** 3 RECIPES FOR YOU **
Grilled Italian-Style London
Broil Steaks
Prep Time: 5 Minutes
Cook Time: 12 to 15 Minutes
Ready In: 15 to 19 Minutes
Makes 4 servings
Ingredients:
2 lbs. London Broil Steak
dash of salt (optional)
1/2 cup shredded parmesan cheese
Seasoning Mixture:
2 tsp. fresh chopped thyme
3 tsp. minced cloves garlic
1 tsp. black pepper
1 tsp. oregano
1 tsp. rosemary
1 tsp. Italian Seasoning
1/2 tsp. olive oil.
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine
thoroughly the thyme, garlic, black pepper, oregano, rosemary,
Italian seasoning and olive oil until well blended.
3. Rub the seasoning mixture
onto both sides of each steak, pressing evenly.
4. Place steaks on heated grill
grid and grill, covered, 12 to 15 minutes for medium rare to
medium doneness, turning once. During last 2 minutes of grilling,
sprinkle with the parmesan cheese. Season with salt, as desired.

Old Fashion Rotisserie Roast
Beef
Prep Time: 5 Minutes
Marinating Time: 12 to 24 Hours
Cook Time: 1 Hour and 30 minutes
Ready in: 1 Hour and 35 Minutes (excluding marinating time)
Makes 6 servings
Ingredients:
3 lbs beef roast (holiday roast, eye of round, rump roast etc.)
Marinade:
2 tbsp honey
2 tbsp soy sauce
1/2 tsp Tabasco sauce
1/4 cup lime juice
1 tsp ground cumin
2 tbsp oyster sauce (optional)
Directions:
1. Pierce beef roast numerous times with a fork. Combine marinade
ingredients in shallow container or resealable freezer bag, reserving
2 tbsp of the marinade for basting roast while barbecuing.
2. Marinate roast 12-24 hours
in refrigerator. Discard used marinade.
3. Preheat grill to medium heat.
4. Insert meat thermometer into
center of beef roast.
5. Cook on rotisserie over drip
pan in closed grill over INDIRECT HEAT for about 1 1/2 hours
(rare = internal temperature of 140ºF or medium = internal
temperature of 160ºF).
6. Baste beef roast with the
reserved marinade while barbecuing.

Grilled Honey And Lemon Boneless
Chicken Tenders
Prep Time: 5 Minutes
Cook Time: about 14 Minutes
Ready in: about 19 Minutes
Makes 4 servings
Ingredients:
1 1/2 lbs boneless skinless chicken tenderloins
1/3 cup lemon juice
1/2 cup of honey
1/4 cup of lime juice
2 tablespoons olive oil
2 cloves garlic, finely chopped
1 tablespoon chopped fresh rosemary
1/4 teaspoon salt
1 tablespoon fresh chopped thyme
1/2 teaspoon parsley
1/4 teaspoon crack black pepper
Directions:
1. Pre-heat grill to medium heat.
2. In medium bowl, mix together
the lemon juice, honey, lemon juice, olive oil, garlic, rosemary,
salt, thyme, parsley and pepper until well blended.
3. Place the chicken tenderloins
on the heated grill grid and grill, turning occasionally and
basting with honey-lemon mixture, about 14 minutes or until meat
thermometer inserted in center registers 170°F. Note: Do
not baste during the last 5 minutes of grilling.

Beef . . . .
On the grill, in the oven, or
part of your favorite recipe... you'll find Chairman's Reserve

STEAKS FOR BROILING:
1: Set oven regulator for broiling;
preheat for 10 minutes. Please consult your owners manual
for specific broiling guidelines.
2: Place beef on rack of broiler
pan. Season beef straight from the refrigerator with herbs
or spices, as desired. Position broiler pan so that surface of
beef is within the distance from heat specified in timetable
below.
3: Broil according to timetable,
turning once. After cooking, season beef with salt, if desired.
