Summer Sizzled Grilled T-Bone Steaks
Prep Time: 10 Minutes
Cook Time: 16 to 18 Minutes
Ready In: about 28 Minutes
Makes 4
Ingredients:
4 T-Bone steaks cut about 1 inch thick
3 teaspoon grated lemon zest
2 teaspoons minced garlic
1 teaspoon fresh rosemary
1/2 teaspoon parsley
1 teaspoon thyme
1/2 teaspoon crack black pepper
1 teaspoon olive oil
Directions:
1. Pre-heat grill to medium heat.
2. In small mixing bowl, combine thoroughly the lemon zest,
garlic, rosemary, thyme, parsley, crack black pepper and olive
oil.
3. Press the mixture above into both sides of steaks.
4. Place the steaks on the heated grill grids and grill uncovered
for about 16 for medium-rare to about 18 minutes for medium doneness,
turning occasionally.

Oriental-Style Grilled Club Sirloin Steaks
Prep Time: 10 Minutes
Marinating Time: 1 Hour
Cook Time: 16 to 18 Minutes
Ready in: 1 Hour and 18 Minutes INCLUDING marinating time
Makes 4 servings
Ingredients:
4 club sirloin steaks cut about 1 inch thick
Marinade:
1 tablespoon soy sauce
2 cloves garlic, minced
1/2 cup teriyaki steak sauce
1 tablespoon chopped fresh ginger
1/4 teaspoon crushed red pepper
2 tablespoons sesame seeds
Directions:
1. In a small bowl, mix together the soy sauce, garlic, teriyaki
sauce, ginger, red pepper and sesame seeds. Then place the steaks
and the marinade in a resealable plastic bag; turn steaks to
coat. Close bag securely and marinate in refrigerator 1 hour.
2. Preheat grill to medium heat.
3. Remove the steaks from the marinade; discard marinade; then
place each steak on grill grid and grill, uncovered, about 8
to 9 minutes per side (16 to 18 minutes total) for medium rare
to medium doneness, turning once with tongs.

Grilled Garlic And Honey Pork Chops
Prep Time: 5 Minutes
Cook Time: about 15 Minutes
Ready in: about 2 Hours and 20 Minutes WITH marinating time
Makes 6
Ingredients:
6 center cut boneless pork chops
3.4 cup lemon juice
2 Tbsp. cracked black pepper
1 Tbsp. ground oregano
1 Tbsp. paprika
2 tsp. celery salt
1/2 tsp. ground cayenne pepper
2 tablespoons finely chopped parsley
Directions:
1. Slash fatty edge of each chop in about three places without
cutting into the meat (This will prevent the meat from curling
during cooking.)
2. In a plastic, resealable bag, place the pork chops; then add
the lemon juice, cracked black pepper, oregano, paprika, celery
salt and parsley. Seal the bag and marinate for 2 hours in the
refrigerator.
3. Pre-heat the grill to medium heat.
4. Remove each pork chop from the marinade. NOTE: Discard marinade.
5. Then place each pork chop on the grill grid; close the cover
and grill for about 7 to 8 minutes per side or until internal
pork temperature reaches 160 degrees F.

** COOKING TIP FROM HAVERHILL BEEF **
Meat Rubs and Marinades . . .
Rubs and marinades are great ways to add flavor or tenderize
your favorite cuts of meat (beef, veal, pork, chicken or lamb).
What is a Meat Rub?
A rub is a blend of herbs, peppers, spices or seasonings that
are blended to add flavor to the meat by coating the surface
of the meat with the mixture.
- Rubs can consist of dry ingredients, or some include oil, crushed
garlic or other liquids that cause the rub to be a paste.
- Rubs can be applied to the surface of the meat just before
grilling or roasting, or applied several hours in advance and
refrigerated until cooked.
What is a Meat Marinade?
A marinade is a highly seasoned liquid used to add flavor and
tenderize less tender cuts.
- Marinades usually consist of liquid ingredients such as fruit
or vegetable juices, wine, water or oil in combination with seasonings
and herbs.
- A tenderizing marinade must contain an acidic ingredient such
as lemon juice, yogurt, wine or vinegar or a natural tenderizing
enzyme found in fresh papaya, ginger, pineapple and figs.
- Allow 1/4 to 1/2 cup marinade for each 1 to 2 pounds of meat.
- Always marinate in the refrigerator - never at room temperature.
- Marinating may be done in a plastic bag or glass dish.
- Beef must be marinated at least six hours for tenderization
to take place.
- Turn or stir the meat occasionally to allow even exposure to
the marinade.
- For flavor, marinate 15 minutes or as long as 2 hours.
- Leftover marinade should always be discarded.
