** 3 RECIPES FOR YOU **
Hearty Chicken Breast Tenderloin Soup
Prep Time: about 10 Minutes
Cook Time: : 2 hours and 30 Minutes
Ready in: about 2 Hours and 40 Minutes
Makes 8 servings
Ingredients:
2 lbs chick breast tenderloins (boneless and skinless)
96 ounces of Low Sodium chicken broth
2 - 14.5 cans of diced tomatoes with basil, garlic and oregano
4 teaspoons minced onion
1 teaspoon black pepper
1 teaspoon garlic powder
4 Tablespoons McCormick 1-Step Lemon-Pepper Chicken Seasoning
1 teaspoon oregano
1 teaspoon basil
3 lbs mix frozen vegetables (corn, peas, carrots, green beans)
1/2 lb frozen yellow turnip
1/2 lb frozen broccoli florets
1/2 lb frozen cut leaf spinach
Directions:
1. In a 10 quart stock pot, add the chicken broth, diced tomatoes
and all seasonings and stir; then bring to a boil using high
heat.
2. Meanwhile, cut the chicken breast tenderloins into small pieces.
Set aside.
3. When the chicken broth has come to a boil, add the chicken
breast tenderloin pieces and stir.; then bring to a boil.
4. Then add all the frozen vegetables and stir and return to
a boil for 20 minutes; then turn down heat to medium-low and
simmer for 2 hours stirring occasionally.

Seasoned Holiday Roast
Prep Time: 5 Minutes
Cook Time: 2 Hours and 30 Minutes to 3 Hours and 30 Minutes
Ready In: about 3 hours and 30 Minutes
Makes 8 to 12 servings
Ingredients:
4 to 6 pounds Holiday Beef Roast
2 tsp. basil
2 tsp. dry mustard
1 large clove garlic, crushed
1/2 tsp. ground allspice
1 teaspoon rosemary
1 teaspoon thyme
1/2 tsp. ground red pepper
1 tsp. olive oil
Directions:
1. Preheat oven to 325°F.
2. Combine seasonings ingredients and olive oil in a small mixing
bowl; then rub evenly into surface of holiday roast.
3. Place holiday roast, fat side up, on rack in shallow roasting
pan. Do not add water or cover roast.
4. Roast approximately 2-1/2 to 3 hours. Use an instant read
thermometer and remove roast when internal temperature reaches
140°F for medium-rare or 155°F for medium.
5. Remove holiday roast from oven and tent loosely with aluminum
foil.
6. Let stand 15 minutes prior to carving into slices.

Rosemary And Garlic Pork Roast
Prep Time: 20 Minutes
Cook Time: 3 Hours
Makes 6 to 8 servings
Ingredients:
5 pounds pork roast, trimmed
2 tablespoons rosemary
3 cloves garlic, sliced
1/2 teaspoon salt
1 teaspoon of cracked black pepper
3 bay leaves
1/2 cup cider vinegar
1 teaspoon dried thyme
Directions:
1. Preheat oven to 325 degrees F.
2. With a small knife, pierce the top of pork roast. Force the
garlic slices and rosemary into the cuts. Sprinkle the pork roast
with the salt and pepper. Place the bay leaves in the bottom
of the roasting pan, and set pork roast on top of bay leaves,
fat side up. Mix vinegar and thyme in a small bowl, and pour
over the top of the pork roast.
3. Bake in the preheated oven 3 hours, or until an internal temperature
of 160 degrees F (70 degrees C) is reached. Using a baster or
spoon, baste the drippings over the roast frequently while it
is cooking. Let the roast rest for 10 minutes when done before
slicing.

Reserving Your Thanksgiving Turkeys . . . .
It's time to start thinking about reserving your Thanksgiving
Day turkey. This is especially important to do if you plan on
using a fresh turkey instead of a frozen one. This way, you can
pick up the turkey the day before Thanksgiving and feel confident
that the right size bird will actually be there.

Carving Your Thanksgiving Turkey: 5 Easy Steps . . . .
Once your turkey has been fully cooked and removed from the oven,
let the turkey rest for 20 to 35 minutes, depending on its size.
This will give the turkey juices a chance to soak into the flesh,
allowing for very moist slices of turkey. HINT: Before you begin
to carve your turkey, have a warm serving platter ready and waiting
for all the juicy turkey meat you'll soon be slicing and serving.
1. With your turkey on cutting board breast side up, cut band
of skin holding drumsticks. Grasp end of drumstick. Place knife
between drumstick/thigh and body of the turkey and cut through
skin to joint. Remove entire leg by pulling out and back, using
the point of the knife to disjoin it. Separate the thigh and
drumstick at the joint.
2. Insert fork in upper wing to steady turkey. Make a long horizontal
cut above wing joint through to body frame. Wing may be disjointed
from body, if desired.
3. Slice straight down with an even stroke, beginning halfway
up the breast. When knife reaches the cut above the wing joint,
slice will fall free.
4. Continue to slice breast meat, starting the cut at a higher
point each time.
5. Enjoy!
