GRILLED CLUB SIRLOIN STEAKS
WITH MUSTARD-HONEY GLAZE

Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 beef Club Sirloin steaks
cut about 1 inch thick
1 tsp. salt
1/2 tsp. cracked black pepper
Glaze:
1/4 cup maple syrup
3 Tbsp. coarse-grain Dijon mustard
2 tsp. cider vinegar
1/4 tsp. pepper
Directions:
1. In a small bowl, mix
salt and cracked black pepper; then press mixture into both sides
of club sirloin steaks.
2. Preheat grill to medium heat.
3. Place Club Sirloin steaks
on grill grid. Cook covered 5 to 7 minutes per side. Turn with
tongs to retain juiciness.
4. While Club Sirloin steaks
are grilling, combine maple syrup, mustard, vinegar and pepper
in a 1 cup glass measure.
5. Microwave on high for 3 1/2
to 5 minutes until thickened, stirring occasionally.
6. During last 5 minutes of grilling
the club sirloin steaks, brush glaze over top and sides of steak.
7. Remove Club Sirloin steaks
from grill when an internal temperature has reached 140ºF
for medium-rare or 145ºF for medium doneness.

FAR EAST GRILLED CHICKEN BREASTS
Prep Time: 10 Minutes
Cook Time: about 15 Minutes
Ready in: 25 Minutes
Makes 3 to 4 servings
Ingredients:
2 lbs. boneless and skinless
chicken breasts
1/3 cup sherry
3 tablespoons firmly packed brown sugar
1 teaspoon rosemary
3 tablespoons sesame oil
2 tablespoons soy sauce
2 cloves garlic
3/4 teaspoon ground ginger
Directions:
1. Pre-heat the grill
to medium heat.
2. Chop finely the garlic. Set aside.
3. On the stove-top in a small saucepan, over medium-high heat,
bring the sherry, brown sugar, rosemary, sesame oil, soy sauce,
garlic and ginger to a boil, stirring occasionally. Remove from
the pan from the heat. Set aside.
4. Place the chicken breast on the pre-heated grill and cook,
turning occasionally and basting with sherry sauce, 15 minutes
or until meat thermometer inserted in center registers 170°F.
Note: Do not baste during last 5 minutes of grilling.

GRILLED DELMONICO STEAKS
(Rib Eye Steaks)
Prep Time: 10 Minutes
Cook Time: 20 minutes
Ready in: 30 Minutes
Makes 6 servings
Ingredients:
6 Delmonico Steaks (Rib
Eye Steaks) cut about 1 inch thick
1 Tbsp. fresh parsley, chopped
1 Tbsp. fresh basil, chopped
1 Tbsp. fresh oregano, chopped
1/2 Tbsp. fresh rosemary, chopped
1 Tbsp. granulated garlic
1 Tbsp. granulated onion
1/4 cup cracked black pepper
1/4 cup olive oil
salt (optional)
Directions:
1. On a large sheet tray,
rub each Delmonico steak with olive oil, pepper, garlic, onion,
parsley, basil, oregano and rosemary. If desired, salt each Delmonico
steak to taste.
2. Preheat grill to medium heat.
3. Place each Delmonico steak
on grill grid and grill to desired doneness, approximately 20
minutes for medium-rare (150°F).

GRILLED CENTER-CUT PORK STEAK
(Boneless Pork Chops)
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
2 lbs. boneless center
cut pork steaks (boneless pork chops) cut about 1/2 inch thick
1/4 cup Dijon-style mustard
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1 tablespoon rosemary
garlic salt to taste
pepper to taste
Directions:
1. Pre-heat the grill
to medium heat.
2. In a small mixing bowl, mix together the mustard, brown sugar,
rosemary and Worcestershire sauce.
3. Season the pork steaks with the garlic salt and pepper.
4. Place the pork steaks on the grill and and cook uncovered,
turning occasionally to brown evenly, for a total of 20 minutes.
During last 5 minutes of grilling, brush sauce on all surfaces
of pork steaks.
