ADAMS CREAM STOUT
GREY CORNED BEEF

Makes 6 servings
Ingredients:
5 pounds grey corned
beef brisket
1 cup brown sugar
1 1/2 Bottles (18 fluid ounce) bottle Sam Adams Cream Stout
1 onion, peeled and left whole
1/4 cup chopped fresh parsley
2 bay leaves
1 head cabbage, cored and cut into wedges
4 large carrots, peeled and sliced
6 large potatoes, cut in quarters
Directions:
1. Preheat oven to 300
degrees F (150 degrees C). Rinse the grey corned beef brisket
completely and pat dry.
2. Place the grey corned beef
brisket on rack in a roasting pan or Dutch oven. Rub the brown
sugar on the grey corned beef brisket to coat entire beef, including
the bottom. Pour 1 bottle of Sam Adams Cream Stout around, and
gently over the grey corned beef brisket to wet the sugar.
3. Cover, and place in preheated
oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.
4. During the last hour, put
vegetables in the roasting pan. Pour in with the remaining 1/2
bottle of Sam Adams Cream Stout.
5. Slice corned beef across grain
and serve.

CORNED BEEF
AND CABBAGE

10 Minutes
Ready In: 3 Hours and
20 Minutes
Makes 6 servings
Ingredients:
3 lbs. grey corned beef
2 cups water
1/4 cup honey
2 tablespoon Dijon-style mustard
1 medium head cabbage, cut into 8 wedges
3 tablespoons butter, softened
1 1/2 teaspoons chopped fresh dill
Directions:
1. Pre-heat oven to 350
degrees F.
2. Place grey corned beef brisket
and water in Dutch oven. Bring just to a simmer; do not boil.
Cover tightly and cook in oven for 3 hours or until brisket is
fork-tender.
3. Meanwhile, 20 minutes before
brisket is done, steam cabbage 15 to 20 minutes or until tender;
keep warm.
4. Remove brisket from water;
trim fat. Place on rack in broiler pan so surface of beef is
3 to 4 inches from heat.
5. Combine honey and 1 tablespoon
mustard. Brush top of brisket with 1/2 of glaze; broil 3 minutes.
Brush with remaining glaze; broil 2 minutes or until glazed.
6. Combine butter, 1 tablespoon
mustard and dill; then spread on hot cabbage wedges.
7. Carve the brisket diagonally
across the grain into thin slices and serve with cabbage.

APRICOT
GLAZED
GREY CORNED BEEF

Makes 6 servings
Ingredients:
5 pounds grey corned
beef brisket
1 cup water
1 cup apricot preserves
4 tablespoons brown sugar
2 tablespoons soy sauce
Directions:
1. 1. Preheat oven to
350 degrees F (175 degrees C).
2. Coat a large pan with non-stick
cooking spray. Place corned beef in dish and add water. Cover
tightly with aluminum foil and bake for 2 hours; drain liquid.
3. In a small bowl combine apricot
preserves, brown sugar, and soy sauce. Spread the apricot mixture
evenly over the corned beef.
4. Bake uncovered at 350 degrees
F (175 degrees C) 25 to 30 more minutes, or until the meat is
tender; basting occasionally with pan drippings.
5. Slice corned beef across grain
and serve.
Serving Suggestion: Serve the sauce over cooked carrots.

HONEY
GLAZED
GREY CORNED BEEF

Makes 6 servings
Ingredients:
4 pounds grey corned
beef brisket
2 cinnamon sticks (each about 3 inches long)
1 large onion, diced
1 tablespoon fresh garlic, minced
1 teaspoon rosemary
1 teaspoon thyme
1/4 cup chopped fresh parsley
1/2 cup cider vinegar
1/2 cup honey
Directions:
1. Place the grey corned
beef brisket in an 8-quart Dutch oven and put in enough water
to cover the brisket.
2. Add the cinnamon sticks, onions,
garlic, rosemary, thyme, parsley and vinegar; then bring to a
boil over high heat. Reduce heat to low, cover and simmer 2 hours
or until grey corned beef brisket is fork tender.
3. CAUTION HOT: Transfer
the grey corned beef brisket to a roasting pan; then brush with
the honey.
4. Pre-heat the oven to 350°F.
5. Bake the grey corned beef
brisket in the oven until top is browned and glazed (approximately
25-35 minutes). Baste several times with the pan drippings while
baking.
6. When cooked, slice the grey
corned beef brisket thin against the grain.
