** 3 RECIPES FOR YOU **
Grilled Garlic-Lime Rubbed Delmonico (Rib Eye) Steaks
Prep Time: 5 Minutes
Cook Time: 11 to 14 Minutes
Ready In: 16 to 19 Minutes
Makes 4 servings
Ingredients:
4 Delmonico (rib eye) Steaks cut about 1 inch thick
2 tsp. minced cloves garlic
pulp of 2 fresh limes
1/4 cup of fresh lime juice
2 tsp. rosemary
2 tsp. fresh chopped thyme
1 tsp. crack black pepper
1/2 tsp. olive oil
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine thoroughly the thyme, garlic, cracked
black pepper, lime juice, lime pulp and olive oil until well
blended.
3. Rub the seasoning mixture onto both sides of each steak, pressing
evenly. (Discard rub mixture after rubbing onto the raw steaks.)
4. Place each steaks on the heated grill grid and grill, covered,
11 to 14 minutes for medium rare to medium doneness, turning
once.

Honey-Mustard Grilled Pork Roast
Prep Time: 10 Minutes
Cook Time: about 1 hour and 15 Minutes
Ready in: about 3 Hours and 35 Minutes INCLUDING marinating time.
Makes 6 servings
Ingredients:
4 lb. boneless pork roast
1/2 cup Dijon-style mustard
1/2 cup honey
1/4 cup soy sauce
1/2 cup brown sugar
1/4 cup water
2 teaspoons Worcestershire sauce
Directions:
1. In a resealable plastic bag, combine thoroughly the Dijon-style
mustard, honey, soy sauce, brown sugar, water and Worcestershire
sauce
until well blended.
2. Place the boneless pork roast in the resealable plastic bag;
mix together; seal the bag and refrigerate for about 2 hours
(or as long as overnight).
3. Pre-heat grill to medium heat.
4. Remove the pork roast from the bag; discard any remaining
marinade; and place the pork roast on the grill grids over INDIRECT
heat; close grill hood and grill for about 1 hour and 15 Minutes
until internal temperature (measured with a meat thermometer)
reads 160°F.
5. Remove pork roast from the grill, let rest for 10 minutes
before slicing to serve.

Grilled New Orleans-Style Pork Chops
Prep Time: 10 Minutes
Cook Time: about 10 Minutes
Ready in: about 20 Minutes
Makes 6 servings
Ingredients:
6 boneless center cut pork chops cut about 3/4 of an inch thick
Rub Mixture:
1 tablespoon paprika
1 teaspoon cayenne
3/4 teaspoon white pepper
3/4 teaspoon rosemary
3/4 teaspoon black cracked pepper
3/4 teaspoon thyme
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt (optional)
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine thoroughly all Rub Mixture ingredients.
Set aside.
3. Rub both sides of each pork chop with the rub mixture.
4. Place each pork chop on the grill grids and grill directly
over heat for about 8 to 10 minutes, turning once until internal
temperature (measured with a meat thermometer) reads 160°F.
5. Remove the pork chops from the grill and serve hot.

BEEF MARINATING TIPS:
A marinade is a seasoned mixture that adds flavor and in some
cases tenderizes. Marinades are commonly used with thin cuts,
such as steaks. Grilling, broiling and braising are some of the
cooking methods that can be used for cooking your marinated beef.
1: ALWAYS marinate in the refrigerator, NEVER at room temperature.
2: Less tender steaks should be marinated at least 6 hours in
a tenderizing marinade such as Italian dressing or salsa. Marinating
longer than 24 hours may result in a mushy texture.
3: If a marinade is to be used for basting or served as a sauce,
reserve a portion of it before adding the raw beef. WARNING:
Marinade that has been in contact with uncooked meat MUST be
brought to a full rolling boil before it can be used as a sauce.
NEVER save and reuse a marinade.
