GRILLED
DELMONICO STEAKS WITH RED WINE SAUCE

Makes 4 servings
Ingredients:
4 boneless Delmonico
Steaks
Red Wine Sauce
3/4 lb. mushrooms
1 clove garlic, minced
2 Tbs. onion, finely chopped
2 Tbs. butter
1 Tbs. flour
1 tsp. thyme
1-1/2 Tbs. tomato paste
1/4 tsp. salt
1 tsp. rosemary
1/8 tsp. white pepper
2/3 dry red wine
1/4 cup beef stock or broth
Directions:
1. Pre-heat the grill
to medium heat.
2. Slice mushrooms. Set aside.
3. Chop onion. Set aside.
4. Meanwhile on stove-top, prepare the wine wine sauce by sautéing
mushrooms, garlic, rosemary, thyme and onion in melted butter
in saucepan until mushrooms are tender. Add flour, stirring until
blended; cook over medium heat for 1 minute, stirring constantly.
5. Then, blend in the tomato paste, salt and pepper; stir in
wine and stock until well-blended. Simmer 20 minutes, stirring
occasionally; adjust seasoning if necessary. Keep warm.
6. Meanwhile, place the Delmonico steaks on preheated grill grid
and grill for 5 to 8 minutes per side for medium-rare, or to
desired degree of doneness.
7. Serve the red wine sauce over the grilled steaks.

ITALIAN-STYLE DELMONICO
(RIB EYE) STEAKS
Prep Time: 5 Minutes
Cook Time: 10 to 14 Minutes
Ready In: 15 to 19 Minutes
Makes 4 servings
Ingredients:
4 Delmonico (rib eye)
Steaks
dash of salt (optional)
1/2 cup shredded parmesan cheese
Seasoning Mixture:
2 tsp. fresh chopped thyme
3 tsp. minced cloves garlic
1 tsp. black pepper
1 tsp. oregano
1 tsp. rosemary
1 tsp. Italian Seasoning
1/2 tsp.olive oil.
Directions:
1. Pre-heat grill to
medium heat.
2. In a mixing bowl, combine thoroughly the thyme, garlic, black
pepper, oregano, rosemary, Italian seasoning and olive oil until
well blended.
3. Rub the seasoning mixture onto both sides of each steak, pressing
evenly.
4. Place steaks on heated grill grid and grill, covered, 10 to
14 minutes for medium rare to medium doneness, turning once.
During last 2 minutes of grilling, sprinkle with the parmesan
cheese. Season with salt, as desired.

GARLIC-LEMON RUBBED DELMONICO
(RIB EYE) STEAKS
Prep Time: 5 Minutes
Cook Time: 11 to 14 Minutes
Ready In: 16 to 19 Minutes
Makes 4 servings
Ingredients:
4 Delmonico (rib eye)
Steaks cut about 1 inch thick
2 tsp. minced cloves garlic
pulp of 2 fresh limes
1/4 cup of fresh lime juice
2 tsp. rosemary
2 tsp. fresh chopped thyme
1 tsp. crack black pepper
1/2 tsp. olive oil
Directions:
1. Pre-heat grill to
medium heat.
2. In a mixing bowl, combine thoroughly the thyme, garlic, cracked
black pepper, lime juice, lime pulp and olive oil until well
blended.
3. Rub the seasoning mixture onto both sides of each steak, pressing
evenly. (Discard rub mixture after rubbing onto the raw steaks.)
4. Place each steaks on the heated grill grid and grill, covered,
11 to 14 minutes for medium rare to medium doneness, turning
once.

PAN-SEARED
DELMONICO STEAK
Prep Time: 10 Minutes
Cook Time: about 18 Minutes
Ready in: about 55 Minutes
WITH chilling time
Makes 4 servings
Ingredients:
4 Delmonico steaks cut
about 1 inch thick
1/4 teaspoon cracked black pepper
1/2 teaspoon salt
olive oil as needed
Butter mixture ingredients:
wax paper as needed
1/4 cup unsalted butter (Room Temperature)
1 clove garlic, finely minced
2 tablespoon lemon juice
1 teaspoon finely chopped fresh parsley
Directions:
1. In a small stainless
steel mixing bowl, combine and mix thoroughly the butter, parsley,
lemon juice and garlic.
2. On a piece of wax paper, form
the butter mixture above into a log shape.
3. Chill the butter mixture log
for one-half hour. After the butter mixture log has chilled,
slice it into 4 even pieces. Keep chilled to serve on top of
each steak.
4. Meanwhile, sprinkle each Delmonico
steak with the pepper and salt; then rub each steak with a small
amount of olive oil.
5. Pre-heat a non-stick heavy-duty
skillet over high heat; then place each steak in the skillet.
6. Uncovered, sear on one side
of the steak for 5 minutes then turn the steak over and sear
the other side for 3 minutes.
7. Reduce the heat and cook for
an additional 8 to 10 minutes or until the internal temperature
is 145 degrees F for medium doneness.
8, Serve each steak topped with
slice of the chilled butter mixture.
