** 3 RECIPES FOR YOU **

Grilled Thai-Style T Bone Steaks

Prep Time: 10 Minutes
Cook Time: 15 minutes
Ready in: 25 Minutes WITHOUT marinating time.
Makes 4 servings

Ingredients:
4 T Bone Steaks, cut about 1 inch thick
Sesame-Ginger Mixture:
2 tablespoons sesame seeds
1 teaspoon ground ginger
1/2 cup soy sauce
2 tablespoons brown sugar
2 tablespoons olive oil
2 teaspoons onion powder
2 teaspoons lemon juice

Directions:
1. In a mixing bowl, combine the Sesame-Ginger mixture ingredients.

2. Place the T Bone Steaks and the Sesame-Ginger mixture in food-safe re-sealable plastic bag; turn to coat. Close the bag securely and marinate in refrigerator 4 hours or as long as overnight, turning occasionally.

3. Preheat grill to medium heat.

4. Remove the T Bone Steaks from the plastic bag. (Note: Drain and discard marinade.) and place the T Bone Steaks on the preheated grill grids and grill, uncovered, 14 to 16 minutes for medium rare to medium doneness, turning occasionally.

5. Remove the T Bone Steaks from the grill. Let stand 5 minutes; then serve.

Grilled Rosemary-Apple Chicken Breasts With Honey-Glaze

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready in: 25 Minutes WITHOUT marinating time.
Makes 3 to 4 servings

Ingredients:

2 1/2 lbs. boneless skinless chicken breasts
2 tablespoon honey
cooking spray
Marinade:
8 tablespoons apple juice
8 tablespoons lemon juice
5 teaspoons cider vinegar
5 teaspoons olive oil
2 teaspoons rosemary
2 medium apples; peeled and quartered

Sauce
3 teaspoons cornstarch
1/2 teaspoon rosemary
1/2 teaspoon dried thyme
1 cup apple juice

Directions:
1. In a mixing bowl, combine the apple juice, lemon juice, cider vinegar, olive oil rosemary and apples quarters. Set aside 1/2 cup for basting; cover and refrigerate.

2. Place the boneless chicken breasts and HALF of the marinade mixture in food-safe re-sealable plastic bag; turn to coat. Close the bag securely and marinate in refrigerator for about 2 hours turning occasionally.

3. Coat grill rack with nonstick cooking spray before starting the grill.

5. Preheat grill to medium heat.

6. Meanwhile, drain and discard marinade from chicken breasts. Dip the apples in reserved marinade. Set aside.

7. Combine the honey with the remaining marinade.

8. Place the chicken breasts on the preheated grill grids and grill, uncovered, turning occasionally and basting with honey marinade mixture, 15 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not baste during the last 5 minutes of grilling.

9. Grill apples, uncovered, for 3 to 5 minutes, basting and turning frequently or until lightly browned.

10. Meanwhile, in a saucepan, combine the cornstarch, rosemary, thyme and apple juice until blended. Bring to a boil; cook and stir for 2 minutes or until thickened.

11. Slice the grilled apples; stir into sauce. Serve with chicken.

Grilled Pork Kabobs With Peppers

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready in: 25 Minutes WITHOUT marinating time.
Makes 4 servings

Ingredients:
2 lbs. pork tenderloin, cut into 1 inch cubes
Metal skewers
2 medium red bell peppers, cut into 1 inch pieces
2 medium yellow bell peppers, cut into 1 inch pieces
Marinade:
1 cup soy sauce
1 cup lime juice
1 cup of lemon juice
4 tablespoons brown sugar
4 garlic cloves, minced
2 teaspoon cracked black pepper
1/2 teaspoon thyme

Directions:
1. In a mixing bowl, combine the soy sauce, lime juice, lemon juice, brown sugar, garlic black pepper and thyme. Set aside 1/2 cup for basting; cover and refrigerate.

2. Place the pork tenderloin cubes and HALF of the marinade mixture in food-safe re-sealable plastic bag; turn to coat. Close the bag securely and marinate in refrigerator for about 3 hours turning occasionally.

3. Coat grill rack with nonstick cooking spray before starting the grill.

4. Preheat grill to medium heat.

5. Meanwhile, on metal skewers, alternate the pork and the peppers. Drain and discard the marinade.

6. Grill the pork kabobs, uncovered, for 12-15 minutes longer or until meat juices run clear, turning and basting frequently with reserved marinade.

With hurricane season upon the United States of America, Haverhill Beef would like to provide you with the following USDA Consumer Alert that can be helpful to all for keeping food safe during an emergency no matter where you may reside or what the season.

USDA CONSUMER ALERT: Keeping Food Safe During An Emergency* . . . . .

WASHINGTON, July 18, 2005 - The U.S. Department of Agriculture is providing recommendations in advance of Hurricane Emily, which is expected to impact the Gulf Coast of Texas as early as Tuesday. USDA is hopeful that this information will help minimize the potential for foodborne illnesses due to power outages or flooding as a result of the adverse weather conditions.

Steps to follow to prepare for a possible weather emergency:

- Keep an appliance thermometer in the refrigerator and freezer. An appliance thermometer will indicate the temperature in the refrigerator and freezer in case of a power outage and help determine the safety of the food.
- Make sure the freezer is at or below 0° F and the refrigerator is at or below 40° F.
- Freeze containers of water for ice to help keep food cold in the freezer, refrigerator or coolers after the power is out.
- Freeze refrigerated items such as leftovers, milk and fresh meat and poultry that you may not need immediately - this helps keep them at a safe temperature longer.
- Plan ahead and know where dry ice and block ice can be purchased.
- Store food on shelves that will be safely out of the way of contaminated water in case of flooding.
- Have coolers on hand to keep refrigerator food cold if the power will be out for more than four hours. Purchase or make ice cubes and store in the freezer for use in the refrigerator or in a cooler. Freeze gel packs ahead of time for use in coolers.
- Group food together in the freezer - this helps the food stay cold longer.

Steps to follow after the weather emergency:

- Keep the refrigerator and freezer doors closed as much as possible to maintain the cold temperature.
- The refrigerator will keep food safely cold for about 4 hours if it is unopened. A full freezer will hold the temperature for approximately 48 hours (24 hours if it is half full and the door remains closed.)
- Food may be safely refrozen if it still contains ice crystals or is at 40° F or below.
- Never taste a food to determine its safety!
- Obtain dry or block ice to keep your refrigerator and freezer as cold as possible if the power is going to be out for a prolonged period of time. Fifty pounds of dry ice should hold an 18-cubic-foot full freezer for 2 days.
- If the power has been out for several days, then check the temperature of the freezer with an appliance thermometer or food thermometer. If the food still contains ice crystals or is at 40° F or below, the food is safe.
- If a thermometer has not been kept in the freezer, then check each package of food to determine its safety. If the food still contains ice crystals, the food is safe.
- Discard refrigerated perishable food such as meat, poultry, fish, soft cheeses, milk, eggs, leftovers and deli items after 4 hours without power.
- Drink only bottled water if flooding has occurred.
- Discard all food that came in contact with flood waters, including canned goods. Discard wooden cutting boards, plastic utensils, baby bottle nipples and pacifiers.
- Thoroughly wash all metal pans, ceramic dishes and utensils that came in contact with flood water with hot soapy water and sanitize by boiling them in clean water or by immersing them for 15 minutes in a solution of 1 teaspoon of chlorine bleach per quart of water.
- When in Doubt, Throw it Out!
