Preparing Ribs On The Grill . . . .

QUESTION: Do you have any grilling tips to prepare ribs on the grill?

ANSWER: Whether you'll be preparing beef or pork ribs, we suggest you follow the few steps below to make a "great rib" that everyone will enjoy:

  Bullet  

Always keep in mind that "low and slow" is definitely the way to grill ribs. The best method to prevent burning and to maximize flavor of the grilled ribs, is to grill the ribs using the Indirect Heat method.

-   FOR GAS GRILLS: Use the lowest heat setting possible.

-   FOR CHARCOAL GRILLS (kettle style or regular: Use somewhat less charcoal than specified for your size grill.

  Bullet  

To have the ribs achieve their maximum tenderness, before you even season the meat, prepare the ribs as follows:

-   Remove the thin, paper-like membrane on the back of the ribs.

-   Pull back a corner with the tip of a knife and then slowly peel the membrane off with your fingers.

  Bullet   Before you grill, try a dry rub of salt, pepper, paprika, and a pinch of cayenne or other spices. Rub it on both sides of the ribs, put them in a resealable plastic bag, and let them rest in the refrigerator for a couple hours. Grill as described above in #1 or by following your rib recipe.

  Bullet   BIGGEST MISTAKE MADE: Pre-cooking the ribs. . . . . Do not pre-cook ribs! Pre-cooking ribs by par-boiling or baking robs the ribs of flavor.

  Bullet   Because most barbecue sauces and glazes contain sugar - which will burns easily, the ribs should be brushed with the barbeque sauce or glaze only during the last 10 to 20 minutes of cooking time.

For The Grill
GRILLED CHICKEN TACOS

Prep Time: 10 Minutes
Cook Time:
20 Minutes
Ready in:
30 Minutes
Makes 12 tacos

Ingredients:
2 pounds skinless and boneless chicken breasts
12 taco shells
Shredded lettuce
1 tablespoon water
2 medium onions, coarsely chopped
2 cups shredded Monterey Jack cheese
1 packet taco seasoning mix
2 tablespoons olive or vegetable oil
2 medium tomatoes, seeded and coarsely chopped

Directions:
1. Preheat grill to medium heat.

2. In small bowl, combine taco seasoning, oil and water until blended. In medium bowl, combine onions and 1 tablespoon taco seasoning mixture and toss until evenly coated.

3. Grill boneless chicken breasts, turning occasionally and brushing with remaining taco seasoning mixture, 15 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not brush during the last 5 minutes of grilling.

4. Grill onions in grill wok or on grill screen, stirring occasionally, until tender. Add tomatoes; grill just until heated through.

5. To serve, cut chicken into strips and serve in taco shells with onions, tomatoes, lettuce and cheese.

For The Grill
GRILLED GINGER PORK TENDERLOIN

Prep Time: 5 Minutes
Marinating Time:
2 Hours
Cook Time:
15 to 20 Minutes
Ready In:
2 Hours and 25 Minutes
Makes 4 servings

Ingredients:
1 1/2 pounds whole pork tenderloins
2 cup chicken broth
4 tablespoon grated ginger
2 tablespoon soy sauce
2 tablespoon sesame oil
2 cloves garlic, minced

Directions:
1. Combine all ingredients in a self-sealing plastic bag; seal bag and refrigerate 2 hours.

2. Remove pork tenderloins from marinade; discarding marinade.

3. Preheat grill to medium heat.

4. Grill pork tenderloins, turning occasionally, for 15-20 minutes, until thermometer inserted reads 155 degrees F.

5. Slice to serve.

For The Grill
GRILLED GARLIC AND HONEY PORK CHOPS II

Prep Time: 5 Minutes
Cook Time:
about 15 Minutes
Ready in:
about 2 Hours and 20 Minutes WITH marinating time
Makes 6


Ingredients:
6 center cut boneless pork chops
3.4 cup lemon juice
2 Tbsp. cracked black pepper
1 Tbsp. ground oregano
1 Tbsp. paprika
2 tsp. celery salt
1/2 tsp. ground cayenne pepper
2 tablespoons finely chopped parsley


Directions:
1. Slash fatty edge of each chop in about three places without cutting into the meat (This will prevent the meat from curling during cooking.)

2. In a plastic, resealable bag, place the pork chops; then add the lemon juice, cracked black pepper, oregano, paprika, celery salt and parsley. Seal the bag and marinate for 2 hours in the refrigerator.

3. Pre-heat the grill to medium heat.

4. Remove each pork chop from the marinade. NOTE: Discard marinade.

5. Then place each pork chop on the grill grid; close the cover and grill for about 7 to 8 minutes per side or until internal pork temperature reaches 160 degrees F.

GRILLED GARLIC-LEMON RUBBED DELMONICO
(RIB EYE) STEAKS

Prep Time: 5 Minutes
Cook Time:
11 to 14 Minutes
Ready In:
16 to 19 Minutes
Makes 4 servings


Ingredients:
4 Delmonico (rib eye) Steaks cut about 1 inch thick
2 tsp. minced cloves garlic
pulp of 2 fresh limes
1/4 cup of fresh lime juice
2 tsp. rosemary
2 tsp. fresh chopped thyme
1 tsp. crack black pepper
1/2 tsp. olive oil


Directions:
1. Pre-heat grill to medium heat.

2. In a mixing bowl, combine thoroughly the thyme, garlic, cracked black pepper, lime juice, lime pulp and olive oil until well blended.

3. Rub the seasoning mixture onto both sides of each steak, pressing evenly. (Discard rub mixture after rubbing onto the raw steaks.)

4. Place each steaks on the heated grill grid and grill, covered, 11 to 14 minutes for medium rare to medium doneness, turning once.
