** 3 RECIPES FOR YOU **
Sicilian Delmonico Steaks (Rib Eye)
Prep Time: 10 Minutes
Cook Time: 10 to 15 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
4 Delmonico Steaks (Rib Eye)
2 garlic cloves chopped finely
1/3 cup fresh sweet basil
1 teaspoon sage
1 teaspoon thyme
1 teaspoon oregano
1/3 cup freshly grated Romano cheese
1 tbsp tomato paste
1 tbsp olive oil
Directions:
1. Preheat broiler.
2. In a medium bowl, grind the chopped garlic cloves and sweet
basil into a paste.
3. Mix in the Romano cheese, sage, thyme, oregano and tomato
paste; beat in olive oil.
4. Place the Delmonico Steaks on a broiling pan.
5. Broil the Delmonico Steaks on one side for 4 to 5 minutes
for rare, or 5 to 7 minutes for medium; turn steak and broil
for an additional 2 to 3 minutes for rare or 3 to 4 minutes for
medium.
6. Remove the Delmonico Steaks and spread each steak with Romano
cheese mixture, return to broiler for an additional 1 1/2 minutes;
then serve.

Sweet Peach Boneless Pork Chops
Prep Time: 5 Minutes
Cook Time: about 10 Minutes
Ready in: about 1 Hour and 15 Minutes WITH marinating time
Makes 4 servings
Ingredients:
4 boneless pork chops about 1 inch thick
1/3 cup brown sugar
3 tablespoons soy sauce
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/4 teaspoon garlic powder
1/2 cup lemon juice
1 can sweet peaches (drained)
Directions:
1. In a mixing bowl, combine the brown sugar, soy sauce, rosemary,
thyme, garlic powder and lemon juice; mix thoroughly.
2. Place the lemon juice mixture above in a resealable plastic
bag and add the pork chops.
3. Marinate for about 1 hour in the refrigerator.
4. Pre-heat the broiler.
5. Remove pork chops from marinade and place on a broil pan.
NOTE: Discard the marinade.
6. Broil the pork chops for 5 minutes on 1 side then turn the
chops over and place 2 peach slices on top of each pork chop.
Broil for 5 more minutes and then serve.

Orange Glazed Nutmeg Chicken Breasts
Prep Time: 10 Minutes
Cook Time: about 28 Minutes
Ready in: 38 Minutes
Makes 4 servings
Ingredients:
1 1/2 lbs. boneless skinless chicken breasts tenderloins
salt to taste
cracked black pepper to taste
2 tablespoons butter
2 tablespoon nutmeg
4 orange slices
1/3 cup of orange juice.
Directions:
1. Season chicken breasts tenderloins with the salt and cracked
black pepper.
2. In large, nonstick skillet over medium heat, heat the butter.
3. Add chicken breasts and sauté 8 minutes per side or
until golden brown.
4. Add the orange juice then top each chicken breast with the
nutmeg; then top with each with an orange slice.
5. Cover and simmer over medium heat 10 minutes or until chicken
is glazed with juices and cooked through.

** COOKING TIP FROM HAVERHILL BEEF **
Super Snacks for the Super Bowl Game . . .
Besides a television, all you need for a successful Super Bowl
party is plenty of food and drink. It's okay to keep the food
simple for this occasion -- remember that most of it is going
to be scarfed down while everyone's eyes are glued to the television
and not to your painstakingly prepared refreshments. Choose snacks
that can be eaten with your hands or with a single utensil --
you won't want to be balancing on a paper plate in your lap while
you balance a beer bottle between your knees.
Kick Off the Festivities Early:
Start the party a couple of hours before the game is scheduled
to begin -- keep the pre-game show on in the background while
everyone socializes, loads up their plates, places their bets
and gets settled into a comfy spot on the couch. Set up plenty
of tables or TV trays in the living room so that food can be
set down quickly, in time for everyone to leap to their feet
and scream at the television during key moments, as every dedicated
fan does throughout an important game.
Let Everyone "Build their Own":
You may wish to serve an array of snacks and allow everyone to
graze to their heart's content. If you want to go the extra mile
and offer a full-fledged meal to your fellow football fans, a
buffet-style meal is by far the best choice for the occasion.
Everyone loves a "build-your-own" buffet, whether the
main attraction is submarine sandwiches, burritos and nachos,
baked potatoes or pizzas. Use your slow cooker to keep the warm
items at just the right temperature on your buffet table.
Whatever you decide to serve, though, remember that the best
refreshments are those that can be prepared ahead of time, requiring
a minimum of last-minute fuss.

munchies, as well as a slow cooker full of your favorite warm
chili or stew.
