** 3 RECIPES FOR YOU **
Monterey Jack Delmonico Steaks
Prep Time: 10 Minutes
Cook Time: 8 to 10 Minutes
Ready In: 20 to 15 Minutes
Makes 4 servings
Ingredients:
4 Delmonico (Rib Eye) steaks
4 tablespoons fresh lime juice
1/2 cup shredded Monterey Jack cheese
Directions:
1. Preheat grill to medium heat.
2. Place the Delmonico steaks in shallow glass dish; sprinkle
with 1/2 of lime juice. Turn steaks over; sprinkle with remaining
lime juice.
3. Place the steaks on the heated grill grid and grill, uncovered,
6 to 8 minutes for medium rare to medium doneness, turning occasionally.
4. During the last minute of grilling each Delmonico steak,
top each steak evenly with cheese - melting the cheese.
Serve Suggestion: Serve with salsa and heated tortillas.

Sizzling Pork Tenderloin Skillet
Prep Time: 10 Minutes
Cook Time: 16 to 20 Minutes
Ready In: 26 to 30 Minutes
Makes 2 servings
Ingredients:
1 lb. boneless pork tenderloin cut into 1/2-inch cubes
2 cloves garlic, crushed
1 medium onion, peeled and chopped
1 14 1/2-ounce can diced tomatoes
1/2 cup dry white wine
1 teaspoon olive oil
1 red bell pepper, seeded and thinly sliced
1 green bell pepper, seeded and thinly sliced
salt (optional)
black pepper (optional)
Directions:
1. Heat oil in large nonstick skillet over medium-high heat;
sauté the pork tenderloin cubes, garlic and onion until
pork starts to brown, about 4-5 minutes.
2. Add remaining ingredients, lower heat to a simmer, cover
and cook gently for 12-15 minutes.
3. Taste for seasoning, adding salt and black pepper if desired.

Sweet and Sour Grilled Chicken Breasts
Prep Time: 15 Minutes
Marinating Time: 4 to 6 Hours
Cook Time: 30 Minutes
Ready in: 4 hours and 45 Minutes INCLUDING marinating time
Makes 4 servings
Ingredients:
2 lbs. skinless-boneless chicken breast
2 tablespoons brown sugar
1/2 teaspoon ground cloves
1 teaspoon rosemary
1 teaspoon thyme
6 green onions, chopped
1 onion, chopped
3/4 cup soy sauce
1/4 cup lime juice
1/4 cup olive oil
Directions:
1. In a food processor or blender, combine all ingredients EXCEPT
the boneless chicken breasts. Mix for about 15 seconds.
2. Place the chicken breasts in a medium bowl, and cover with
the marinade mixture.
3. Refrigerate for 4 hours, or overnight.
4. Preheat an outdoor grill for high heat, and lightly oil grate.
5. Remove the chicken breasts from the marinade (DISCARD REMAINING
MARINADE) and grill the chicken breast, turning occasionally
for about 15 minutes or until meat thermometer inserted in center
registers 170°F.

STEAKS FOR GRILLING - Charcoal Grill:
1: Prepare charcoal grill for direct cooking. When coals are
medium, ash-covered (in about 30 minutes), spread in single layer.
Position cooking grid. Check cooking temperature.
2: Season beef (straight from refrigerator) with herbs or spices,
as desired. Place on cooking grid directly over coals.
3: Grill according to timetable below, turning occasionally.
After cooking, season beef with salt, if desired.
NOTE: Because gas grill brands vary greatly, please consult your
owners manual for grilling guidelines.

Rib Eye 3/4 inch 6 to 8 minutes
1 inch 11 to 14 minutes
Rib, small end 3/4 inch 6 to 8 minutes
1 inch 9 to 12 minutes
T Bone 3/4 inch 10 to 12 minutes
1 inch 14 to 16 minutes
Porterhouse 3/4 inch 10 to 12 minutes
1 inch 14 to 16 minutes
Top Loin (Strip), 3/4 inch 10 to 12 minutes
boneless 1 inch 15 to 18 minutes
Top Sirloin, 3/4 inch 13 to 16 minutes
boneless 1 inch 17 to 21 minutes
