** 3 BONELESS CHICKEN BREAST RECIPES FOR YOU **

Mediterranean Style Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: about 35 Minutes
Makes 3 to 4 servings

Ingredients:
1 1/2 pounds boneless and skinless chicken breasts
1 cup of feta cheese
Seasoning Rub:
2 tsp. garlic powder
2 tsp. dried oregano leaves
1/2 tsp. pepper

Directions:
1. Preheat oven to 350°F.

2. In small mixing bowl, combine thoroughly all the Seasoning Rub ingredients.

3. Rub the seasoning mixture on all sides of the chicken breasts.

4. Arrange chicken breast in 13 inch by 9 inch baking pan.

5. Bake in oven for 25 minutes.

6. Remove baking pan from oven.

7. Sprinkle the tops of the chicken breasts with the cheese.

8. Bake an additional 5 minutes or until chicken is cooked through and cheese is melted.

Dijon-Parsley Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: about 35 Minutes

2 Tbsp. Dijon-style mustard
1 Tbsp. cracked black pepper
2 large cloves garlic, minced
1 tsp. salt

2. In small mixing bowl, combine thoroughly all the Seasoning Rub ingredients.

3. Rub the seasoning mixture on all sides of the chicken breasts.

4. Arrange chicken breast in 13 inch by 9 inch baking pan.

5. Bake in oven for 30 minutes or until chicken is cooked through.

Southwest Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: about 35 Minutes
Makes 3 to 4 servings

Ingredients:

1-1/2 tsp. chili powder
1 tsp. garlic powder
1/2 tsp. dried oregano leaves, crushed
1/4 tsp. ground cumin

Directions:
1. Preheat oven to 350°F.

2. In small mixing bowl, combine thoroughly all the Seasoning Rub ingredients.

3. Rub the seasoning mixture on all sides of the chicken breasts.

4. Arrange chicken breast in 13 inch by 9 inch baking pan.

5. Bake in oven for 30 minutes or until chicken is cooked through.

** COOKING TIPS FROM HAVERHILL BEEF **

Using Your Crock Pot. . .

With the fall cooler weather upon us in the northeast U.S.A., its time to dust off your crock pot and start preparing those "comfort food" meals you know your family loves! Below you will find some crock pot helpful hints to make your cooking experience more enoyable .

Helpful Hints:
- Make sure the ingredients fill the crock pot at least half full so the foods cook properly and the liquid does not cook away.
- Check to see that the crock pot lid fits completely without tilting or being askew.
- Do not remove the crock potlid during cooking unless the recipe directs you to add ingredients or stir. The heat loss caused by removing the lid unnecessarily can result in extra cooking time.
- Crock pot cooking may take longer at high altitudes.
- Be sure to follow recipe directions.

Basics:
- Choose the economical, less tender meat cuts for crock pot cooking. These include cuts from the chuck and round such as pot roasts and pieces of beef for stews and soups. The long, slow cooking process ensures fork-tender, moist and flavorful beef.
- Save quick-cooking ground beef and tender roasts for other meals and cooking methods.
- Use beef straight from the refrigerator. Do not use frozen meat for recipes. Defrost meat in the refrigerator, never at room temperature
- Trim visible fat from meat before placing in the crock pot to help reduce fat in the finished dish.
- Place vegetables on the bottom and around the sides of the crock pot; place meat atop vegetables. (Meat tends to cook faster than vegetables in the crock pot.)

Safety Savvy:
Following recipe directions helps ensure that foods are cooked properly and to the correct doneness. When the crock pot is complete, don’t forget these helpful safety tips.
- Remove food from the crock pot within one hour after it is finished cooking. Refrigerate leftovers promptly.
- Do not reheat foods in the crock pot because it takes too much time for the food to reach a safe internal temperature.
- Cool the crock pot before adding water for cleaning; otherwise the crockery or stoneware liner could crack.
