The Salvation Army Christmas Cookie Bakeoff is approaching us soon! Please come to this holiday event and join the fun at this year's Salvation Army Christmas Castle!

The Salvation Army Christmas Castle is looking for participants and tasters for their cookie bakeoff. Cooks of all ages may deliver a plate of cookies that night for tasting by Deputy Police Chief Robert Gariepy, State Representative Brian Dempsey and Haverhill Beef Owner Joe Terrazzano. The public is invited to finish up the cookies.

The top three winners will be recognized in two age categories, children through middle school; and high school and adult. Prizes will be provided by The Haverhill Gazette.

All roasts will be cut to your order. Weights shown are the largest average available for that item. The average portion on boneless meat is half pound per person. Roast Beef should be cooked at 350 degrees. 20 minutes per pound for rare 25 for medium rare. Internal temperature should be 130 to 145 degrees. You should always use a meat thermometer.

Bone In Center Cut Pork Roast

All roasts will be cut to your order. The average portion on boneless meat is half pound per person. Farm Fresh Turkeys
Haverhill Beef Co. has found the best farm fresh turkey available. These turkeys are plump and juicy and will certainly add to any holiday dinner.
Available in sizes from 10 to 32 pounds.
Please order early.

Ducks
Available in sizes from 5 to 9 pounds.

Goose
Available in sizes from 8 to 12 pounds.

The average portion is 1 1/2 pounds per person (a 20 pound turkey will feed 13 people). Cooking times for un-stuffed poultry is 18 minutes per pound; stuffed is 20 to 25 minutes per pound. You should always use a meat thermometer to check the internal temperature. All poultry should be cooked to 180 degrees.

Keep Children Safe From Foodborne Illness During The Holidays* . . . .

ATLANTA, Dec. 5, 2002—Parties with mouth-watering food buffets are sure to be in abundance during this holiday season. The U.S. Department of Agriculture is reminding consumers to be "food smart" for themselves and their children when enjoying these holiday goodies.

In an event today at Crème de la Crème childcare center in Buckhead, USDA Under Secretary for Food Safety Dr. Elsa Murano and Miss America 1995 Heather Whitestone McCallum encouraged parents to learn and use good food safety practices during the holidays and all through the year to protect the health of their children.

"Preventing foodborne illness during holiday parties is critical," said Dr. Elsa Murano. "Scientific data from the Centers for Disease Control and Prevention show that children under the age of 10 have higher incidences of Salmonella illnesses, a common foodborne illness, than any other age group."

The Holiday Buffet
When serving food at a holiday gathering, it is important to maintain safe temperatures. Hot foods like turkey, ham, stuffing, chicken fingers and meatballs should be served hot and replenished frequently. Cold foods, such as chicken salad or potato salad, should be served and kept cold. A helpful hint is to prepare extra serving platters and dishes ahead of time, store them in the refrigerator or keep them hot in the oven (set at approximately 200 – 250 ºF) prior to serving. Any perishable foods on the buffet table that are not served with a hot source (such as chafing dishes or slow cookers) or cold source (such as by nesting serving dishes in bowls of ice) should be discarded after two hours at room temperature.

Bacteria can also multiply quickly in moist desserts that contain dairy products. Keep eggnog, cheesecakes, cream pies, and cakes with whipped-cream and cream-cheese frostings refrigerated right up until serving time.

Risky Foods Entice Unknowing Consumers
A variety of holiday foods may contain raw eggs or lightly cooked eggs. Most commercially sold eggnog is pasteurized, meaning that the mixture has been heated to a temperature high enough to kill harmful bacteria that may have been present in the raw ingredients. However, if you’re making your own eggnog, be sure to use a recipe that calls for slowly heating the mixture to 160 ºF. This will maintain the taste and texture while also killing bacteria.

"As tempting as it is, do not let your child eat raw cookie dough or lick the beaters after mixing cake batter," observed Dr. Murano. "Remember that if the dough or batter contain raw eggs, it could also contain Salmonella—a leading cause of foodborne illness."

Follow Four Steps to Food Safety
USDA reminds consumers to follow the four basic food safety steps:

- Clean. Wash hands and surfaces often.
- Separate. Separate raw meat, poultry, and egg products from cooked foods to avoid cross-contamination.
- Cook. Raw meat, poultry, and egg products need to be cooked thoroughly. Use a food thermometer to ensure foods have reached a high enough temperature to kill any harmful bacteria that may be present.
- Chill. Store leftovers within two hours of cooking.

** 3 RECIPES FOR YOU **

Veal Fajitas

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready In: 30 Minutes
Makes about 4 servings

Ingredients:
1 lb. veal cutlets (1/8 to 1/4 inch thick)
1 Tbsp olive oil
2 medium red or yellow peppers (or 1 of each)
1 medium onion
salt to taste
ground pepper to taste
8 small flour tortillas
chopped fresh cilantro
prepared salsa
Marinade:
3 Tbsp fresh lime juice
1 Tbsp olive oil
2 cloves garlic, minced

Directions:
1. Stack veal cutlets; cut into 3 x 1 inch strips. Combine marinade ingredients in medium bowl. Add veal strips and marinate 10 minutes.

2. Meanwhile, heat 1/2 of olive oil in large nonstick skillet over medium-high heat until hot. Add peppers and onion; stir-fry 4 to 5 minutes or until crisp-tender. Remove from skillet; keep warm.

3. Drain veal discarding marinade. Add 1/2 of veal to skillet; stir-fry 1 to 2 minutes or until outside of surface of veal is no longer pink. Do not overcook. Repeat with remaining oil and veal. Season with salt and pepper as desired.

4. Combine veal and bell pepper mixture. Sprinkle with cilantro as desired. Serve with tortillas and salsa.

Pork Tenderloin Skillet

Prep Time: 15 Minutes
Cook Time: about 30 Minutes
Ready In: about 1 Hour and 30 Minutes including 1 hour marinating time.
Makes 6 servings

Ingredients:
1 1/2 lbs. pork tenderloin
1/2 cup dry sherry
2 tablespoons soy sauce
1/2 teaspoon ground black pepper
2 cloves garlic, crushed
1/2 cup ground almonds
1 teaspoon olive oil
1 cup chopped onion
1 carrot, peeled and diced
1 celery rib, chopped

Directions:
1. In small bowl stir together sherry, soy sauce, pepper and garlic; pour over pork tenderloin in a resealable plastic bag. Seal bag; marinate in refrigerator 1 hour.

2. Remove pork tenderloin from marinade mixture, reserving marinade; pat dry.

3. Coat pork tenderloin with almonds.

4. Heat olive oil in large skillet over medium heat.

5. Brown pork tenderloin on all sides, about 5 minutes, turning carefully.

6. Reduce heat to low, add reserved marinade, onion, carrot and celery; cover and simmer 10 to 12 minutes.

Oriental Style Chicken Breast

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: 20 Minutes
Makes 4 servings

Ingredients:
1 1/4 lbs boneless skinless chicken breasts
1/4 cup sherry
3 tablespoons firmly packed brown sugar
3 tablespoons sesame oil
2 tablespoons soy sauce
2 cloves garlic, finely chopped
1/2 teaspoon ground ginger

Directions:
1. Pre-heat broiler.

2. In small saucepan, over medium-high heat, bring sherry, brown sugar, oil, soy sauce, garlic and ginger to a boil, stirring occasionally. Remove from heat.

3. Place chicken breasts on a grilling pan and coat with sauce mixture.

4. Broil chicken breasts, turning occasionally and basting with sauce, 15 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not baste during last 5 minutes of broiling.
