** 3 RECIPES FOR YOU **

Hickory Smoked New York Sirloin Steaks

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready in: 25 Minutes
Makes 4 servings

Ingredients:
2 lbs New York Sirloin Steak about 1 inch thick
salt and pepper, to taste
Chili Powder Mixture:
2 Tbsp. chili powder
2 Tbsp. brown sugar
1/2 tsp. finely minced garlic
2 tsp. olive oil

Directions:
1. Combine chili powder, sugar and garlic. Add olive oil and combine to paste-like consistency.

2. Season the New York Sirloin Steak with salt and pepper then rub chili powder mixture into both sides of the New York Sirloin Steak.

2. Preheat grill to medium heat.

3. "Cold Smoke" the New York Sirloin Steak for approximately 8 minutes. To cold smoke: Heat one side of grill, adding hickory chips (or wood of your preference). When coals are hot, place the New York Sirloin Steak on grid away from fire so meat is not directly over heat.

4. Finish by Indirect Grilling for approximately 4 minutes on each side to desired doneness.

Grilled Boneless Honey-Mustard Pork Roast

Prep Time: 10 Minutes
Cook Time: 40 to 50 Minutes
Ready in: about 1 Hour including resting time
Makes 6 servings

Ingredients:
2 pound boneless pork roast
3/4 cup honey
1/4 cup cider vinegar
1 teaspoon rosemary
1 teaspoon dry mustard
1 teaspoon rosemary

Directions:
1. Preheat grill to medium heat.

2. In small bowl stir together honey, vinegar, rosemary and mustard.

3. Grill pork roast over Indirect Heat for 20 minutes.

4. Brush pork roast occasionally with honey-mustard mixture, grilling for 20-30 minutes more, until meat thermometer reads 150-155 degrees F.

5. Remove pork roast from grill and let rest for 10 minutes before slicing to serve.

Grilled Rosemary-Marjoram Stuffed Pork Chops

Prep Time: 10 Minutes
Cook Time: 16 to 20 Minutes
Ready in: 26 to 30 Minutes
Makes 4 servings

Ingredients:
4 extra-thick bone-in pork chops, about 1 inch to 1 1/4 inches thick
3/4 cup dry breadcrumbs
large pinch dry rosemary, crumbled fine
large pinch dry marjoram, crumbled fine
1 Tbsp. melted butter
1/2 cup sweet onion, minced
1 small clove garlic, minced
1/2 tsp. salt

Directions:
1. Make pockets in the chops by slitting from the edge of the eye to the bone with a sharp knife.

2. Combine the breadcrumbs, butter, garlic, onion, rosemary, marjoram and salt, and stuff the mixture into the pockets. Use a small skewer if necessary to hold the edges closed.

3. Preheat grill to medium-high heat.

4. Grill the chops for 8 to 10 minutes per side, turning several times, until the fat is crisp and the meat nicely browned.

** GRILLING TIP FROM HAVERHILL BEEF **

QUESTION: Do you have any grilling tips to prepare ribs on the grill?

ANSWER: Whether you'll be preparing beef or pork ribs, we suggest you follow the few steps below to make a "great rib" that everyone will enjoy:

1. Always keep in mind that "low and slow" is definitely the way to grill ribs. The best method to prevent burning and to maximize flavor of the grilled ribs, is to grill the ribs using the Indirect Heat method.

~~ FOR GAS GRILLS: Use the lowest heat setting possible.

~~ FOR CHARCOAL GRILLS (kettle style or regular: Use somewhat less charcoal than specified for your size grill.

2. To have the ribs achieve their maximum tenderness, before you even season the meat, prepare the ribs as follows:

~~ Remove the thin, paper-like membrane on the back of the ribs.

~~ Pull back a corner with the tip of a knife and then slowly peel the membrane off with your fingers.

3. Before you grill, try a dry rub of salt, pepper, paprika, and a pinch of cayenne or other spices. Rub it on both sides of the ribs, put them in a resealable plastic bag, and let them rest in the refrigerator for a couple hours. Grill as described above in #1 or by following your rib recipe.

4. BIGGEST MISTAKE MADE: Pre-cooking the ribs. . . . . Do not pre-cook ribs! Pre-cooking ribs by par-boiling or baking robs the ribs of flavor.

5. Because most barbecue sauces and glazes contain sugar - which will burns easily, the ribs should be brushed with the barbeque sauce or glaze only during the last 10 to 20 minutes of cooking time.

NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
