** Basic Cooking Instructions **
For Haverhill Beef's Hams

All hams are fully cooked.
Bake 12 to 15 minutes per pound at 325 degrees F to heat throughout.

Haverhill Beef's Original Ham Glaze

Prep Time: 10 Minutes

Ingredients:
1 cup pineapple juice
1 cup crushed pineapple
1/2 cup honey
1 cup brown sugar
1 cinnamon stick
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon ground cloves

Directions:
1. In a saucepan heat all the ingredients together until melted.

2. Coat ham with mixture.

3. Baste ham 2 or 3 times while cooking.

4. After ham is done cooking, use the rest of drippings as gravy.

Baked Ham With Honey-Dijon Glaze

Prep Time: 10 Minutes
Cook Time: 1 Hour 45 Minutes
Ready in: about 1 Hour and 55 Minutes
Makes about 8 servings

Ingredients:
8 lb. fully-cooked, bone in ham
2/3 cup honey
1/3 cup Dijon-style mustard
1/4 teaspoon ground cloves

Directions:
1. Preheat oven to 325 degrees F.

2. Place the ham in large shallow roasting pan. Bake until meat thermometer inserted in thickest part registers 125 degrees F., about 1 1/4 hours.

3. Remove the ham from oven, trim off rind, leaving very thin layer all around.

4. Score the ham by cutting diamond shapes 1/4-inch deep into ham.

5. Combine the honey, mustard and cloves in a small bowl. Spoon honey mixture over ham, and into diamond cuts.

6. Continue baking for an additional 30 minutes, or until meat thermometer registers 140 degrees F.

7. Remove from the oven and let the ham rest in roasting pan on a rack for at least 10 minutes, or up to 30 minutes.

8. Serve with additional warm glaze, if desired.

Baked Ham With Brown Sugar Glaze

Prep Time: 15 Minutes
Cook Time: 2 Hours 15 Minutes
Ready in: 2 Hours 40 Minutes
Makes 10 to 12 servings

Ingredients:
7 pounds whole ham
whole cloves (optional)
1 cup packed brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon ground mustard
5 maraschino cherries (optional)
5 slices orange (optional)

Directions:
1. Preheat oven to 325 degrees F (165 degrees C).

2. Place ham, fat side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of ham and does not touch bone or rest in fat. Cover loosely and bake 1 1/4 to 2 1/4 hours or until thermometer reads 135 degrees (13 to 17 minutes per pound).

3. About 20 minutes before ham is done, remove from oven. Pour drippings from pan. Remove any skin from ham. Cut uniform diamond shapes on fat surface of ham. Insert clove into each diamond. Stir together brown sugar, vinegar and mustard; pat or brush on ham. Bake uncovered 20 minutes longer.

4. Cover ham and let stand about 10 minutes or until thermometer reads 140 degrees. Garnish with orange slices and cherries.

Honey Mustard Glazed Ham

Prep Time: 20 Minutes
Cook Time: 1 Hour and 15 Minutes
Ready In: 1 Hour and 35 Minutes
Makes 10 servings

Ingredients:
5 lb. boneless ready-to-eat ham
1/4 cup whole cloves
1 teaspoon finely chopped parsley
1 tablespoon dried thyme
1 tablespoons fresh rosemary
1/4 cup dark corn syrup
3/4 cup Dijon mustard
2 cups honey
2/3 cup butter

Directions:
1. Pre-heat oven to 325 degrees F.

2. Score the ham, and stud with the whole cloves. Place the ham in a foil lined pan.

3. Meanwhile, using a double boiler, in the top half heat the Dijon mustard, parsley, thyme, rosemary, corn syrup, honey and butter. Keep the honey-mustard glaze warm while baking the ham.

4. Brush the glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey-mustard glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

Jim Beam Ham

Prep Time: 12 Minutes
Cook Time: 2 Hours
Makes 10 to 12 servings

Ingredients:
12 lb. pre-cooked, bone-in ham*
paprika
salt
pepper

Injecting/Basting Sauce:
1 cup Jim Beam bourbon
1 cup apple cider
12 oz. beer
2 medium apples, quartered
3 medium oranges, quartered
2 stalks celery, chopped
1 cup brown sugar
3 tsp. minced garlic

Directions:
Pat ham down with salt, pepper and paprika. Combine sauce ingredients and inject half into ham. Place ham on rotis, and place other half of sauce in drip pan under ham. Turn rotis on medium to allow for several hours of cooking time. Baste ham every 20 minutes until thoroughly heated (approximately 2 hours) - internal temperature should reach 170°F. Wet hickory, apple or sassafras wood may be added to smoking tray for additional flavor.

