** 3 RECIPES FOR YOU **
Southwest Club Sirloin Steaks
Prep Time: 10 Minutes
Cook Time: 11 Minutes
Ready In: about 21 minutes
Makes 4 servings
Ingredients:
4 boneless Club Sirloin steaks
1/2 cup chunky salsa
1/2 cup black beans, drained and rinsed
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder, divided
2 teaspoons chopped fresh oregano
Directions:
1. Preheat the oven broiler.
2. Mix the salsa, beans, onion, cilantro, lime juice and 1/2
teaspoon of the chili powder. Cover and refrigerate while preparing
beef.
3. Sprinkle both sides of Club Sirloin steaks with remaining
1 teaspoon chili powder and the oregano; gently press into the
Club Sirloin steaks.
4. Place the Club Sirloin steaks on rack in broiler pan. Broil
with tops of steaks about 4 to 6 inches from heat 6 minutes;
turn. Broil 3 to 5 minutes longer for medium doneness.
5. Serve with salsa.

Seasoned Pork Tenderloins
Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready In: 25 Minutes
Makes 4 servings
Ingredients:
1 whole boneless pork tenderloin, cut into 8 crosswise pieces
2 teaspoons lemon pepper
1 teaspoon rosemary
1/2 teaspoon thyme
1 tablespoon butter
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon Dijon-style mustard
1 tablespoon minced parsley
Directions:
1. In a mixing bowl, combine the lemon pepper, rosemary and thyme.
2. Place each piece of tenderloin between 2 pieces of plastic
wrap. Flatten slightly with heel of hand. Sprinkle surfaces of
pork with lemon pepper mixture above.
3. Heat butter in heavy nonstick skillet; brown pork evenly,
about 3-4 minutes on each side. Remove to serving platter, keep
warm.
4. Add lemon juice, Worcestershire sauce and mustard to skillet.
Cook, stirring with pan juices, until heated through.
5. Pour sauce over cooked pork tenderloins; sprinkle with parsley
and serve.

Italian-Style Chicken Breasts
Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready In: 25 Minutes
Makes 4 servings
Ingredients:
1 1/4 lbs boneless skinless chicken breasts
1/3 cup olive oil
1/4 cup lemon juice
1 cup crushed tomatoes
1 tsp. salt
1/4 tsp. ground pepper
3 cloves garlic, finely chopped
1 tsp. thyme
1 tsp. rosemary
1 tsp. basil
Directions:
1. Preheat broiler.
2. In a small mixing bowl, combine the olive oil, salt, pepper,
lemon juice, crushed tomatoes, garlic, thyme, oregano, rosemary,
and basil.
3. Place the chicken breasts on a broiling pan and broil chicken,
turning occasionally and basting with the mixture above mixture
for 15 minutes or until meat thermometer inserted in center registers
170°F. Note: Do not baste during the last 5 minutes of broiling.

5, 2004, at the AMVETS, Post 147, 575 Primrose Street, Haverhill,
MA 01830 from 7:00 pm to 12:00 midnight. All proceeds to purchase
a Braille Reader for 9 year old Nicholas.
Suggested Donation: $25.00 per person

Nicholas is a 9 year old who as an infant was diagnosed with
Lebers Congenital Amurosis, a degenerative eye disease that has
caused him to lose most of his sight. Nicholas is a resilient
young boy who has shown a great deal of courage during this hard
transition and has faced these challenges with triumph. Last
year Nicholas was one of the finalists selected to compete in
the National Braille Challenge in California and he did very
well. Unfortunately he is finding it hard to continue this progress
due to the lack of resources and technology available to him.
