** WINERY REVIEW FROM HAVERHILL BEEF **
La Famiglia di Robert Mondavi Winery* . . . .
The Robert Mondavi family, one of the world's most distinguished
wine producing families, has been crafting fine wines from French
varieties for decades. As early as 1989, inspired by their Italian
heritage, the Robert Mondavi family began experimenting with
Californian-grown Italian varietals. The result is La Famiglia
di Robert Mondavi. This jewel of a winery is located on a picturesque
Napa Valley hillside overlooking the vineyards of Oakville. Their
wines combine Italian tradition with vibrant fruit expression
from California's soil and climate.
A Few Of The La Famiglia di Robert Mondavi Wines At Haverhill
Beef:
Pinot Grigio*
La Famiglia Pinot Grigio is a crisp, dry white wine with fresh
floral fruit and spice aromas. This variety is considered a natural
mutation of the noble Pinot Noir, with berries often tinged a
cinnamon brown color, leading to its name Pinot Grigio
Sangiovese*
The grape variety is believed to date back to the Etruscan period
(8th century BC), and was one of three staples of the Tuscan
diet -- wine, olive oil and bread. Using gentle hand-harvesting
and winemaking techniques, La Famiglia preserves the complexity
of Sangiovese, showing layers of red cherry and plum fruit.
Barbera*
Barbera is grown throughout Italy and is appreciated for its
red fruit character and gentle tannins that invite early enjoyment.
La Famiglia Barbera has ripe plum, black cherry and blackberry
fruit character with vibrant, balanced acidity and soft tannins.

** 3 RECIPES FOR YOU **
Zesty Ground Beef Skillet
Prep Time: 10 Minutes
Cook Time: 25 to 30 Minutes
Ready In: about 45 Minutes with standing time
Makes 6 servings
Ingredients:
1 1/2 lbs. ground beef
1 cup uncooked macaroni
1 cup chopped onion
1 clove garlic, minced
1/2 lb. fresh mushrooms, sliced
1 6-ounce can tomato paste
1/2 teaspoon freshly ground black pepper
1/4 teaspoon oregano
1/4 teaspoon basil
3/4 cup water
1 cup ketchup
1 teaspoon sugar
1 small bay leaf
Directions:
1. Cook macaroni according to package directions; drain and set
aside.
2. Meanwhile, in a non-stick skillet, brown the ground beef
with the mushrooms, onion and garlic. Pour off the fat.
3. Add remaining ingredients. Simmer gently about 15 minutes.
4. Add the cooked, drained macaroni. Simmer 5 minutes.
5. Let stand 5 minutes before serving. (Remove bay leaf prior
to serving.)

Honey And Brown Sugar Pork Tenderloin
Prep Time: 15 Minutes
Cook Time: about 25 to 30 Minutes
Marinating Time: Overnight
Ready In: about 50 Minutes including standing time; not including
marinating time.
Makes 4 servings
Ingredients:
1 whole pork tenderloin
1 tablespoon sesame oil
1 teaspoon grated fresh lemon peel
2 cloves garlic, crushed
1 small onion, grated
2 teaspoons grated fresh ginger root
1/4 cup light soy sauce
1/4 cup dry white wine
1/4 cup honey
1 tablespoon firmly packed dark brown sugar
Directions:
1. In a small bowl, add the sesame oil, lemon peel, garlic, onion,
ginger root and soy sauce. Mix and set aside.
2. In a glass bowl with a glass cover, place the pork tenderloin.
Pour the ginger root mixture above over all sides of the pork
tenderloin coating evenly. Cover the glass bowl and place in
refrigerator to marinate overnight.
3. Preheat oven to 375° F.
4. Remove pork tenderloin from marinade; drain well and place
in a shallow, non-stick oven-safe roasting pan. NOTE: Discard
any leftover marinade.
5. Meanwhile, in a small bowl, combine the dry white wine,
honey and brown sugar. Stir.
6. Pour the honey and brown sugar mixture over the pork tenderloin,
coating all sides. Place the pan in the oven and cook for 25
to 30 minutes, or until internal temperature reaches 155°
F to 160° F.
7. Remove from oven and let rest 5 minutes before slicing
and serving.

El Grande Pork Chops
Prep Time: 5 Minutes
Cook Time: about 11 Minutes
Ready In: about 16 Minutes
Makes 4 servings
Ingredients:
4 boneless center cut pork chops
1 1/2 cups chunky-style salsa,
1 4-oz can diced green chilies
1 tsp olive oil
1/2 tsp ground cumin
1/4 cup grated Monterrey Jack cheese
Directions:
1. Heat the olive oil in a non-stick skillet over medium-high
heat.
2. Add the pork chops and brown them on one side (about 2
to 3 minutes); then turn each pork chop over.
3. Add the salsa, chilies and cumin to skillet; mix well.
4. Lower heat, cover the skillet and simmer for about 6 minutes.
5. Uncover the skillet, top each chop with one tablespoon
cheese.
6. Cover the skillet again and simmer for an additional 1
to 2 minutes, until cheese melts.
