wine that can
be enjoyed on its own and marries well with steak and grilled
red meat, roast chicken and beef stew thanks to the strong Syrah
content. It is best enjoyed when served at 18/20C.
La Chasse du Pape "Prestige" white is made up of
the classic white Rhone varieties: 60% Grenache blanc, 20% Clairette
and 20% Bourboulenc. Fermentation temperatures are maintained
at a maximum of 18/20C and the wine is bottled quite early, in
April following the vintage, to retain as much aromatic freshness
as possible. This wine makes for a delicious aperitif and can
be enjoyed with all types of seafood, in cream sauces or simply
grilled.
