** LET'S TALK TURKEY FROM THE USDA/FSIS **
Fresh or Frozen? . . . .
Fresh Turkeys
- Allow 1 pound of turkey per person.
- Buy your turkey only 1 to 2 days before you plan to cook it.
- Keep it stored in the refrigerator until you're ready to cook
it. Place it on a tray or in a pan to catch any juices that may
leak.
- Do not buy fresh pre-stuffed turkeys. If not handled properly,
any harmful bacteria that may be in the stuffing can multiply
very quickly.
Frozen Turkeys
- Allow 1 pound of turkey per person.
- Keep frozen until you're ready to thaw it.
- Turkeys can be kept frozen in the freezer indefinitely; however,
cook within 1 year for best quality.
- See "Thawing Your Turkey" for thawing instructions
below.
Frozen Pre-Stuffed Turkeys
- USDA recommends only buying frozen, pre-stuffed turkeys that
display the USDA or State mark of inspection on the packaging.
These turkeys are safe because they have been processed under
controlled conditions.
- DO NOT THAW before cooking. Cook from the frozen state. Follow
package directions for proper handling and cooking.
- Allow 1 1/4 pounds of turkey per person.

Thawing Your Turkey . . . .
There are three ways to thaw your turkey safely - in the refrigerator,
in cold water, or in the microwave oven.
In the Refrigerator (40 °F or below)
Allow approximately 24 hours for every 4 to 5 pounds
4 to 12 pounds 1 to 3 days
12 to 16 pounds 3 to 4 days
16 to 20 pounds 4 to 5 days
20 to 24 pounds 5 to 6 days
Keep the turkey in its original wrapper. Place it on a tray or
in a pan to catch any juices that may leak. A thawed turkey can
remain in the refrigerator for 1 to 2 days. If necessary, a turkey
that has been properly thawed in the refrigerator may be refrozen.
In Cold Water
Allow approximately 30 minutes per pound
4 to 12 pounds 2 to 6 hours
12 to 16 pounds 6 to 8 hours
16 to 20 pounds 8 to 10 hours
20 to 24 pounds 10 to 12 hours
Wrap your turkey securely, making sure the water is not able
to leak through the wrapping. Submerge your wrapped turkey in
cold tap water. Change the water every 30 minutes. Cook the turkey
immediately after it is thawed. Do not refreeze.
In the Microwave Oven
Check your owner's manual for the size turkey that will fit in
your microwave oven, the minutes per pound, and power level to
use for thawing.
Remove all outside wrapping.
Place on a microwave-safe dish to catch any juices that may leak.
Cook your turkey immediately. Do not refreeze or refrigerate
your turkey after thawing in the microwave oven.
REMINDER: Remove the giblets from the turkey cavities after thawing.
Cook separately.

family. 2004 marks an unprecedented 150 years of family winemaking,
and the Mirassou Winery invites you to join them in celebrating
their rich history, optimistic spirit, and uniquely expressive
wines.
A few of the Mirassou Wines at Haverhill Beef:
Mirassou Central Coast Chardonnay
Taste Profile: The 2002 Mirassou Central Coast Chardonnay
is distinctly soft and approachable yet crisp and fruit-forward.
The wine displays intense fruit flavors of citrus, green apple
and tree fruits such as pear and peach which are enhanced by
subtle creamy and slightly toasty characters as a result of partial
aging in oak barrels. Crisp and delicately structured, as a result
of the cooler but sunny growing conditions that provide naturally
firm acid levels, this wine is extremely food friendly.
Winemaker Notes: The grapes used to create the Mirassou 2002
Central Coast Chardonnay were primarily sourced from Monterey
and the Central Coast. The cooler temperatures of the Central
Coast yields a longer growing season, allowing the grapes to
develop deep flavors which results in intensely flavorful wines.
Pairing Suggestions: We enjoy this fresh, fruit-forward Chardonnay
with seafood and poultry dishes, and both mild and flavorful
cheeses..

Mirassou California Sauvignon Blanc
Taste Profile: The 2003 Mirassou California Sauvignon Blanc
shows how much fun a Sauvignon Blanc can be to drink. It's a
lively, zingy wine that features tropical fruit and melon notes
highlighted by subtle grassy characters. The crisp acidity and
bright fruit in our Mirassou 2003 California Sauvignon Blanc
makes it easy to pair with food or refreshing to drink by the
glass.
Winemaker Notes: The grapes used to create the Mirassou 2003
California Sauvignon Blanc were sourced from a number of California's
finest growing regions: Central Coast, Sonoma, Lake County and
Mendicino. This combination of cooler and warmer growing regions
contributes a gentle complexity to the flavor profile by allowing
the crisp acidic fruit characters from our northern vineyards
to blend with the ripe fruit characters from the southern vineyards.
The grapes were gently whole cluster pressed to eliminate
harshness, cold settled for 36-48 hours and then fermented in
stainless steel tanks to retain their naturally high acidity
level and contribute a clean, crisp structure to the wine. After
2 -3 weeks of fermentation, the wine was blended with small percentages
of Semillon, Viognier and California Muscat to add a subtle layer
of floral character and sweetness to the wine.
Pairing Suggestions: A versatile wine, our refreshing Sauvignon
Blanc pairs well with a range of foods from spicy Thai dishes
to summer salads and pasta.

Mirassou California Merlot
Taste Profile: Our 2001 Mirassou California Merlot displays
ripe black fruit flavors of black cherry and blackberry. These
primary flavors are augmented with secondary flavors of vanilla,
toasty oak and spices including clove and nutmeg. The addition
of complementary varietals contributes to a velvety mouthfeel
and lingering, pleasant smooth finish.
Winemaker Notes: The Mirassou 2001 California Merlot was predominantly
sourced from Livermore valley to take advantage of the region's
ability to produce pronounced blueberry and blackberry tones.
The region's hilly terrain creates multiple types of soil which
produces a rich blend of deep fruit flavors, enhancing the wine's
complexity.
Primarily composed of Merlot, North Coast Cabernet Sauvignon
and Syrah were included to add structure and enhance flavor complexity.
North Coast Pinot Noir has also been added to soften the wine
and round out the velvety mouthfeel, the signature of a premium
California Merlot.
Pairing Suggestions: We suggest enjoying this flavorful Merlot
with preparations of beef, lamb, and game.

Nicholas is a 9 year old who as an infant was diagnosed with
Lebers Congenital Amurosis, a degenerative eye disease that has
caused him to lose most of his sight. Nicholas is a resilient
young boy who has shown a great deal of courage during this hard
transition and has faced these challenges with triumph. Last
year Nicholas was one of the finalists selected to compete in
the National Braille Challenge in California and he did very
well. Unfortunately he is finding it hard to continue this progress
due to the lack of resources and technology available to him.
