** 3 RECIPES FOR YOU **
Grilled Honey-Maple-Apple Glazed New York Sirloin Steak
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
2 lbs. of boneless New York sirloin steaks cut about 1 inch thick
1 tsp. salt
1/2 tsp. cracked black pepper
Glaze:
1/2 cup maple syrup
1/2 cup pure honey
1/2 cup apple cider or juice
1/4 tsp. pepper
Directions:
1. In a small bowl, mix salt and cracked black pepper; then press
mixture into both sides of the New York sirloin steaks.
2. Preheat grill to medium heat.
3. Place the New York sirloin steaks on grill grid. Cook covered
5 to 7 minutes per side. Turn with tongs to retain juiciness.
4. While the New York sirloin steaks are grilling, combine
maple syrup, apple cider and pepper in a microwave safe mixing
bowl.
5. Microwave on high for 3 to 4 minutes until thickened, stirring
occasionally.
6. During last 5 minutes of grilling the New York sirloin
steaks, brush glaze over top and sides of steak.
7. Remove the New York sirloin steaks from grill when an internal
temperature has reached 140ºF for medium-rare or 145ºF
for medium doneness.

Breaded Pork Tenderloin III
Prep Time: 12 Minutes
Cook Time: about 10 Minutes
Ready In: about 22 Minutes
Makes 4 servings
Ingredients:
1 pound pork tenderloin
2 tsp. olive oil
1 sweet onion
1 clove garlic
1 tsp. tablespoon basil
1 tablespoon marjoram
1 tablespoon rosemary
1 tablespoon thyme
3 Tbsp. Italian-style bread crumbs
1/2 cup freshly grated Romano cheese
1 tsp. salt
1/2 tsp. cracked black pepper
Directions:
1. Chop the onion. Set aside.
2. Mince the garlic clove. Set aside.
3. Cut the pork tenderloin crosswise into about 1 inch thick
slices the place then flatten each slice to about 1/2 inch thick.
Set aside.
4. In a medium size mixing bowl add the bread crumbs, Romano
cheese, basil, marjoram, rosemary, thyme, salt and pepper then
mix thoroughly.
5. Take each pork tenderloin slice and coat with the bread
crumb mixture on all surfaces. Set aside.
6. In a large non-stick skillet, heat the olive oil over medium
heat.
7. Add the garlic, onion, and coated pork tenderloin slices
to the skillet and slowly cook for 10 minutes.

Boneless Chicken Cutlets
Prep Time: 10 Minutes
Cook Time: 6 Minutes
Ready in: 16 Minutes
Makes 4 servings
Ingredients:
1 1/2 lbs. boneless chicken cutlets
1 tablespoon rosemary
1 tablespoon oregano
salt to taste
ground black pepper to taste
1/2 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 large eggs
2 teaspoons water
3 tablespoons olive oil
Directions:
1. In a medium size mixing bowl, beat the egg with 2 teaspoon
of water. Set aside.
2. Season the boneless chicken cutlets with rosemary, oregano,
salt and pepper. Set aside.
3. On a piece of wax paper, combine bread crumbs and Parmesan
cheese.
4. Dip each piece of chicken cutlet in egg mixture and then
dredge in bread crumb mixture.
5. In large, non-stick skillet over medium-high heat, heat
the olive oil.
6. Add the coated chicken cutlets and sauté 3 minutes
per side, until golden brown and cooked through.

** BASIC GRILLING QUESTIONS AND ANSWERS **
QUESTION: How do you keep a steak or chops from curling around
the edges when grilling?
ANSWER: Slash the outer layer of fat at 1 inch intervals.
QUESTION: Any suggestions for grilling vegetable?
ANSWER: If your vegetables are being charred on the outside but
raw on the inside, try this: Microwave them from 1-3 minutes,
brush with olive oil, remove them from microwave dish etc., and
grill until tender, turning once.
QUESTION: Should I pre-heat my grill prior to using it?
ANSWER: Always pre-heat your grill: It is extremely important
that your grill be up to temperature before you begin using.
After lighting the grill, close hood and preheat for at least
15 minutes. This will ensure all components are hot enough for
proper grilling. Note: Never leave a grill unattended.
QUESTION: Any suggestions to prevent my hamburgers from drying
out while grilling?
ANSWER: For the best burgers and juiciest hamburgers, only lightly
shape the hamburger patties and resist pressing down on them
with the spatula it drives the juices out.
QUESTION: Any suggestions to prevent my steaks from drying
out while grilling?
ANSWER: Use long-handled tongs for turning steaks. A fork will
pierce the steak causing loss of flavorful juices which will
in turn make your steak dry.
QUESTION: Do you have any specific grilling tips for using
a charcoal grill??
ANSWER: Always use good-quality charcoal briquettes and charcoal
lighter fluid. The charcoal briquettes should be fired up and
ready for grilling in about 20 minutes. For direct cooking on
a charcoal grill, make sure there is enough charcoal to extend
in a single layer 1 to 2 inches beyond the area of the food on
the grill. Pour briquettes into the grill to determine the quantity,
then stack into a pyramid for lighting. For indirect cooking,
food is placed over a drip pan and the briquettes are banked
either to one or both sides of the pan.
QUESTION: Is there a basic rule-of-thumb to determine whether
to use the Direct Heat Method vs. Indirect Heat Method when grilling?
ANSWER: Use the Direct Heat Method for foods that require less
than 25 minutes to cook, like hamburgers, steaks, boneless chicken
breasts and pork chops. Use the Indirect Heat Method for cooking
foods that require more than 25 minutes to cook.
