** 3 RECIPES FOR YOU **
Traditional Tenderloin of Beef Roast
Prep Time: 10 Minutes
Cook Time: 55 Minutes
Ready In: about 1 Hour and 30 Minutes WITH resting time
Makes 8 to 10 servings
Ingredients:
5 pound boneless tenderloin of beef roast
1 tablespoon dried oregano leaves
2 teaspoons dry mustard
1 tablespoon dried thyme
2 teaspoons dried rosemary, crushed
1 teaspoon finely chopped parsley
1 teaspoon coarsely ground black pepper
Directions:
1. Pre-heat oven to 425° F.
2. In a small mixing bowl, mix together the oregano, mustard,
thyme, rosemary, parsley and black pepper then rub the mixture
onto the surface of the tenderloin of beef roast.
3. In a shallow roasting pan, place the tenderloin of beef
roast on rack.
4. Place the tenderloin of beef roast in the oven and roast
for 10 minutes; then reduce the oven heat to 325° F and roast
for an additional 40 to 45 minutes or until meat thermometer
reaches 140° F for rare, 150° F for medium-rare or 160°
F for medium.
5. Remove the tenderloin of beef roast from the oven and cover
with foil and let the roast rest for 15-20 minutes before carving.

Grilled Seasoned Pork Tenderloin
Prep Time: 5 Minutes
Cook Time: about 8 Minutes
Ready in: about 43 Minutes WITH marinating time
Makes 4
Ingredients:
1 whole boneless pork tenderloin cut into 8 pieces
1/4 cup olive oil
1 cup balsamic vinegar
1 teaspoon finely chopped parsley
1 tablespoon dried thyme
3 tablespoons fresh rosemary
1 teaspoon chopped garlic
salt to taste
pepper to taste
Directions:
1. Pre-heat the grill to medium heat.
2. In a medium bowl, combine together the oil, vinegar, parsley,
garlic, thyme and rosemary.
3. Add pork tenderloins pieces; cover and marinate them in
the refrigerator for 30 minutes. NOTE: Discard unused marinade.
4. Remove each pork tenderloin piece from the bowl and season
with the salt and pepper.
5. Place each pork tenderloin piece on the grill grid and
grill for 4 minutes each side, or until cooked as desired.

Lime & Garlic Chicken Skillet
Prep Time: 5 Minutes
Cook Time: 12 Minutes
Ready In: about 1 Hour and 17 Minutes WITH marinating time
Makes about 4 servings
Ingredients:
1 1/2 pounds boneless and skinless chicken breasts
1/2 cup soy sauce
1/4 cup fresh lime juice
1 tablespoon Worcestershire sauce
1 teaspoon finely chopped parsley
2 cloves garlic, minced
1/2 teaspoon dry mustard
1/2 teaspoon cracked black pepper
olive oil
Directions:
1. SAUCE: In a mixing bowl, mix together thoroughly the soy sauce,
lime juice, parsley, Worcestershire sauce, minced garlic and
mustard. Set aside.
2. Put the chicken breast halves in a medium size bowl and
pour the sauce above over them.
3. Cover the bowl and marinate in refrigerator for about 1
hour.
4. Remove chicken from marinade and sprinkle with the cracked
black pepper. Set aside. NOTE: Discard unused marinade.
5. In a non-stick skillet, heat the olive oil over medium
temperature.
6. Add the marinated chicken breast halves and cook about
6 minutes on each side or until meat thermometer inserted in
center registers 170°F.

** GRILLING TIPS **
QUESTION: What is post-heating?
ANSWER: In order to assist in cleaning your grill grids and to
completely vaporize remaining juices, a post-heating of at least
15 minutes is recommended with the burners on high.
QUESTION: Should I grill with the hood opened or closed?
ANSWER: This is a matter of personal preference. Cooking with
the hood closed is recommended if you enjoy cooking at maximum
"searing" temperatures. Flare-up will occur more often
with this method. Cooking slower with the lid up will produce
less flare-ups and tenderize your food. Note: When using the
Rotis motor - hood must be closed except when basting.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