* If using an uncooked boneless ham, turn rotis to high and adjust cooking time.

Baked Ham With Molasses Black Pepper Glaze

Prep Time: 10 Minutes
Cook Time: about 2 Hours
Ready in: 2 Hours and 10 Minutes
Makes 12 servings

Ingredients:
10 to 12 lb fully-cooked, bone-in smoked ham, 10-12 pounds
2 cups orange juice
1/4 cup honey
1/4 cup molasses
2 tablespoons brown sugar
2 tablespoons Dijon-style mustard
1 tablespoon coarsely ground black pepper

Directions:
1. Preheat oven to 325 degrees F.

2. Place the ham in shallow roasting pan; score a diamond pattern about 1/8-inch thick into the upper surface of the ham. Position rack in the lower third of the oven.

3. Place the ham in oven and bake until internal temperature, as measured with a meat thermometer, reads 130 degrees F., about 1 1/2-2 hours.

4. Meanwhile, in a small saucepan bring the orange juice to a boil; reduce heat to a simmer and reduce the orange juice by about half, stirring occasionally, about 15-20 minutes. Stir in honey, molasses, brown sugar, mustard and pepper. Simmer slowly until thickened, about 25-30 minutes. Set aside.

5. When the ham reaches 130 degrees F., start basting: Using a pastry brush, brush the glaze generously on all surfaces of the ham.

5. Continue to bake the ham for 10 minutes; baste again two more times, until internal temperature of ham reaches 140 degrees F.

6. Remove from the oven and let the ham rest in roasting pan on a rack for at least 10 minutes, or up to 30 minutes.

7. Baste with the drippings in the bottom of the pan a few times before carving.

Honey and Brown Sugar Glazed Ham

Prep Time: 15 Minutes
Cook Time: 2 Hours 15 Minutes
Ready in: 2 Hours 40 Minutes WITH standing time
Makes 7 to 8

Ingredients:
7 pounds bone-in whole ham
whole cloves
1 cup packed brown sugar
2 cups honey
1 tablespoon balsamic vinegar
1 teaspoon finely chopped parsley
1 tablespoons fresh rosemary
1/3 cup Dijon mustard

Directions:
1. Preheat oven to 325 degrees F.

2. Place the ham, fat side up, on rack in shallow roasting pan then insert a meat thermometer so that the tip is in thickest part of ham and does not touch bone or rest in fat. Cover loosely and bake 1 1/4 to 2 1/4 hours or until thermometer reads 135 degrees (13 to 17 minutes per pound).

3. Meanwhile, mix together in a small saucepan then heat the brown sugar, honey, parsley, rosemary, vinegar and mustard. Keep warm.

Honey-Orange Baked Ham

Prep Time: 10 Minutes
Cook Time: 1 Hour 30 Minutes to 2 Hours
Ready in: about 2 Hours and 20 Minutes WITH standing time
Makes about 14 servings

Ingredients:
8 lb. boneless ready-to-eat ham
1 cup fresh orange juice
1 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon finely chopped parsley
1/2 teaspoon dried thyme
1 teaspoon fresh rosemary
dash of cracked black pepper
1/4 teaspoon ground cloves

Directions:
1. Preheat oven to 325 degrees F.

2. In a small bowl, combine and mix the orange juice, honey, parsley, thyme, rosemary, black pepper, cinnamon and cloves. Set aside.

3. Place the ham on rack in a shallow roasting pan. Insert meat thermometer in thickest part of ham. Bake, uncovered, for 1 1/2 to 2 hours or until meat thermometer register 135 to 140 degrees F, basting with the honey-orange glaze during the last 45 minutes of baking.

6. Remove from oven, then cover and let stand the ham for about 10 minutes.

Ready In: 1 Hour and 35 Minutes
Makes 12 servings

Ingredients:
5 pounds ready-to-eat ham
