** 3 RECIPES FOR YOU **

Marinated Grilled London Broil Steak

Prep Time: 5 Minutes
Cook Time: 16 to 18 Minutes
Ready In: about 23 Minutes EXCLUDING marinating time.
Makes 4 to 6 servings

Ingredients:
1 1/2 lbs. London Broil Steak cut about 1 inch thick
Steak Marinade:
1/2 cup Italian dressing
1/4 cup fresh lime juice
1/8 cup lemon juice
1/2 teaspoon basil
1/2 teaspoon thyme
1 tablespoon honey

Directions:
1. In a mixing bowl, mix together the Italian dressing, lime juice, lemon juice, thyme, basil and honey.

2. Place the London Broil Steak and 1/3 of a cup of the steak marinade in a resealable plastic bag; turn to coat. Close the bag and marinate in the refrigerator for 6 hours or up to 24 hours, turning occasionally. Refrigerate remaining marinade.

3. Pre-heat grill to medium heat.

4. Remove the marinated London Broil Steak from the plastic bag; discard the used marinade; and place the steaks on the grill.

5. Cook the London Broil Steak uncovered, 16 to 18 minutes for medium rare to medium doneness, turning occasionally. Brush the London Broil Steak with the remaining (unused) refrigerated marinade occasionally; do not brush during last 5 minutes.

6. To serve, carve the London Broil Steak across the grain into thin slices.

Cancun-Style Pork Tenderloin

Prep Time: 5 Minutes
Cook Time: 15 to 20 Minutes
Ready In: about 25 Minutes EXCLUDING refrigerating time.
Makes 4 to 6 servings

Ingredients:
1 1/2 lbs. boneless pork tenderloin
Pork Rub Mixture:
5 teaspoons chili powder
1 teaspoon rosemary
1 teaspoon thyme
3/4 teaspoon ground cumin
2 crushed cloves garlic
1 teaspoon cracked black pepper
1 tablespoon olive oil

Directions:
1. In a mixing bowl, mix together well the chili powder, rosemary, thyme, cumin, garlic, black pepper and olive oil.

2. Rub the mixture over all surfaces of the pork tenderloin. Cover and refrigerate at least 2 hours or as long as overnight.

3. Pre-heat grill to medium heat.

4. Grill the pork tenderloins, turning occasionally, for 15 to 20 minutes, until thermometer inserted reads 155 to 160 degrees F. Slice to serve.

Grilled Lemon-Ginger Chicken Tenderloins

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 3 to 4 servings

Ingredients:
2 lbs. boneless chicken tenderloins
Lemon-Ginger Basting Mixture:
1/2 cup lemon marmalade
1 1/2 teaspoons ground ginger
1 tablespoon soy sauce
1/2 teaspoon thyme
1 teaspoon dried basil
1/2 teaspoon rosemary

Directions:
1. Pre-heat grill to medium heat.

2. In a small mixing bowl, blend together the lemon marmalade, ginger, soy sauce, thyme, basil and rosemary. Set aside.

3. Place the chicken tenderloins on the grill grids and cook, turning occasionally and basting with marmalade-ginger mixture, 15 minutes or until meat thermometer inserted in thickest part of tenderloin registers 180°F. Note: Do not baste during last 5 minutes of grilling.

1: Heat nonstick skillet over medium heat for steaks 3/4 inch or thicker or to medium-high heat for steaks 1/2" or thinner.

2: Place steaks in preheated skillet (do not overcrowd). Do not add water or cover.

3: Cook steaks according to timetable below, turning once.

BEEF STEAK THICKNESS TOTAL COOKING TIME
Eye Round 1/2 inch 2 to 4 minutes

Round Tip 1/8 to 1/4 inch 1 to 2 minutes

Tenderloin 3/4 inch 7 to 9 minutes
1 inch 10 to 13 minutes

Rib Eye (Delmonico) 3/4 inch 8 to 10 minutes
1 inch 12 to 15 minutes

Top Loin (Strip), 3/4 inch 10 to 12 minutes
boneless 1 inch 12 to 15 minutes

Top Sirloin, 3/4 inch 10 to 13 minutes
boneless 1 inch 15 to 20 minutes

T Bone/Porterhouse 3/4 inch 11 to 13 minutes
1 inch 14 to 17 minutes
