** 3 RECIPES FOR YOU **
Grilled Rubbed Beef Rib Eye Steaks
Prep Time: 5 Minutes
Cook Time: 6 to 8 Minutes
Ready In: 11 to 13 Minutes
Makes 4 servings
Ingredients:
4 Rib Eye steaks
2 tablespoons crushed black pepper
1 teaspoons oregano
1 teaspoon rosemary
1 teaspoon thyme
1 tablespoon minced garlic
Directions:
1. Preheat grill to medium heat.
2. In a mixing bowl, mixed together the black pepper, oregano,
rosemary, thyme and garlic.
3. Rub the mixture above onto both side of steaks.
4. Place steaks on grill grid and grill, uncovered, 6 to 8 minutes
for medium rare to medium doneness, turning occasionally.

BBQ Pork Spareribs
Prep Time: 10 Minutes
Cook Time: 1 to 1 1/2 Hours
Ready In: about 1 1/2 Hours
Makes 4 to 6 servings
Ingredients:
4 lbs. country style pork ribs
1/2 cup molasses
1/2 cup honey
1/2 cup soy sauce
1/2 cup ground mustard
1/3 cup lemon juice
1 tablespoon flour
3 tablespoons Worcestershire sauce
2 tablespoons chili powder
Directions:
1. Place pork ribs in a large shallow baking dish.
2. In medium bowl stir lemon juice into flour until smooth,
stir in molasses, honey, soy sauce, mustard, Worcestershire and
chili powder.
3. Pour over pork ribs, turning to coat.
4. Preheat grill to medium heat.
5. Using the INDIRECT HEAT METHOD, grill pork ribs over heat
for about 1 to 1 1/2 hours or until tender.

Grilled Lemon-Honey Chicken Breasts
Prep Time: 10 minutes
Cook Time: 20 Hours
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 boneless skinless chicken breasts
Basting Mixture:
1/3 cup lemon juice
1/2 cup honey
1/4 teaspoon ground pepper
2 tablespoons chopped fresh parsley
2 cloves garlic, finely chopped
3 tablespoons olive oil
1 teaspoon rosemary
1 teaspoon thyme
1/4 teaspoon salt
1/4 pea spoon pepper
Directions:
1. Pre-heat grill to medium heat.
2. Prepare basting mixture: In medium bowl, whisk together
lemon juice, honey, oil, parsley, garlic, rosemary, thyme, salt
and pepper until blended. Set aside.
3. Place the chicken breasts on the grill grills and grill
the chicken, basting with the mixture above and turning occasionally
for 20 minutes or until meat thermometer inserted in center registers
170°F. Note: Do not baste during the last 5 minutes of grilling.

STEAKS FOR GRILLING - Charcoal Grill:
1: Prepare charcoal grill for direct cooking. When coals are
medium, ash-covered (in about 30 minutes), spread in single layer.
Position cooking grid. Check cooking temperature.
2: Season beef (straight from refrigerator) with herbs or
spices, as desired. Place on cooking grid directly over coals.
3: Grill according to timetable below, turning occasionally.
After cooking, season beef with salt, if desired.
NOTE: Because gas grill brands vary greatly, please consult
your owners manual for grilling guidelines.
BEEF STEAK THICKNESS TOTAL COOKING TIME
Tenderloin 3/4 inch 13 to 15 minutes
Rib Eye 3/4 inch 6 to 8 minutes
1 inch 11 to 14 minutes
Rib, small end 3/4 inch 6 to 8 minutes
1 inch 9 to 12 minutes
T Bone/Porterhouse 3/4 inch 10 to 12 minutes
1 inch 14 to 16 minutes
Top Loin (Strip), 3/4 inch 10 to 12 minutes
boneless 1 inch 15 to 18 minutes
Top Sirloin, boneless 3/4 inch 13 to 16 minutes
boneless 1 inch 17 to 21 minutes

Arbor Crest Wine Cellars . . . .
Located in Spokane, Washington, in the Columbia River Valley,
Arbor Crest Wine Cellars has quickly become one of Washington
State's premier winemaking vineyards. When you drink Arbor Crest
wines, what you taste is the rarefied blending of tradition and
technology - taking the good from each and making something even

Arbor Crest Wine Cellars began in 1982 when Dr. Harold and
Marcia Mielke along with Dr. Mielke's brother converted the old
family cherry farm from orchards to vineyards. At the same time
a winery in California went out of business and the family decided
to purchase the winery equipment and have it shipped to the old
cherry processing plant where the first vintage of wine was produced.

Northwest chardonnays, in which Arbor Crest Wine Cellars' chardonnay

- COLUMBIA VALLEY CHARDONNAY 2000:
This elegant Chardonnay is a full bodied with a good balance
and complex character. A blend of two distinctly different vineyards,
this wine is lush and concentrated with layers of apricot, melon
and honey with citrus overtones and bright tropical fruit. French
oak aging and barrel fermentation add a subtle layer of toasty
oak that creates a long supple finish.
- COLUMBIA VALLEY JOHANNISBERG RIESLING 2001:
Arbor Crest's 2000 Johannisberg Riesling is made from the noble
White Riesling grape grown in the Columbia Valley. With hand-picked
and hand-sorted grapes, this wine shows bright pineapple, lemon
and honey characters that unfold on the
palate as peach and almond. This wine is finished slightly sweet
to balance the bright acidity and to create a long and supple
finish.
- COLUMBIA VALLEY MERLOT 1999:
The 1999 Columbia Valley Merlot is an excellent example of a
full-bodied Washington Merlot. Ripe and concentrated, this wine
strings layers of intense raspberry, complex currant and blueberry
notes, framed by spicy, vanilla-scented oak. Barrel-aged in French
oak for eighteen months, this elegant wine finishes boldly with
intense cherry, blackberry and plum
flavors, lingering nicely on the palate. The vines are grown
on original, ungrafted rootstock providing the grapes with intense
varietal character. This vintage embodies a tradition of red
wine excellence, ensuring a memorable tasting experience.
