Agriculture (USDA).
This national consumer education
campaign is designed to promote food thermometer use. Supporting
the Fight BAC!® message of "cook," this campaign
is based on studies showing significant risk for foodborne illness
when color is used to judge when food has been cooked to a safe
temperature.slogan, and the FSIS messenger-- Thermy.
Why Use A Food Thermometer?
I want to keep
my family safe.
I used to overcook
my food. Now my
food is juicier not dry as a bone."
People all over the country are
taking
Thermys advice. Theyre using a food
thermometer to check the temperature of
everyday foods like hamburgers, pork
chops, and chicken breasts. |

Most people think they know when
food is done just by eyeballing it. They
look at it and trust their experience. Experience is good, but
it sometimes can be misleading. For instance, cooking by color
is definitely misleading. Meat color pink or brown
can fool you! How do you know when your hamburger is cooked?
Because its brown inside? |
Think about this
1 out of every 4 hamburgers turns brown in the middle BEFORE
it has reached a safe internal temperature, according to recent
USDA research.

Digital, Dial & Disposable!
Thermometers are turning up everywhere
in todays kitchens in all shapes and sizes digitals,
instantreads, probes for the oven and microwave, disposable indicators
and sensor sticks, pop-ups, and even barbecue forks. Theyre
high-tech and easy to use. |

Some thermometers are meant to
stay in the food while its cooking; others are not. Some
are ideal for checking thin foods, like the digital. Others,
like the large-dial thermometer many people use, are really meant
for large roasts and whole chickens and turkeys.
Why Is It Important?
These are the facts!

Using a food thermometer is the
only sure way of knowing if your food has reached a high enough
temperature to destroy foodborne bacteria. |

Thermy Food Safety Rules ** |
|
|
Always use a food thermometer when
you cook. A food thermometer will help you make sure your food
has reached a high enough temperature to kill harmful bacteria. |
|
|
|
|
|
The color of cooked meat--whether
it's pink or brown inside--can fool you. The only way to be sure
cooked food is safe to eat is by using a food thermometer. |
|
|
|
|
|
Place the thermometer in the thickest
part of most foods, away from any bones and fat. |
|
|
|
|
|
Cook food to a safe internal
temperature.
145 °F--Beef, lamb, and veal
steaks and roasts.
160 °F--Ground beef, pork, veal, and lamb. Pork chops, ribs,
and roasts. Egg dishes.
165 °F--Ground turkey and chicken. Stuffing, casseroles,
and leftovers.
165 °F--Chicken and turkey breasts.
165 °F--Chicken and turkey: whole bird, legs, thighs, and
wings.
Temperatures are in degrees Fahrenheit (°F). |

Check the temperature in several
places to be sure the food is cooked evenly. |

Wash the food thermometer with hot,
soapy water after using it. |

GRILLED SEASONED CLUB SIRLOIN STEAKS
Prep Time: 10 Minutes
Cook Time: 16 to 18 Minutes
Ready In: about 28 Minutes
Makes 4
Ingredients:
4 boneless Club Sirloin
steaks cut about 1 inch thick
2 large cloves garlic, finely chopped
2 tablespoon chopped fresh rosemary
2 tablespoon fresh chopped thyme
1/2 teaspoon crack black pepper
1/4 teaspoon salt
1/2 teaspoon parsley
Directions:
1. Pre-heat grill to
medium heat.
2. In small mixing bowl, combine thoroughly the garlic, rosemary,
thyme, pepper,.salt and parsley
3. Press the mixture above into both sides of Club Sirloin steaks.
4. Place the Club Sirloin steaks on the heated grill grids and
grill uncovered for about 16 for medium-rare to about 18 minutes
for medium doneness, turning occasionally.

GRILLED GARLIC BONELESS CHICKEN BREASTS
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 boneless chicken breasts
1/2 cup (1 stick) butter or margarine, melted and cooled
1/4 cup drained sun-dried tomatoes packed in oil
3 cloves garlic
1 teaspoon dried oregano
1/4 teaspoon ground pepper
Directions:
1. Preheat grill to medium
heat.
2. In blender, combine butter
or margarine, sun-dried tomatoes, garlic, oregano and pepper
and process, scraping sides occasionally, until blended.
3. Grill boneless chicken breasts, turning occasionally and basting
with butter blend, 30 minutes or until meat thermometer inserted
in center registers 170°F. Note: Do not baste during the
last 5 minutes of grilling.

GRILLED T-BONE STEAKS WITH HONEY-ORANGE GLAZE
Prep Time: 5 Minutes
Cook Time: 10 to 14 Minutes
Ready In: 15 to 19 Minutes
Makes 4 servings
Ingredients:
4 T Bone Steaks cut about
1 inch thick
Honey-Orange Glaze:
1/2 cup crushed oranges
1/4 cup orange juice
1/2 cup of honey
1/2 tsp. dried thyme
1/2 tsp. rosemary
Directions:
1. Pre-heat grill to
medium heat.
2. In a medium mixing bowl, combine thoroughly the crushed oranges,
orange juice, honey, thyme and rosemary until well blended. Set
aside.
3. Placed steaks on heated grill grid and grill, uncovered, 14
to 16 minutes until steaks are medium rare to medium doneness,
turning occasionally with tongs and basting with honey-orange
glaze.

GRILLED GARLIC AND HONEY BONELESS PORK CHOPS
Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready in: about 4 Hours
and 20 Minutes WITH marinating time
Makes 4 servings
Ingredients:
4 boneless pork chops
cut about 1 inch thick
1/4 cup lemon juice
1/4 cup honey
1/2 teaspoon dried thyme
1/2 teaspoon fresh rosemary
1/2 teaspoon black pepper
2 tablespoon soy sauce
1 tablespoon dry sherry
2 cloves of garlic minced
Directions:
1. In a mixing bowl,
whisk together until smooth the lemon juice, honey thyme, rosemary,
black pepper, soy sauce, sherry and garlic. Add the mixture to
a resealable plastic bag.
2. Add the boneless pork chops,
seal the bag after removing all excess air and place in the refrigerator
for at least 4 hours.
3. Pre-heat grill to medium heat.
4. Place the marinated pork chops
on the grill grids and cook for 12 to 15 minutes, turning once
and basting occasionally with reserved marinade. Discard any
remaining marinade.
