** 3 VEAL RECIPES FOR YOU **
Wiener Schnitzel
Prep Time: 15 Minutes
Cook Time: about 6 to 8 Minutes
Ready In: 25 Minutes
Makes 3 to 4 servings
Ingredients:
1 pound veal cutlets, cut 1/8 to 1/4 inch thick
1 cup dry bread crumbs
2 egg, well beaten
2 tablespoon butter
2 tablespoon olive oil
Fresh lemon juice
Salt and pepper
Coating:
4 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Pound veal cutlets to 1/8-inch thickness, if necessary. In
shallow dish, combine coating ingredients. Place bread crumbs
and egg in two separate shallow dishes. Lightly coat both sides
of cutlets with coating mixture. Dip each cutlet into egg, allowing
to drain slightly, then into bread crumbs to coat both sides.
2. In large nonstick skillet, heat 1/2 of butter and oil over
medium-high heat until hot. Add 1/2 of cutlets; cook 3 to 4 minutes
for medium doneness, turning once. Remove cutlets; keep warm.
Repeat with remaining butter, oil and cutlets.
3. Just before serving, sprinkle cutlets with lemon juice
and season with salt and pepper, as desired.

Veal Piccata
Prep Time: 15 Minutes
Cook Time: 6 to 8 Minutes
Ready In: 25 Minutes
Makes 3 to 4 servings
Ingredients:
1 pound veal cutlets, cut 1/8 to 1/4 inch thick
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon ground white pepper
1 tablespoon olive oil Lemon-Caper
Lemon-Caper Sauce:
2/3 cup dry white wine
2 tablespoons fresh lemon juice
2 teaspoons drained capers
1 teaspoon butter
Directions:
1. Pound veal cutlets to 1/8 inch thickness, if necessary. Combine
flour, salt, paprika and white pepper. Lightly coat both sides
of veal cutlets with flour mixture.
2. In large nonstick skillet, heat 1/2 of oil over medium
heat until hot. Add 1/2 of veal cutlets; cook 3 to 4 minutes
or until cooked through, turning once. Remove veal cutlets; keep
warm. Repeat with remaining oil and veal cutlets.
3. Add wine and lemon juice to skillet; cook and stir until
browned bits attached to skillet are dissolved and liquid thickens
slightly. Remove from heat; stir in capers and butter.
4. To Serve: Spoon sauce over veal cutlets.

Grilled Veal Cutlets
Prep Time: 15 Minutes
Cook Time: 6 to 8 Minutes
Ready In: 25 Minutes
Makes 3 to 4 servings
Ingredients:
1 pound veal, cut 1/8 to 1/4 inch thick
1/4 cup prepared balsamic vinaigrette dressing
2 tablespoons chopped fresh chives
1 medium green bell pepper, cut into 1-inch pieces
Salt and pepper
Directions:
1. Soak eight 6-inch bamboo skewers in water 10 minutes; drain.
2. Meanwhile pound veal cutlets to 1/8-inch thickness, if
necessary.
3. In small bowl, combine dressing and chives. Brush one side
of each cutlet with dressing mixture. Starting at short end,
roll up each cutlet; cut crosswise into 1-1/4-inch wide pieces.
4. Alternately thread 2 to 3 veal and bell pepper pieces onto
skewers. Do not crowd pieces.
5. Preheat grill to medium heat.
6. Place veal skewers on grill grid and grill, uncovered,
6 to 8 minutes or until veal is cooked through, turning once.
7. Season with salt and pepper, as desired.

** COOKING TIPS AND SUGGESTIONS **
Let's Talk Veal . . . .
Naturally lean with little marbling, veal contains significantly
less fat than other meats. With veal, the key is to match cuts
to the appropriate cooking method. Tender cuts are maximized
by dry heat cooking (roasting, broiling, pan-broiling, grilling,
stir-frying, sautéing). Less tender cuts need moist heat
cooking (braising or stewing) for optimal flavor. Some less tender
cuts can be cooked with dry heat if they are marinated first
in a tenderizing marinade.
THE CUTS:
- Tender cuts: loin roasts, rib roasts, rump roasts, loin chops,
rib chops, cutlets and ground veal.
- Less tender cuts: veal for stew, shanks, shoulder roasts,
breasts, riblets and round steaks. Generally more economical
than "tender" cuts, their flavor is excellent when
prepared using moist heat.
The cuts most readily available from your grocer or distributor
are rib chops, loin chops, cutlets, veal for stew, rib roasts,
shoulder roasts and ground veal.
Whatever cut you choose, veal is a cost-effective way to make
meals special. When pricing veal, look at cost per serving rather
than cost per pound.
TIPS:
- Veal absorbs seasonings very well, so you'll want to try various
herbs, spices, oils, wines and vinegars. For less tender cuts,
marinades not only enhance flavor, they also tenderize the meat
prior to cooking.
- Season veal with salt after cooking or browning. Salt added
before cooking draws out moisture and inhibits browning.
- Trim fat after cooking. Leave a thin layer of fat on veal
roasts, steaks and chops during cooking to preserve juiciness.
- Use a light touch when mixing and shaping veal burgers,
meatloaf and meatballs. Over mixing ground veal results in a
firm, compact texture after cooking.
