** 3 RECIPES FOR YOU **
Peppered Beef Back Rump Roast
Prep Time: 5 Minutes
Cook Time: 2 Hours and 30 Minutes to 3 Hours and 30 Minutes
Ready In: about 3 hours and 30 Minutes
Makes 8 to 12 servings
Ingredients:
1 beef back rump roast 4 to 6 pounds
2 tsp. cracked black pepper
2 tsp. dry mustard
1 large clove garlic, crushed
1/2 tsp. ground allspice
1/2 tsp. ground red pepper
1 tsp. olive oil
Directions:
1. Preheat oven to 325°F.
2. Combine seasonings ingredients and rub evenly into surface
of back rump roast.
3. Place back rump roast, fat side up, on rack in shallow
roasting pan. Do not add water or cover roast.
4. Roast approximately 2-1/2 to 3 hours. Use an instant read
thermometer and remove roast when internal temperature reaches
140°F for medium-rare or 155°F for medium.
5. Remove back rump roast from oven and tent loosely with
aluminum foil.
6. Let stand 15 minutes prior to carving into slices.

Autumn Pork Tenderloin
Prep Time: 10 Minutes
Cook Time: 20 to 30 Minutes
Ready In: about 40 Minutes
Makes 4 servings
Ingredients:
1 whole pork tenderloin
1/4 cup apple jelly
2 tablespoons lemon juice
1/2 teaspoon pumpkin pie spice
2 tart red apples, unpeeled, cored, thinly sliced
Directions:
1. Heat oven to 400 degrees F.
2. In small bowl, combine apple jelly, lemon juice and pumpkin
spice; blend well.
3. Place pork tenderloin in shallow roasting pan, brush with
half of the apple jelly mixture.
4. Roast for 20 to 30 minutes or until meat thermometer registers
155 degrees F.
5. Let stand 5 to 10 minutes.
6. Place apple slices on broiler pan; brush with remaining
apple jelly mixture.
7. Broil apple slices 5 to 6 inches from heat for about 5
minutes or until apples slices are tender.
8. Slice tenderloin; serve with apple slices.

Easy Chicken Roaster
Prep Time: 15 Minutes
Cook Time: 2 Hours and 45 Minutes
Ready In: about 3 Hours
Makes 3 to 4 servings
Ingredients:
1 whole chicken roaster 5 to 7 pounds
2 tablespoons olive oil
1/4 cup mild chili powder
2 tablespoons garlic salt
2 tablespoons black pepper
1 teaspoon cayenne pepper
Directions:
1. Preheat oven to 350 degrees F.
2. Remove giblets from chicken. Place chicken roaster breast
up in roasting pan. Rub skin with oil. Cover with aluminum foil.
3. Roast for 45 minutes. Remove foil and roast 30 minutes.
4. Meanwhile, combine remaining ingredients in a small bowl,
set aside.
5. Rub skin with spice mixture. Continue to roast, basting
occasionally, for 1 hour and 30 minutes or meat thermometer inserted
in thickest part of thigh registers 180 degrees F.
6. Remove chicken roaster from pan; cover and let stand for
10-15 minutes.

each type of food thermometer available. There are several different
types of food thermometers with each having their own advantages
and disadvantages. Depending on the type of cooking you will
be using it with; you will want to choose your food thermometer
accordingly.
DIAL OVEN-SAFE (Bimetal)*
- Reads in 1-2 minutes
- Place 2-2 1/2" deep in thickest part of food
~~ Can be used in roasts, casseroles, and soups
~~ Not appropriate for thin foods
~~ Can remain in food while it's cooking
~~ Heat conduction of metal stem can cause false high reading
~~ Some models can be calibrated; check manufacturer's instructions
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
DIGITAL INSTANT-READ (Thermistor)*
- Reads in 10 seconds
- Place at least 1/2" deep
~~ Gives fast reading
~~ Can measure temperature in thin and thick foods

** WINE REVIEW FROM HAVERHILL BEEF **
Beringer's 1999 Napa Valley Chardonnay . . . .
Flavor: Butterscotch, honey, nutmeg, citrus and toasted coconut
aromas highlight mouth-coating tropical fruit, creamy vanilla
and balancing citrus flavors.
Beringer's 1999 Napa Valley Chardonnay Vintage Release: March
2001
Making The Wine:
The fruit for Beringer's 1999 Napa Valley Chardonnay came from
vineyards in the southern part of Napa Valley, California, from
Yountville south into Los Carneros. The cool climate of this
broad region allows the fruit to develop layers of aromas and
flavors while retaining a balancing acidity. Beringer's vineyards
closer to Yountville consistently produce fruit with bigger personality,
with flavors that are rich and opulent with a honeyed butter/citrus
quality. Fruit from the vineyards further south have a more subtle,
leaner character with tropical fruit and apple/pear aromas and
flavors.
Beringer's Yountville Vineyard:
This vineyard in the Yountville appellation in the southern area
of the Napa Valley features clay loam soils with limited depth
and low fertility. It produces great Chardonnays with full, rich
flavors and excellent structure, as well as a very small amount
of Riesling. Winemaster Ed Sbragia frequently selects Chardonnay
from Yountville Vineyard for his Private Reserve Chardonnay blend.
