** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Steakhouse Sirloin Tip Beef Stew
Prep Time: 20 Minutes
Cook Time: 2 Hours
Ready in: 2 Hours and 20 Minutes
Makes 6 servings
Ingredients:
2 lbs. Haverhill Beef Marinated Steakhouse Sirloin Tips
1 tablespoon olive oil
1 teaspoon dried thyme leaves
1 teaspoon rosemary
1/2 cup red wine
3 large cloves garlic, crushed
2 cups baby carrots
1 cup frozen whole pearl onions
1/2 tsp. salt
1/2 tsp. pepper
1 can (13-3/4 ounces) beef broth
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 package (8 ounces) frozen sugar snap peas
Directions:
1. Cut the sirloin tips into 1 inch pieces.
2. In Dutch oven, heat oil over medium-high heat until hot.
Add beef (half at a time) and brown evenly, stirring occasionally.
Pour off drippings. Season with thyme, rosemary, salt and pepper.
Stir in broth, wine and garlic. Bring to a boil reduce heat to
low. Cover tightly and simmer 1 and 1/2 hours.
3. Add the carrots and onions. Cover and continue cooking
35 to 40 minutes or until beef and vegetables are tender.
4. Bring bthe eef stew to a boil over medium-high heat. Add
the cornstarch mixture; cook and stir 1 minute. Stir in sugar
snap peas.
5. Reduce the heat to medium and cook 3 to 4 minutes or until
peas are heated through.

Apricot-Honey Glazed Grilled Pork Loin Roast
Prep Time: 15 Minutes
Cook Time: about 1 Hour and 45 Minutes
Ready in: 2 Hours and 15 Minutes
Makes 6 to 8 servings
Ingredients:
6 pound bone in pork loin roast
1 tablespoon dry mustard
salt
fresh ground pepper
Apricot-Honey Glaze:
1/2 cup apricot preserves
1/2 cup honey
1/4 water
2 tablespoons steak sauce
Directions:
1. Rub the dry mustard into pork loin roast and sprinkle with
the salt and ground pepper.
2. Make a drip pan of aluminum foil about 1 and 1/2 inches
deep and extending about 3 inches on each side of roast; place
under roast.
3. Preheat grill to medium heat.
4. Place the pork roast on the grill about 6 inches above
heat. Close hood of grill. Cook for 1 to 1 1/2 hours or until
meat thermometer registers 150 degrees F.
Make Apricot-Honey Glaze:
5. Combine apricot preserves, honey, water and steak sauce
in a small saucepan. Heat until bubbly, and brush on roast.
6 Grill an additional 20 minutes or until meat thermometer
registers 155 degrees F., basting often with sauce.
7. Let roast stand for 10 to 15 minutes before carving to
allow juices to set.

Oriental-Style Grilled Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
2 lbs. boneless chicken breasts
3 tablespoons firmly packed brown sugar
1/4 cup sesame oil
1/2 cup soy sauce
2 tablespoons honey
2 cloves garlic, finely chopped
1/2 teaspoon ground ginger
Directions:
1. Pre-heat grill to medium heat.
2. In small saucepan, over medium-high heat, brown sugar,
oil, soy sauce, honey, garlic and ginger to a boil, stirring
occasionally. Remove from heat.
3. Place the chicken breasts on the heated grill grid and
grill, uncovered, turning occasionally and basting with the basting
sauce, 15 minutes or until meat thermometer inserted in center
registers 170°F. Note: Do not baste during last 5 minutes
of grilling.

** PORK GRILLING TIPS **
There are two ways to grill pork depending on the size of
the pork cut:
Direct Heat Method:
Place the pork directly over the heat source. This method
is ideal for small cuts like kabobs, tenderloin, burgers and
chops.
~~ 3 Easy Steps For Using The Direct Heat Method For Pork:
- Arrange hot coals evenly on the fire grate of the grill
or use all gas burners.
- Place pork directly above the heat source.
- Follow recipe suggested cooking times, turning once during
cooking.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Indirect Heat Method:
Place the pork on the grill rack away from the coals or gas
burners. This method is good for large cuts like loin roasts,
ribs, shoulder and fresh ham.
~~ 3 Easy Steps For Using The Indirect Heat Method For Pork:
- Bank hot coals on both sides of the fire grate, on one side
of the grill or in a ring around the perimeter. For gas grills,
pre-heat and then turn off any burners directly below where the
food will go.
- Place pork on the grill so it is not directly over any coals
or gas burners and close grill hood.
- Follow recipe suggested cooking times until pork is done. The
heat circulates inside the grill, so turning the pork is not
necessary.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
