** 3 MEATLOAF RECIPES FOR YOU **
Old Fashion Beef Meat Loaf
Prep Time: 10 Minutes
Cook Time: about 1 Hour and 15 Minutes
Ready in: about 1 Hour and 25 Minutes
Makes 6 to 8 servings
Ingredients:
3 lbs. lean ground beef
1 tablespoon olive oil
1 cup chopped onions
1/2 cup chopped celery
2 teaspoons chopped garlic
1 teaspoon rosemary
1 teaspoon basil
1 teaspoon salt, divided
1 tablespoon chopped fresh flat-leaf parsley
3/4 cup fresh bread crumbs (2 slices firm white sandwich bread)
1/3 cup ketchup
2 large eggs
1/4 teaspoon ground nutmeg
4 slices bacon
Meatloaf Sauce:
1 28-ounce can plum tomatoes in juice
1 tablespoon olive oil
1 tablespoon thyme
1 large garlic clove, chopped
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
Directions:
1. Set backing rack to lowest position. NOTE: PERFORM THIS STEP
WHILE RACK IS COMPLETELY COOL.
2. Preheat oven to 350 degrees F.
3. In a non-stick skillet, heat 1 tablespoon of the olive oil
in a over medium heat. Add onions, celery, rosemary, basil garlic;
cook 5 minutes, the until vegetables soften. Stir in 1/2 teaspoon
of the salt and the parsley. Remove from heat and let stand until
cooled to room temperature.
4. Meanwhile, combine the ground beef, bread crumbs, ketchup,
eggs, remaining 1/2 teaspoon salt, nutmeg and the cooked vegetables
until blended. Transfer the mixture to a loaf pan; shape into
a 9-1/2x5-inch oval. Arrange the bacon slices on top. Bake for
about 70 minutes, until an instant-read meat thermometer inserted
in center registers 160 degree F.
5. Meatloaf Sauce: Meanwhile, combine the plumb tomatoes,
olive oil, thyme, clove garlic, salt and the pepper flakes in
a 9-inch glass baking dish, breaking up tomatoes with a spoon.
Bake on lower rack with meatloaf, 35 to 40 minutes, the until
sauce thickens.
6. Remove cooked meatloaf from oven and serve with the sauce
on top.

Grandma's Simple Beef Meat Loaf
Prep Time: 10 Minutes
Cook Time: about 55 Minutes
Ready in: about 75 WITH standing time
Makes 4 to 6 servings
Ingredients:
2 lbs. lean ground beef
3/4 cup old-fashioned oatmeal, uncooked
3/4 cup finely chopped onion
1/2 cup ketchup
1 egg
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon basil
3/4 teaspoon pepper
1/2 teaspoon salt
Directions:
1. Pre-heat oven to 350°F.
2. In a large mixing bowl, combine ground beef, oatmeal, onion,
ketchup, egg, Worcestershire sauce, garlic, thyme, and basil;
mixing lightly but thoroughly. Shape into 8 x 4-inch loaf on
rack in a loaf pan.
3. Place meatloaf on the oven rack and bake meatloaf for 50 to
55 minutes to medium (160°F) doneness, until not pink in
center and juices show no pink color. Brush with additional ketchup
during last 10 minutes, if desired.
4. Let stand 10 minutes.

Vegetable Soup Beef Meat Loaf
Prep Time: 10 Minutes
Cook Time: about 1 Hour
Ready in: about 1 hour and 20 Minutes WITH standing time
Makes 4 to 6 servings
Ingredients:
2 lbs. lean ground beef
1 can condensed vegetable soup
1 cup soft bread crumbs
1 small onion, finely chopped
1 egg, slightly beaten
2 tsp. Worcestershire sauce
1 tsp. dried thyme leaves
1 tsp. rosemary
1 tsp. basil
1/2 tsp. garlic salt
1/4 tsp. pepper
1 Tbsp. packed brown sugar
1 tsp. dry mustard
Directions:
1. Preheat oven to 350ºF.
2. Divide and reserve 1/4-cup condensed vegetable soup.
3. In a large bowl, combine the ground beef, condensed vegetable
soup, bread crumbs, onion, egg, Worcestershire sauce, thyme,
rosemary, basil, garlic salt and pepper. Mix lightly but thoroughly.
4. Place the mixture into a loaf pan. Set aside.
5. Combine reserved condensed vegetable soup, brown sugar and
mustard. Spread over top of mixture.
6. Bake in in the oven 1 hour (or until no longer pink in middle
and juices run clear). Check with a meat thermometer - should
be 160°F in center.
7. Let stand about 10 Minutes before serving.
