** HOLIDAY COOKING TIP FROM HAVERHILL
BEEF **
Let's Talk Turkey -- "How
To Carve A Turkey" . . . .
NOTE BEFORE YOU START CARVING:
Always use a sharp knife when carving a turkey. A dull knife
will be difficult to cut with and may slip.
1) Remove the turkey from the
oven, let it sit for at least 15 minutes. This gives the turkey
meat time to get firm
2) Place the turkey, breast side
up, on a cutting board or on a cutting surface, making sure that
the cutting board or cutting surface isn't going to slide around.
NOTE 1: The drumsticks should be at the end next to the carver.
NOTE 2: A damp towel underneath the board helps to secure the
board to the counter or tabletop and also catches any turkey
juices that flow during carving.)
3) Using a sharp heavy knife,
cut off both legs and thighs. (Twisting the thigh joint helps
to remove the leg from the turkey.)
4) Cut the dark meat from the
bones and place on serving platter.
5) Carve the breast meat by making
a slice along one side of the breast bone and continue to slice
downward separating the meat from the cavity. Then cut along
the bottom of the breast. Cut slices from the breast meat.
6) Repeat on the other side of
the breast bone. Arrange sliced meat on serving platter. NOTE:
This side will no longer be balanced, so you may need to compensate
with the fork.
7) After removing most of the
meat, the turkey frame can be used for soup.
NOTE: NEVER, NEVER LET YOUR CHILDREN
COOK OR GRILL UNSUPERVISED!
