** 3 RECIPES FOR YOU **
Pork Cordon Bleu
Prep Time: 15 Minutes
Cook Time: 10 to 12 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
4 boneless center cut pork chops
2 ounces proscuitto
2 ounces Swiss cheese, cut into 2x1/4" rectangles
1/2 cup fine dry bread crumbs
2 teaspoons butter
1 teaspoon dried thyme leaves
1/2 cup flour
1 egg, beaten with 1 teaspoon water
Directions:
1. Slice each boneless center cut chop lengthwise almost in half
to butterfly.
2. Between two pieces of plastic wrap, pound each butterflied
pork chop to 1/8 inch thickness.
3. On half of each pork chop, place 1/2 ounce proscuitto and
1 piece of cheese. Sprinkle with 1/4 teaspoon thyme. Roll pork
chops to enclose filling. Coat with flour, dip in egg wash and
roll in bread crumbs.
4. In large frying pan, melt butter.
5. Add pork chops to frying pan and cook 10 to 12 minutes,
turning frequently to brown all sides.
6. Garnish with lemon wedges and parsley sprigs.

Chicken Creole and Rice
Prep Time: 4 Minutes
Cook Time: 15 Minutes
Ready In: 20 Minutes
Makes 4 servings
Ingredients:
1 1/2 lbs. boneless skinless chicken breasts
2 1/2 tablespoons Creole seasoning
3 tablespoons olive oil
1 can (15 1/2 ounces) pinto or red beans
1 can (8 3/4 ounces) whole kernel corn, drained
2 cups long grain white rice
Directions:
1. Heat oil in large nonstick skillet.
2. Rub Creole seasoning all over chicken breasts.
3. Place chicken breasts in skillet and cook for about 15
minutes, flipping occasionally, until a thermometer inserted
in center registers 170°F.
4. Meanwhile, prepare rice according to package directions.
5. Remove cooked breasts from skillet; set aside and cover
to keep warm.
6. Place cooked rice, beans and corn into the hot skillet.
7. Stir well, and heat until mixture is hot.

Bake Stuffed Chicken Breast
Prep Time: 10 Minutes
Cook Time: 35 to 45 Minutes
Ready In: about 50 Minutes
Makes 4 servings
Ingredients:
3 lbs. split chicken breasts
salt to taste
ground pepper to taste
2 tablespoons dried bread crumbs
2 large garlic cloves, minced
1/2 cup minced fresh basil leaves
2 tablespoons olive oil
Additional fresh basil leaves (optional)
Directions:
1. Preheat oven to 375°F.
2. Season chicken breasts with salt and pepper.
3. Stuffing Mixture: In medium bowl, combine basil and remaining
ingredients; mix well.
4. Gently separate skin from chicken breast along one side to
form a pocket.
5. Set aside 2 teaspoons stuffing mixture; gently place remaining
stuffing mixture under skin of each chicken breast piece.
6. Rub reserved stuffing mixture over outside of each chicken
breast piece.
7. Place chicken breasts in a 9 inch square baking dish and
bake 35 to 40 minutes until cooked through and golden.
8. To serve, garnish with fresh basil leaves.

Reserving Your Thanksgiving Turkeys . . . .
It's time to start thinking about reserving your Thanksgiving
Day turkey. This is especially important to do if you plan on
using a fresh turkey instead of a frozen one. This way, you can
pick up the turkey the day before Thanksgiving and feel confident
that the right size bird will actually be there.

What Size Turkey Should I Buy?
Rule of thumbs says to plan on about 1 1/4 pounds of turkey
per person. You can also buy a bigger one, or two smaller ones,
if you want to have leftovers for everybody's traditional Thanksgiving
treat: turkey-and-cranberry-sauce sandwiches!
Fresh or Frozen Turkey?
One Thanksgiving Day decision you may want to make now is whether
you will be buying a fresh or frozen turkey.
A fresh bird is more expensive, but will save you defrosting
time and precious refrigerator space. Haverhill Beef suggests
you order your fresh turkey ahead of time so that you will be
able to pick it up the day before you wish to roast it.
A frozen turkey needs to be defrosted. The preferred method
is to defrost it in the refrigerator. Rule of thumb here is to
allow one day per 5 pounds in your refrigerator. Example: A 15
pound frozen turkey will require three days to defrost thoroughly.
