CRACKED BLACK
PEPPER
HOLIDAY ROAST |

1/2 Hours +/- WITH Standing Time depending on doneness
Makes 6 to 10 servings
Ingredients:
1 holiday roast ( 4 to
6 lbs.)
2 tsp. cracked black pepper
2 tsp. dry mustard
1 large clove garlic, crushed
1/2 tsp. fresh chopped thyme
1/2 tsp. ground allspice
1/3 tsp. ground red pepper
1 tsp. olive oil
Directions:
1. Preheat oven to 325°F.
2. Combine seasonings ingredients
and rub evenly into surface of roast.
3. Place the holiday roast on
rack in shallow roasting pan. Do not add water or cover roast.
4. In oven, roast approximately
2-1/2 to 3 hours. Use an instant read thermometer and remove
roast when internal temperature reaches 140°F for medium-rare
or 155°F for medium.
5. Remove from oven and tent
loosely with foil. Let stand 15 minutes.
6. Carve and serve.

GRILLED HONEY-GINGER
BONELESS CHICKEN BREASTS |

Prep Time: 10 Minutes
Cook Time: about 16 Minutes
Ready in: about 1 Hour
and 16 Minutes WITH marinating time
Makes 2 to 3 servings
Ingredients:
2 lbs. boneless chicken
breast
3 tablespoons olive oil
3 tablespoons honey
1 tablespoon ginger
1 tablespoons soy sauce
1 medium onion, finely chopped
1/2 cup fresh lemon juice
salt to taste
freshly ground black pepper to taste
Directions:
1. Place the chicken
breasts in shallow glass dish. Mix together the oil, honey, ginger,
onion, lemon juice and soy sauce in small bowl.
2. Pour 1/2 cup marinade over
the chicken breasts; turn and coat the other side. Cover the
dish and marinate for 1 hour in the refrigerator.
3. Pour remaining marinade into
small saucepan. Boil until slightly reduced and thickened, about
2 minutes; reserve for glaze. Set aside.
4. Pre-heat grill to medium-high
heat.
5. Brush grill rack with oil.
Remove chicken from marinade, drain well. Season chicken with
salt and pepper.
6. Grill the chicken breasts
until cooked through, brushing occasionally with reserved marinade
glaze, about 8 minutes per side.

GRILLED NEW YORK
SIRLOIN STEAK ITALIAN STYLE |

Prep Time: 5 Minutes
Cook Time: 10 to 14 Minutes
Ready In: 15 to 19 Minutes
Makes 2 to 3 servings
Ingredients:
2 lbs. New York Sirloin
Steak
dash of salt (optional)
1/2 cup shredded Parmesan cheese
Seasoning Mixture:
2 tsp. fresh chopped thyme
3 tsp. minced cloves garlic
1 tsp. black pepper
1 tsp. oregano
1 tsp. rosemary
1 tsp. Italian Seasoning
1/2 tsp.olive oil.
Directions:
1. Pre-heat grill to
medium heat.
2. In a mixing bowl, combine thoroughly the thyme, garlic, black
pepper, oregano, rosemary, Italian seasoning and olive oil until
well blended.
3. Rub the seasoning mixture onto both sides of each New York
Sirloin Steak, pressing evenly.
4. Place New York Sirloin Steak on heated grill grid and grill,
covered, 10 to 14 minutes for medium rare to medium doneness,
turning once.
5. During last 2 minutes of grilling,
sprinkle with the Parmesan cheese. Season with salt, as desired.

GRILLED HONEY-MOLASSES
COUNTRY STYLE PORK SPARERIBS |

Cook Time: 1 Hour to
1 Hour and 30 Minutes
Ready in: 1 Hour and
10 Minutes to 1 Hour and 40 Minutes
Makes 4 to 6
Ingredients:
4 pounds country style
pork spareribs
1/3 cup lemon juice
1 tablespoon flour
1/2 cup molasses
1 cup honey
1/2 cup soy sauce
1/2 cup ground mustard
3 tablespoons Worcestershire sauce
4 drops hot pepper sauce
Directions:
1. Place country style
pork spareribs in a large shallow baking dish. Set aside.
2. In medium bowl, combine and
stir together the lemon juice into flour until smooth; then stir
in the honey, molasses, soy sauce, mustard, Worcestershire and
hot pepper sauce.
3. Pour the mixture over the
country style spareribs, turning to coat.
2. Preheat grill to medium heat.
3. Grill the country style pork
spareribs over INDIRECT HEAT for about 1 to 1 1/2 hours or until
tender.
