** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Oriental Grilled First Cut Top Round Steak
Prep Time: 5 Minutes
Cook Time: 8 to 9 Minutes
Ready In: about 24 Minutes EXCLUDING marinating time.
Makes 4 servings
Ingredients:
2 lbs. first cut top round steak cut about 3/4 inch thick
Oriental Marinade:
3/4 cup teriyaki sauce
6 Tbsp. olive oil
3 ounces fresh ginger, finely chopped
1/3 cup garlic, minced
1-1/2 tsp. red chili peppers, crushed
Directions:
1. In a mixing bowl, mix together the teriyaki sauce, olive oil,
ginger, garlic and red chili peppers.
2. Place the first cut top round steak and 1/3 of a cup of
the steak marinade in a resealable plastic bag; turn to coat.
Close the bag and marinate in the refrigerator for about 6 hours
or up to 24 hours, turning occasionally. Refrigerate the remaining
marinade.
3. Pre-heat grill to medium heat.
4. Remove the marinated first cut top round steak from the
plastic bag; discard the used marinade; and place the steaks
on the grill.
5. Cook uncovered, 8 to 9 minutes for medium rare to medium
doneness, turning occasionally. Brush the steak with the remaining
(unused), refrigerated marinade occasionally; do not brush during
last 5 minutes.
6. To serve, carve the first cut top round steak across the
grain into thin slices.

Grilled Garlic And Thyme Rubbed Top Round Steak
Prep Time: 5 Minutes
Cook Time: 8 to 9 Minutes
Ready In: about 24 Minutes
Makes 4 servings
Ingredients:
2 lbs. top round steak cut about 3/4 inch thick
Garlic and Rosemary Rub:
4 cloves garlic, crushed
2 teaspoons salt
2 teaspoons thyme
2 teaspoons cracked black pepper
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine the garlic, salt, rosemary and
cracked black pepper. Mix until well blended.
3. Rub the mixture evenly over the top and bottom surfaces
of the top round steak.
4. Place the steaks on the pre-heated grill grid and grill,
uncovered, 8 to 9 minutes for medium rare to medium doneness,
turning occasionally.
6. To serve, carve the top round steak across the grain into
thin slices.

Summer Grilled Beef Tenderloin Steaks
Prep Time: 5 Minutes
Cook Time: about 6 Minutes
Ready in: about 1 Hour and 10 Minutes WITH chilling time
Makes 4 servings
Ingredients:
4 beef tenderloin steaks cut about 3/4 inch thick
2 teaspoon fresh parsley flakes
2 teaspoon fresh rosemary
2 teaspoon thyme
3 tablespoons olive oil
Directions:
1. In a bowl, combine the parsley, rosemary, thyme and olive
oil; then brush the mixture onto all sides of the beef tenderloin
steaks.
2. Place the steaks on a glass plate, cover and chill in the
refrigerator for about 1 hour.
3. Preheat grill to medium heat.
4. Place the steaks on the preheated grill grid and grill,
uncovered, for 4 to 6 minutes or until the internal temperature
has reached 140ºF for medium-rare or 145ºF for medium
doneness, turning once.

** COOKING TIPS **
Here are a few beef grilling tips that can help make your next
cook-out or backyard barbeque a huge success!
- Grilling beef at medium to medium-low temperatures ensures
even cooking. If the temperature is too high, beef can char and
become overcooked on the outside before the interior reaches
the desired doneness. Charring beef is not recommended.
- Trim excess fat from meats to avoid flare-ups while grilling.
- Use long-handled tongs for turning steaks; spatulas for
beef burgers. A fork will pierce the beef causing loss of flavorful
juices.
- For best results, use an instant-read thermometer to determine
doneness. For steaks and burgers, insert the thermometer horizontally
into the side (not the top) to check the internal temperature.
- Cook beef burgers to at least 160°F (medium doneness).
- Cook steaks to at least 145°F (medium rare doneness).

Meat Thermometer Reminders:
- Make sure the thermometer is oven-proof.
- Make sure the thermometer you buy is designed for meat. There
are other types of thermometers, for example, candy thermometers.
- Make sure the thermometer is inserted into the center of the
thickest part of the meat, away from bone, fat and gristle.
- Do not let the thermometer touch the cooking pan.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
