** 3 RECIPES FOR YOU **
Seasoned Country Style Pork Spareribs
Prep Time: 10 Minutes
Cook Time: : about 3 Hours and 15 Minutes
Ready in: about 3 Hours and 30 Minutes
Makes 6 to 8 servings
Ingredients:
6 pounds country style pork spareribs
1/4 cup Dijon-style mustard
2 tablespoons packed brown sugar
2 tablespoons paprika
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon sage
1 tablespoon garlic powder
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon salt
Directions:
1. Pre-heat oven to 300° F.
2. Line shallow roasting pan (or pans) with heavy-duty aluminum
foil. Set aside.
3. In a small bowl, combine the brown sugar, paprika, rosemary,
thyme, sage, garlic powder, pepper and salt. Set aside.
4. Brush the meatier side of each slab of ribs with the mustard;
then sprinkle brown sugar mixture evenly over mustard.
5. Place ribs in the foil-lined roasting pans and bake for 3
hours to 3 hours and 15 minutes or until fork tender. NOTE: If
you notice that the ribs are becoming dry, cover them with foil
for the last 30-45 minutes of baking.
6. When done baking, transfer ribs to serving platter and let
stand for 10 minutes before serving.

Italian-Style Skillet Pork Chops
Prep Time: 10 Minutes
Cook Time: 12 Minutes
Ready in: 22 Minutes
Makes 4 servings
Ingredients:
4 bone in center cut pork chops cut about 3/4-inch thick
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano, crushed
1/2 teaspoon dried basil, crushed
1 teaspoon thyme
1 teaspoon rosemary
1 cup sliced fresh mushrooms
1 16-oz. can stewed tomatoes
2 tablespoons dry red wine
2 teaspoons cornstarch
Directions:
1. In large skillet cook the onion and garlic in hot olive oil
until partially cooked; then add the oregano, basil, thyme, rosemary
and mushrooms. Cook until onions are tender. Remove from skillet;
set aside.
2, Brown the pork chops in the skillet over medium-high heat
for 8 minutes, turning once. Remove the pork chops from skillet;
keep warm.
3. Return vegetables to skillet. Stir together tomatoes, wine
and cornstarch and add to skillet. Cook and stir until thickened
and bubbly.
4. Serve warm.
Serving suggestion: Serve with fettuccine.

Garlic-Pepper Pork Roast
Prep Time: 5 Minutes
Cook Time: about 1 Hour and 15 Minutes
Ready in: 1 Hour and 30 Minutes WITH standing time
Makes 6 servings
Ingredients:
3 lb. boneless center cut pork roast
6 cloves garlic, peeled and crushed
2 teaspoons coarse salt
1 teaspoon thyme
2 teaspoons dried sage
1 teaspoon basil
2 teaspoon dried rosemary
2 teaspoon cracked black pepper
2 tablespoon olive oil
Directions:
1. Pre-heat oven to 350 degrees F.
2. Pat pork roast dry with paper towels; then place in shallow
roasting pan. Set aside.
3. In small bowl, stir together the garlic, salt, thyme, sage,
basil, rosemary, pepper and olive oil to make a paste.
4. Rub garlic paste over all surfaces of pork loin; then place
the roast (already in the roasting pan) in the oven, roast for
1 hour and 15 minutes until internal temperature, measured with
a meat thermometer, registers 155 degrees F.
5. Remove from oven, tent loosely with foil and let rest 10 minutes
before slicing to serve.

Reserving Your Thanksgiving Turkeys . . . .
It's time to start thinking about reserving your Thanksgiving
Day turkey. This is especially important to do if you plan on
using a fresh turkey instead of a frozen one. This way, you can
pick up the turkey the day before Thanksgiving and feel confident
that the right size bird will actually be there.

What Size Turkey Should I Buy?
Rule of thumbs says to plan on about 1 1/4 pounds of turkey per
person. You can also buy a bigger one, or two smaller ones, if
you want to have leftovers for everybody's traditional Thanksgiving
treat: turkey-and-cranberry-sauce sandwiches!
Fresh or Frozen Turkey?
One Thanksgiving Day decision you may want to make now is whether
you will be buying a fresh or frozen turkey.
A fresh bird is more expensive, but will save you defrosting
time and precious refrigerator space. Haverhill Beef suggests
you order your fresh turkey ahead of time so that you will be
able to pick it up the day before you wish to roast it.
A frozen turkey needs to be defrosted. The preferred method is
to defrost it in the refrigerator. Rule of thumb here is to allow
one day per 5 pounds in your refrigerator. Example: A 15 pound
frozen turkey will require three days to defrost thoroughly.
