** 3 RECIPES FOR YOU **
Grilled Garlic and Rosemary Rubbed New York Sirloin Steak
Prep Time: 10 Minutes
Cook Time: about 16 Minutes
Ready in: about 40 Minutes WITH refrigerating time
Makes 4 servings
Ingredients:
2 lbs. Boneless New York Sirloin Steak
2 teaspoons minced garlic
2 teaspoons of rosemary
2 tablespoons olive oil
cracked black pepper
salt
Directions:
1. Preheat grill to medium heat.
2. Rub both sides of the New York Sirloin Steak with olive
oil then season with the salt and pepper to taste.
3. Next rub the garlic and rosemary into both sides of the steak
and place he steaks in a glass dish. Cover and put in the refrigerator
for about 15 minutes.
4. Place the steaks on the preheated grill grid and cook uncovered
7 to 8 minutes per side. Turn with tongs to retain juiciness.
5. Remove streaks from grill and carve steaks across the grain
into thin slices to serve.

Summer Grill Boneless Pork Chops
Prep Time: 10 Minutes
Cook Time: about 16 Minutes
Ready in: about 26 Minutes WITHOUT marinating time
Makes 4 servings
Ingredients:
4 pork boneless chops cut about 1 1/2 inches thick
2 cups dry red wine
4 bay leaves
2 tablespoons fresh minced rosemary
2 teaspoons sugar
1 1/2 teaspoons thyme
1 1/2 teaspoons ground coriander
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
salt to taste
pepper to taste
olive oil
Directions:
1. In a resealable plastic bag, make the marinade mixture by
combining the red wine, bay leaves, rosemary, thyme, coriander,
nutmeg, and cloves.
2. Place in the plastic bag each pork and marinate about 8 hours
in the refrigerator, turning occasionally.
3. Pre-heat grill to medium heat.
4. Remove each pork chop from the plastic bag; drain and pat
dry. NOTE: Discard marinade.
5. Season each pork chop with with salt and pepper and lightly
brush with the olive oil.
6. Grill the each pork chop for 6 to 8 minutes on each side.
7. Remove from grill and serve.

Rosemary-Orange Grilled Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: about 13 to 18 Minutes
Ready In: about 23 Minutes
Makes about 4 servings
Ingredients:
1 1/2 lbs. boneless skinless chicken breast
Rosemary-Orange Glaze:
2 teaspoons fresh rosemary, minced
1/2 cup orange marmalade
1 small shallot, finely chopped
2 cloves garlic, finely chopped
3 tablespoons balsamic vinegar
1 teaspoon thyme
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine the rosemary, orange marmalade,
shallot, garlic, and balsamic vinegar until well blended.
3. Grill the chicken breast, turning occasionally and brushing
with the rosemary-orange glaze, 15 minutes or until meat thermometer
inserted in center registers 170°F. Note: Do not brush during
the last 5 minutes of grilling.

** COOKING TIP FROM HAVERHILL BEEF **
Pork Cooking Basics . . . .
Pork is best when cooked to medium doneness - 160 degrees F.
on a meat thermometer. Correctly cooked pork is juicy and tender,
with a slight blush of pink in the center.
Preparation Methods: WET OR DRY?
There are two basic methods for cooking meats: dry heat and moist
heat. Generally, dry-heat methods are best applied to naturally
tender cuts of meat. Moist-heat methods tenderize less-tender
cuts.
Dry-Heat Methods:
- Grilling for both small cuts cooked over direct heat and large
pork cuts cooked with indirect heat
- Broiling for small cuts such as chops, kabobs and pork patties
- Sautéing for small pork cuts such as chops, cutlets
and strips
- Pan-broiling for chops, tenderloin medallions, ham slices,
bacon and ground pork patties
- Roasting for large pork cuts - loin roasts, shoulder roasts,
ham, leg roasts
Moist-Heat Methods:
- Stewing for smaller pieces of less-tender cuts, such as shoulder
cubes
- Braising for large or small cuts, but traditionally less-tender
cuts
